POTATO SALMON PATTIES
My kids do not like anything fishy. I snuck this one by them and they loved it. I serve them as snacks, sandwiches, or as dinner with rice and a veggie on the side. Personally I like to dip them in horseradish and snack away!! Hope you like them.

SALMON POTATO PATTIES
My mom was never much of a cook(bless her soul). She learned on her own. This was one of her "mistakes" that turned out just great! I've changed it ever so slightly. Time to prepare includes chilling time.

Steps:
- Drain and remove skin from salmon, leave bones.
- Mix everything but the oils and 1 tbsp butter together. Let rest in refrigerator for at least 30 minutes.
- Make all the patties and place them on a plate. If they feel a bit too soft to you from the handling, place back in refrigerator for awhile. Don't make more than recipe calls for or they will be dry on the inside.
- Keep them about the size of your palm -- they will be fat -- press down but don't mash flat.
- Spray large frying pan with Pam. Heat over medium-high. Add 1/2 tbls butter and one tbsp oil to coat pan nicely. Swirl butter around.
- Fry four patties at a time til golden brown on both sides.
- Add rest of butter and 1 tbsp oil. Repeat.
- These are good either hot or cold.
POTATO'N SALMON CAKES
Quick easy recipe to make after a hard day's work. For the mashed potatoes use plain cooked potatoes mashed with no added ingredients. Just cook extra potatoes the night before and take out what you will need for this recipe. If you want a little spice add 1/2 tsp hot pepper flakes I like a bit of Tartar sauce and a green salad along side or a couple of steamed vegetables. Great summer dish. This recipe goes a long way from one small can of salmon. I would like to stress use leftover cooked potatoes not left over mashed potatoes that already have got a lot of extra ingredients in them!

Steps:
- Boil the potatoes in salted water to cover, until soft; this will take about 30 minutes.
- Meanwhile, smear a baking dish with the 1/4 teaspoon of butter and place the salmon, skin side up, on the butter. Let sit while you preheat the oven to 275 degrees.
- Mince a tablespoon or so of the chives for garnish. Tear the rest of the chives into 2-inch lengths and place in the container of a blender with the oil and a little salt. Blend, stopping the machine to push the mixture down once or twice, until the oil has a cream-like consistency.
- When the potatoes are done, put the salmon in the oven and set the timer for 12 minutes.
- Drain the potatoes, then mash them well or put them through a food mill. Return them to the pot over very low heat and stir in the butter and-gradually-the milk, beating with a wooden spoon until smooth and creamy. Season with salt and pepper as necessary. Keep warm.
- Check the salmon after 12 minutes; the skin should peel off easily, it should flake, and an instant read thermometer should display about 120 degrees. It may look underdone, but if it meets these three criteria it is done. (If it is not done, or you prefer it better done, return it to the oven for 3 minutes more). If you like, scrape off the gray fatty matter on the skin side (or just turn the fish over). Sprinkle with some coarse salt and cracked black pepper.
- To serve, place a portion of mashed potatoes on a plate; top with a piece of salmon. Drizzle chive oil all around the plate and garnish with minced chives.

Tips:
- Choose the Right Salmon: Use fresh or frozen salmon fillets that are boneless and skinless. If using frozen salmon, thaw it completely before cooking.
- Mash the Potatoes Thoroughly: Make sure the mashed potatoes are smooth and lump-free. This will help the patties hold together better.
- Use Panko Breadcrumbs: Panko breadcrumbs are lighter and crispier than regular breadcrumbs, which makes them ideal for salmon patties.
- Season the Patties Generously: Don't be afraid to season the patties well with salt, pepper, and other herbs and spices. This will help them taste more flavorful.
- Cook the Patties Over Medium Heat: Cooking the patties over medium heat will help them cook through without burning.
- Flip the Patties Only Once: Flipping the patties too often can break them up. Flip them only once, when they are golden brown on the bottom.
- Serve the Patties with Your Favorite Sides: Salmon patties are delicious served with a variety of sides, such as mashed potatoes, roasted vegetables, or a simple salad.
Conclusion:
Salmon patties are a delicious and versatile dish that can be enjoyed for breakfast, lunch, or dinner. They are easy to make and can be tailored to your own taste preferences. Whether you like them crispy or soft, mild or spicy, there is a salmon patty recipe out there for everyone. So next time you have some leftover mashed potatoes, don't hesitate to whip up a batch of these tasty patties. You won't be disappointed!
