SALMON PIE/PATE AU SAUMON

Salmon Pie/Pate Au Saumon image

In Quebec, this recipe is called Pate au Saumon- thus the french name. In English: Salmon Pie. The first time I tried a recipe similar to this, made by my mother-in-law, I didn't like it! Now, with my version, I can't get enough!

Provided by Amy Duchesne

Categories     Savory Pies

Time 1h30m

Yield 6 serving(s)

Number Of Ingredients 14

4 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup shortening or 1/2 cup pure lard
1 cup water
1 cup flour (to roll out dough)
1 (213 g) can salmon, drained and de-boned
8 -10 small potatoes (boiled or steamed)
1/4-1/2 cup butter or 1/4-1/2 cup margarine
1 cup evaporated milk or 1 cup water
1/4 cup fresh chives, finely chopped
2 teaspoons dried basil
salt and pepper

Steps:

  • Crust: mix 4 cups flour, baking soda, baking powder, and salt together in a medium to large mixing bowl.
  • Cut in the 1/2 cup of shortening with pastry cutter, two knives or a fork- until the mixture resembles coarse meal.
  • Add water to the mixture a little at a time, you can use a fork or you hands to mix the flour and water- until all is mixed and is slightly sticky.
  • Roll the dough out on a floured surface and knead until smooth.
  • Cut the dough in half and chill the 2 balls of dough until needed.
  • Filling:.
  • While boiling (40 mins) or steaming (30-40 mins) the potatoes, drain and de-bone the salmon.
  • I personally don't like any bones, no matter how soft they are in my pie!
  • Once potatoes are done and you can insert a fork into them without resistance, drain water (if boiled) and with a hand mixer start to cream the potatoes.
  • Add the butter to the potatoes--as much or as little as you want--and cream together until the butter is melted and evenly distributed.
  • Add the milk a 1/2 cup at a time until the potatoes are smooth and creamy, but not too thin nor too thick.
  • Add the salmon chives, basil, salt and pepper and mix with the mixer or by hand.
  • Add enough salt that you can taste it through the potatoes sufficiently.
  • Roll out the first ball of dough large enough for the bottom and sides of a 13x9x2-inch pan.
  • Line the pan with dough and add mashed potato mixture evenly into the pan.
  • Roll out second ball of dough and place it on top of the filling; cut off excess dough and seal the edges of the pie.
  • Make incisions in the dough like this:/// or like this:+.
  • Bake for 40 minutes at 400°F or until browned on top and on bottom on the middle rack in the oven.
  • Serve right away--we like it with butter melted on top and salt and pepper.

Salmon pate (Pate de saumon) image

Provided by Craig Claiborne And Pierre Franey

Categories     dinner, appetizer

Time 40m

Yield 12 or more servings

Number Of Ingredients 13

1 1/2 pounds skinless salmon, totally free of bones and cut into two-inch cubes
1 egg
2 cups heavy cream
Salt to taste, if desired
Freshly ground pepper to taste
1/8 teaspoon cayenne pepper
1/3 cup finely chopped chives, optional
1/2 pound shrimp, peeled and deveined
1/2 pound bay or sea scallops
2 tablespoons finely chopped shallots
1 1/2 teaspoons butter
4 thin skinless, boneless fillets of sole, about three-quarter pound
Sauce fines herbes (see recipe)

Steps:

  • Preheat oven to 400 degrees.
  • Put the cubed salmon into the container of a food processor or electric blender. Blend and add the egg. Continue blending while gradually adding the cream, salt, pepper and cayenne. Spoon and scrape the mixture into a mixing bowl. Add the chives, if used, and blend.
  • Cut the shrimp into one-half-inch cubes. If bay scallops are used, leave them whole. If sea scallops are used, cut them into halfinch cubes.
  • Put the scallops, shrimp and shallots in a dry skillet and cook, stirring, briefly until the seafood gives up its liquid. Add the mixture to the salmon mixture and blend.
  • Butter the inside of a loaf pan that measures nine by five by two and three-quarter inches.
  • Split each fillet of sole in half lengthwise.
  • Make a layer of salmon mixture on the bottom of the loaf pan, using one-fifth of the mixture. Top, lengthwise, with two sole fillet halves, placed parallel over the salmon layer. Continue making layers of salmon and sole fillet halves, ending with the salmon mixture. Smooth it over.
  • Cover the loaf pan closely with aluminum foil. Place the loaf pan in a basin of water and bring it to the boil on top of the stove.
  • Place the pans in the oven and bake one hour and 15 minutes. Remove from the oven and let cool. Chill thoroughly before unmolding and slicing. Serve, if desired, with sauce fines herbes.

