SALMON WITH HORSERADISH "CREAM"
The original of this recipe was in Cooking Light, and I've modified it for personal tastes. I first made this for Christmas Eve supper, and we fought over the leftovers for breakfast the next morning. Recipe can be easily multiplied as needed.

Steps:
- Preheat oven to 350 deg.F. Lightly oil a 9-in. pie plate or other baking dish.
- Combine the yogurt, horseradish and chives in a small bowl. Season with salt and pepper. Season the salmon lightly with salt and pepper. Place salmon in pan and pour sauce over it.
- Bake salmon until just cooked through, about 18 to 20 minutes. Transfer to plate. Garnish with chives.
- Note1: The original calls for low-fat yogurt, but I don't like the additives, and always use whole milk natural yogurt.
- Note2: The original recipe suggests 1 tbl. of the yogurt mix spread on the fish, with the remainder passed as a sauce. I really prefer cooking all of the sauce and serving the pan sauces with the fish.
- Note3: A fillet works as well as a steak, just watch the thickness.
- Note4: Try fresh dill instead of chives - lovely. Also, really drain the horseradish well.

HORSERADISH BAKED SALMON
Salmon is such a tasty and healthy fish as it is packed with Omega 3. Here is a healthy and different way of preparing salmon that I found on the BBC Good Food Magazine website.

Steps:
- Heat oven to 400 degrees.
- Whiz the bread into crumbs in a food processor.
- Add the horseradish and thyme, then season and mix well.
- Put the salmon in one layer in a lightly oiled baking dish.
- Press the crumbs on to the flesh.
- Bake for 10-12 minutes.
Tips:
- Choose the freshest salmon you can find. Look for fish that is bright pink in color and has no fishy smell.
- If you are using frozen salmon, thaw it thoroughly before cooking. The best way to do this is to place it in the refrigerator overnight or in a bowl of cold water for 30 minutes.
- Cook the salmon over medium heat. This will help to prevent it from overcooking and becoming dry.
- Do not overcrowd the pan when cooking the salmon. This will also help to prevent it from overcooking.
- Use a meat thermometer to ensure that the salmon is cooked to your desired doneness. The internal temperature of the salmon should reach 145 degrees Fahrenheit for medium-rare, 155 degrees Fahrenheit for medium, and 165 degrees Fahrenheit for well-done.
- Let the salmon rest for a few minutes before serving. This will help the juices to redistribute throughout the fish.
- Serve the salmon with your favorite sides, such as roasted vegetables, mashed potatoes, or rice.
Conclusion:
Salmon is a delicious and versatile fish that can be cooked in a variety of ways. The horseradish sauce in this recipe adds a nice kick of flavor to the salmon, and the roasted vegetables are a healthy and delicious side dish. This recipe is sure to please everyone at your table.
