Indulge in the culinary delight of Salmon Patties with White Pea Sauce, a harmonious blend of flavors and textures that will tantalize your taste buds. These delectable patties, crafted from succulent salmon, are complemented by a creamy and flavorful white pea sauce, creating a symphony of flavors in every bite. Accompanying the main course are two additional recipes that elevate the dining experience: a refreshing Cucumber Salad with Dill and a zesty Lemon Caper Sauce. These recipes, presented in a step-by-step guide, ensure a seamless cooking journey, allowing you to savor the exquisite flavors of each dish.
**Salmon Patties with White Pea Sauce:**
- Salmon Patties: Flaky salmon, enveloped in a crispy breadcrumb coating, forms the base of these delectable patties. Fresh herbs, such as parsley and dill, infuse each bite with aromatic delight, while Dijon mustard and Worcestershire sauce add a touch of tangy complexity.
- White Pea Sauce: A symphony of flavors awaits in this creamy and luscious sauce. Tender white peas, simmered in a savory broth, deliver a velvety texture and a burst of subtle sweetness. Hints of garlic, onion, and white wine elevate the sauce, creating a harmonious balance of flavors that perfectly complements the salmon patties.
**Cucumber Salad with Dill:**
- A refreshing accompaniment to the main course, this cucumber salad offers a crisp and light contrast. Thinly sliced cucumbers are tossed in a tangy dressing, infused with the aromatic freshness of dill. A hint of sweetness from honey and a touch of acidity from vinegar create a delightful balance of flavors that cleanses the palate and complements the richness of the salmon patties.
**Lemon Caper Sauce:**
- This zesty sauce adds a burst of brightness to the salmon patties. Fresh lemon juice and capers combine to create a tangy and briny flavor profile. A touch of Dijon mustard adds a hint of spice, while butter and sour cream provide a creamy richness that rounds out the sauce, creating a perfect dipping companion for the salmon patties.

SALMON PATTIES IN CREAMED PEAS
This is our go to recipe for quick, easy salmon patties. Hubby loves the cream peas also. Sometimes I will put a can of whole potatoes in there as well and just eat them on the side. If you think you don't like salmon, this is a good starting place for you using canned red salmon. I hope you like this as much as we do! Enjoy!

Steps:
- 1. It is best to make the creamed peas first; so that it's ready to pour over the salmon patties when done-the patties take very little time to fry.
- 2. For creamed peas: Melt the butter in a small pan and stir in the flour and seasonings. Gradually stir in the half and half, using a whisk to prevent lumps. Heat, whisking until sauce begins to thicken. Add drained baby peas and gently stir with a spoon. Stir often as it continues to heat and thicken. Remove from heat when it is finished.
- 3. To Prepare Salmon Patties: Break up the salmon in a shallow bowl and mix with remaining salmon ingredients. Sprinkle a piece of waxed paper generously with flour/panko mixture. Shape salmon into 4-6 patties and carefully dredge both sides with flour/panko.
- 4. Preheat skillet until hot-but not hot enough to burn the butter when added-and add butter to pan. As soon as it is melted place salmon patties into the hot, melted butter. Fry until golden on bottom then carefully flip and continue to fry until brown on bottom.
- 5. Remove from pan and plate; pour creamed pea sauce over patties. Enjoy your dinner! I usually start with a mixed green salad and fresh fruit for dessert.

My daughter and I love salmon patties, and we found this version that is healthier than salmon patties made with mayo. Everyone I've made this for has asked for the recipe. I would love to hear any improvements and/or variations you make to this simple recipe. Enjoy!

MEGA SALMON PATTY W/CREAM & SWEET PEA SAUCE
The salmon recipe came from my mom. She always made it into individual patties for a family of fifteen. Of course she tripled it. The sauce recipe came from the lady that managed the cafeteria at Ohio Bell in Dayton in the early 60s. She served it over salmon loaf slices.

Steps:
- 1. Drain juices and remove bones and skin. Flake salmon in bowl. Add crushed butter crackers (Ritz/Town House), chopped onion and eggs. Mix the ingredients together. Into a non-stick 10" greased frying pan form a 7" or 8" patty (about an inch thick). Fry on medium to medium/high heat for 7 to 10 minutes on each side (until nicely browned). I add more shortening to the skillet to brown the second side.
- 2. Meanwhile, prepare the sauce. Melt butter in a sauce pan. When melted, whisk in flour, salt and pepper. Add milk all at one time, stirring until thick on a medium heat, as to not scorch the sauce. When sauce is thickened stir in the peas.
- 3. Serve the sauce over salmon, sliced in quarters.
- 4. This recipe may be made into individual patties or even baked as a salmon loaf and then sliced.