SMOKED SALMON PATE WITH PARSLEY BUTTER

Smoked Salmon Pate With Parsley Butter image

I served this at a Christmas dinner that I co-catered. It went down amazingly well, even the children liked it. We served it with parsley butter (fresh parsley blended in butter) and melba toast and french bread. I can't recommend it highly enough. Cooking time is setting time. Let me know what you think...

Provided by Luschka

Categories     Spreads

Time 1h10m

Yield 4-6 serving(s)

Number Of Ingredients 9

100 g smoked salmon, pieces trimmings work well
50 g unsalted butter
2 tablespoons double cream
5 ml ground black pepper
1 pinch cayenne pepper
lemon juice
1 sprig parsley, to garnish
50 g butter or 50 g margarine
25 ml chopped parsley

Steps:

  • Chop the smoked salmon, removing all hard pieces, bones etc. Pound in a mortar or process in a blender till smooth, then add the butter cut in small pieces. The butter should be cool and firm, but not too hard.
  • When all is amalgamated into a smooth paste, add the cream, plenty of freshly ground black pepper, cayenne and lemon juice to taste.
  • Turn into a small dish and chill for several hours.
  • (I don't have quantities for the parsley butter as it depends on how much you want to make!) Take as much butter as you think you'll need for the crackers/bread and a representative amount of fresh parsley and mix them together. Pop it in a serving dish and return to the fridge for an hour or so to reset properly.
  • I tend to then scoop it out in to little balls, which wastes some of the butter, but looks pretty!
  • If you've made too much butter you can save it for another day and use it as a normal butter spread, but bare in mind that the parsley flavour increases in strength (which I like!) the longer you leave it. I've left the butter for 3 weeks before using again and it was still perfect.
  • Serve the pate and butter garnished with a sprig of parsley or perhaps a curl of smoked salmon, and with hot toast/malba toast/french bread.

SALMON PâTé BRUSCHETTA

Salmon Pâté Bruschetta image

Deliciously rich! Ideal for parties! Can be prepared in advance for last-minute quick assembly. Chill 30 minutes before serving.

Provided by Julie Bs Hive

Categories     < 60 Mins

Time 50m

Yield 24 slices

Number Of Ingredients 13

1/2 scallion, sliced
1/2 lemon, sliced
1 bay leaf, torn in half
1/2 teaspoon black peppercorns, lightly crushed
4 fluid ounces dry white wine
1 lb boneless salmon, cut into pieces
4 ounces butter, at room temperature
5 ounces smoked salmon, cut into bite-size pieces
4 scallions, white parts half the green parts, very finely chopped
1/4 teaspoon ground nutmeg
2 tablespoons very finely chopped fresh parsley
salt and pepper
24 slices French bread, each about 1/2 inch thick

Steps:

  • Put the scallion, lemon slices, bay leaf, peppercorns, and white wine in a large skillet. Add water to half fill the skillet, and bring to a boil. Boil for 2 minutes, and then reduce the heat to its lowest setting. Add the salmon pieces, cover the skillet, and let simmer for 8 minutes. Remove the skillet from the heat, keep covered, allow the salmon to cool in the cooking liquid.
  • Meanwhile, melt 1 oz of the butter in a large skillet over medium heat. Add the smoked salmon, scallions, and nutmeg and stir for about 2 minutes until the salmon looses its shiny coral color and becomes opaque. Remove from the heat and set aside until cool.
  • Drain and flake the poached salmon and put into a wide, shallow bowl. Add the smoked salmon mixture and cooking juices. Add the rest of the butter. Use your fingers to gently mix it all together until the salmon is very finely mixed. Stir in the parsley. Add salt and pepper to taste. Spoon into a bowl, cover, and chill until 30 minutes before you are ready to serve.
  • When ready to serve, preheat broiler to high. Toast the bread on both sides until golden brown and crisp. Spread the pâté on the hot toast.

