1 piece Green Onion Diced
7-8 piece Potatoes (roughly 1 kilo), peeled and sliced
4-6 piece Salmon fillets, (roughly 620 grams) washed and well-dried
2 piece Green Onions Sliced into rings
1/2 cup Milk
One block Cheddar, Mozzerella, and/or Parmesan
2 tablespoon Lemon Juice
1 tablespoon Thyme Dried or Fresh
1 tablespoon Rosemary Dried or Fresh
2-3 tablespoon Salt Sea Salt
1 teaspoon Pepper

Steps:

  • Preparation (You Can Make Ahead): 1) Fry diced onions in a skillet until golden brown, set aside in a large bowl 2) Lay the salmon in the skillet and cook it one side at a time until golden brown. Do not move the salmon steaks until they are completely done on one side, then flip over and cook completely on the other side. Remove from the pan and cool. Remove the skin and bones, then floss the salmon meat. Add the salmon meat into the bowl with the fried diced onions. Add in the lemon juice and stir. 3) Arrange the sliced potatoes in a casserole dish with at least 8 cups capacity. Add a 1/2 cup milk, cover the casserole, and microwave for 15 minutes or until cooked but not mushy. 4) Fry the onion rings in the pan after the salmon is done until the rings are half cooked. 5) Mix the thyme, rosemary, salt, and pepper as the seasoning salt. How to Assemble the Casserole: 1) Lay potato slices, 1/4 of the total amount in the casserole dish 2) Sprinkle seasoning salt 3) Crumble 1/4 of the salmon over 4) Add 1/4 of the cheese 5) Sprinkle seasoning salt 6) Repeat 3 times more, only for the final layer, sprinkle the seasoning salt and arrange all the onion rings over the casserole. Then, add the remainder of the cheese on top. 7) If the casserole you are using is very flat and wide, divide the ingredients into 1/3s and have 3 layers of potato, salmon, and cheese. 8) Bake in the oven at 180C for 40 minutes, or until the cheese on top is golden brown.

this is a recipe that came to me one day when i was bored & wanted to cook something. delicious on any occasion...warm, filling & damn tasty!...see what you think!...

2 salmon fillets, cubed
5 large potatoes, peeled &, sliced
2 garlic cloves, finely chopped or minced
1 red chile, finely chopped
strong cheddar cheese or parmesan cheese, finely grated
2 tablespoons strong mustard
milk
cornflour
salt
black pepper
fresh parsley, finely chopped

Steps:

  • to start with, take the potatoes - more or less if desired, adjust ingredients amounts to suit how many people are being catered for - peel & rinse them.
  • slice the potatoes into relatively thin slices & then place into a saucepan with lightly salted boiling water.
  • par boil for about 10 minutes approx' or until slightly soft.
  • meanwhile, rinse the salmon & then chop into small chunks.
  • once the potatoes have boiled sufficiently, drain them off & then place potatoe slices into an oven proof dish, overlapping each other.
  • on top of that, add a generous amount of the salmon chunks & season to taste.
  • once done, add milk to a saucepan & bring to the boil.
  • grate your strong cheddar cheese.
  • once boiled, add cornflour to a cup with a little amount of milk in the bottom & stir thoroughly to form a smooth paste.
  • then, slowly add the milky paste a little at a time to the boiling milk - being sure to keep stirring the whole time to avoid lumps.
  • repeat this action until the milk has thickened to become 'sauce' like.
  • when it does, add the garlic, red chilli, mustard, strong cheddar cheese & fresh parsley & stir thoroughly until nice & smooth.
  • bring back to the boil & then reduce heat & simmer for 5-10 minutes more until all the flavours have infused together, stirring all the time to ensure there are no lumps in the sauce.
  • again, season to taste if need be, stir again then pour over the potatoes & salmon chunks in the oven proof dish.
  • grate a generous amount of fresh parmesan cheese over the top & then place in a pre-heated (190C degrees approx') oven for 1 1/2 - 2 hours or until fully cooked.
  • you can crisp the top up if you like using the grill.
  • once cooked, remove from the oven, garnish with a little more parsley & serve! --
  • adjust cooking times & temps in accordance with your oven.

750g medium potato , cut into wedges
1 head broccoli , trimmed and broken into florets
200ml tub crème fraîche
2 tbsp wholegrain mustard
2 large or 4 small salmon fillets , cut into large pieces
handful grated parmesan

Steps:

  • Put the potato wedges into a shallow microwave-proof baking dish, then cook on High for 10 mins until almost tender all the way through (turn the wedges halfway through to ensure even cooking). Add the broccoli, re-cover and cook for another 3 mins or until the florets just give with a knife. If you don't have a microwave, boil instead.
  • Heat grill to medium. Mix the crème fraîche and mustard together with a little seasoning. Nestle the salmon in among the potatoes and broccoli, then spoon over the crème fraîche mix, making sure most of the broccoli is covered with sauce. Sprinkle with the cheese and grill for 5 mins until the sauce is bubbling, the tips of the potatoes are golden and the salmon is just cooked.

1/4 cup Dijon mustard
1/4 cup vegetable oil
1/4 cup chopped fresh dill
3 tablespoons packed golden brown sugar
1/2 pound baby new potatoes, cut into 1/4-inch-thick slices
2 8-ounce salmon fillets
1 bunch mustard greens, trimmed, cut crosswise into 2-inch-wide strips

Steps:

  • Preheat oven to 350°F. Mix first 4 ingredients in small bowl. (Sauce can be prepared 2 hours ahead. Cover and let stand at room temperature.) Place potatoes in small bowl. Spoon 1 tablespoon sauce over and toss to coat. Arrange potatoes in baking pan. Bake 15 minutes.
  • Remove pan from oven; push potatoes to sides of pan. Spread each salmon fillet with 2 teaspoons sauce and place in center of baking pan. Bake until salmon is cooked through, about 18 minutes. Meanwhile, place greens in large skillet. Toss with 2 tablespoons sauce. Stir over medium-high until wilted, about 4 minutes. Divide salmon, greens and potatoes between 2 plates. Serve, passing remaining sauce separately.
