It makes all the difference to this dish because the salmon is not marinated. Though made with cream, it is not rich, it's quite tangy - perfect pairing with rich salmon.

1 (1 - 1.4 kg / 2 - 2.8 lb) side of salmon ( (Note 1))
3- 4 tbsp Dijon mustard
1 cup panko breadcrumbs ((50g) (Note 2))
Oil spray
50g / 3 tbsp butter (, melted)
1/3 cup grated parmesan (, store bought (1/2 cup fresh grated) (Note 3))
2 tbsp finely chopped fresh parsley
2 tbsp finely chopped fresh dill
Zest of 1 lemon
1/2 tsp salt
Pepper
30g / 2tbsp butter
1 eschallot / finely chopped ((Note 4))
1 1/4 cups dry white wine ((Note 5))
1 1/2 cups heavy cream / thickened cream
1 tbsp Dijon mustard
2 1/2 tbsp lemon juice ((plus more to taste))
1/2 tsp sugar
Salt and pepper
Watercress
Lemon wedges
Fresh dill

Steps:

  • Take salmon out of the fridge to bring to room temperature.
  • Preheat oven to 200°C / 390°F (180°C fan).
  • Spread panko on baking tray, spray generously with oil then bake for 3 to 5 minutes until light golden brown. (Note 6) Scrape into bowl immediately.
  • Add butter and stir, then add remaining Parmesan Crumb ingredients.
  • Line same tray with foil. Place salmon on foil.
  • Spread Dijon on salmon using a butter knife. Just a thin coating - like buttering toast.
  • Sprinkle Crumb all over.
  • Bake for 20 minutes for just cooked juicy perfection, or to taste. (Note 7)
  • Remove from oven. Loosen salmon from foil using egg flip or butter knife - skin will hopefully be stuck to foil.
  • Plate watercress on serving platter.
  • Use foil to lift salmon onto watercress on serving plate, then slide out the foil from under it (see video under recipe). Serve with Lemon Cream Sauce and lemon wedges on the side.

1/8 cup olive oil
1 teaspoon butter
4 salmon fillets
1 cup pouring cream
1/2 cup milk
4 teaspoons cornstarch
1/4 cup water
1/2 lemon, juice of and finely grated zest
1 tablespoon Dijon mustard (ensure gluten-free if required)
salt and white pepper, to taste
2 teaspoons parsley, finely chopped

Steps:

  • Heat the oil and butter in a large frypan or skillet over a medium heat.
  • Add the salmon and cook 3-4 minutes on each side, or until barely cooked through.
  • Meanwhile, Mix the cornstarch and water to a paste, set aside.
  • Using a small saucepan, bring the cream and the milk to the boil. Thicken with some or all of the cornstarch paste, whisking constantly. Stir in the lemon juice, finely grated zest, mustard and season with salt and pepper.

1 small bunch fresh dill
1 whole salmon (wild, if possible), about 6 pounds, cleaned and scaled (or substitute a center-cut section of a larger salmon)
1 tablespoon salt
2 tablespoons sugar
2 teaspoons yellow mustard seeds
1 teaspoon black peppercorns
1 onion, peeled and quartered
3 tablespoons Dijon mustard
2 tablespoons light brown sugar
1 cup sour cream
3 tablespoons white wine vinegar
3 tablespoons chopped dill
1/2 teaspoon salt, or as needed
1 generous bunch dill
2 lemons, cut into wedges

Steps:

  • To poach salmon, begin by placing the small bunch of dill inside cavity of the salmon, and put salmon in a fish poacher or a large roasting pan. (If necessary remove head to fit salmon in pan.) Cover with water, and add salt, sugar, mustard seeds, peppercorns and onion. Place over high heat, and bring to a boil. Turn salmon over, and cook 10 minutes. Turn off heat, and let salmon cool in water for about an hour.
  • To make sauce, whisk together the mustard and brown sugar in a small pitcher. Add sour cream and vinegar, and whisk until smooth. Mix in the chopped dill, and season with salt. Cover, and refrigerate until serving.
  • To serve, remove salmon from poaching liquid and lay on large sheet of parchment or waxed paper. Remove skin from top, gently peeling it away, along with fins. Carefully lift top layer of salmon in one long fillet, removing it from backbone and transferring it to a large platter.
  • Lift backbone off fish in one piece, and pick out any other visible bones. Turn fish over, and remove skin as before. Then place second fillet alongside the first on platter. Arrange leafy sprigs of dill between fillets, and drizzle sauce on top. Scatter lemon wedges around edges of plate. Pass pitcher of sauce separately.

  • Preheat the oven to 425°F and line a small baking sheet with foil.
