SALMON WITH SEAFOOD STUFFING

Salmon With Seafood Stuffing image

We went fishing in Canada this last summer and caught some wonderful salmon. This is a recipe I developed to use with them. It would work well as a stuffing for mushrooms too with a little Parmesan cheese on the top. It makes one whole salmon which works well for a large group or dinner party. You could also half it easily!

Tips:

  • Ensure Salmon is Properly Defrosted: Before cooking, make sure your salmon is fully thawed. If it's frozen, thaw it overnight in the refrigerator or use the cold water method.
  • Don't Overcook the Salmon: Keep an eye on the salmon while it bakes. Overcooked salmon can become dry and tough. Cook until it reaches an internal temperature of 145°F (63°C) for medium-rare or 155°F (68°C) for medium.
  • Use Fresh, High-Quality Seafood: To make the most flavorful stuffing, use fresh seafood like shrimp, crab, and scallops. If fresh seafood is unavailable, frozen seafood can also be used.
  • Don't Be Afraid to Experiment with Herbs and Spices: Tailor the stuffing to your taste by adjusting the herbs and spices used. Consider adding herbs like thyme, oregano, or parsley, or spices like paprika, chili powder, or cumin.
  • Serve with Your Favorite Sides: Salmon with seafood stuffing pairs well with various sides. Roasted vegetables like broccoli, asparagus, or carrots are popular choices. You can also serve it with rice, quinoa, or mashed potatoes.

Conclusion:

This recipe for salmon with seafood stuffing offers a delightful and elegant meal perfect for special occasions or everyday enjoyment. Remember to follow the tips mentioned above to ensure perfectly cooked salmon and delicious stuffing.