STUNNING SALMON "PATE" APPETIZERS (EASY!)

Stunning Salmon

So, you'll need a very thin and long baguette, found at most of your chain supermarkets. I've been using these for years to make cute little appetizer bites. The key is what you put inside of them. Also, what I do to make this a really easy process, is bake them for about 2-5 mins just to get the outside crusty and the inside...

Provided by Allison Hazell

Categories     Other Appetizers

Time 15m

Number Of Ingredients 9

1 long and thin french baguette
FOR SALMON PATE FILLING
1 pkg 8oz cream cheese
1 can(s) 6 oz pink salmon (skinless and boned) drained
1/4 c finely chopped onion ( or 1 tablespoon dried onions)
2 Tbsp chopped fresh parsley
about 1/2 of a lemon, juiced
3 Tbsp ketsup...excuse me here, i had no cocktail sauce or chile sauce in my pantry. it was fine!
1 tsp garlic powder

Steps:

  • 1. heat the baguette just so that the outside is crispy and the inside is soft. About 2-3 mins in a preheated 350 oven. Cut the ends off of the baguette. Cut in half or quarters for easier filling. With a long seraded knife carve out the bread within the crust. (save for other things)Put the bread aside. Make your filling.
  • 2. Mix the Salmon and the cream cheese together. A fork or your hands work best for this. As soon as it is well incorporated, add the next 5 ingredients and blend well with fork. This takes a while. You don't want the mixture too loose, or it will not slice well in the baguette.
  • 3. Mix through mixture with a fork. The Ketsup just adds a little sweetness and makes it PINK, which is how we think of salmon! (Truth be told, I usually use shrimp Cocktail sauce, but had none in the house today. Cocktail sauce gives you the right flavors and a bit of heat with the horseradish!)However, if you don't have cocktail sauce, lemon, ketsup and a bit of cayenne, does the same thing.
  • 4. Stuff the hollowed out baguette pieces, pushing down constantly, and checking the other end to see your progress! I find that a 1/2 tsp measuring spoon is a great tool for this. It's not as hard as it sounds!
  • 5. Wrap the stuffed roles up tightly with plastic wrap and put into the refrigerator for at least two hours. They should cut nicely after that. Even better the next day. Slice into 1/2 inch slices and serve.

SMOKED SALMON PATE

Smoked Salmon Pate image

Provided by Moira Hodgson

Categories     appetizer

Time 2h

Yield 10 - 12 servings

Number Of Ingredients 12

1 tablespoon olive oil
1 medium tomato finely chopped
Coarse salt to taste
1/2 pound smoked salmon (not too salty)
1/2 pound fresh salmon, skinned and boned
2 eggs
White pepper, freshly ground
1 1/2 cups heavy cream
2 tablespoons diced cured ham, cut from a 1/4-inch-thick slice
Unsalted butter
Bread crumbs
A 1/2 pound avocado, halved lengthwise, peeled and pitted

Steps:

  • To make a simple tomato sauce, heat the oil in a small skillet. Add the tomato and salt and cook over low heat for two to three minutes, until the tomato is softened. Strain, pressing with the back of a wooden spoon to extract as much liquid as possible. Reserve four tablespoons.
  • Put the smoked and fresh salmon in the bowl of a processor or blender and beat until smooth. Beat in the eggs, reserved tomato sauce and pepper. With the motor running, pour in the cream gradually. With an on-off motion, blend in the ham. Taste for salt.
  • Butter a 9 1/4-by-5 1/4-by-2 3/4-inch loaf pan generously, then dust with bread crumbs. Pour half of the salmon mixture into the pan. Arrange the avocado halves cut side down (if the halves seem to protrude too far for the rest of the salmon to cover them, trim the cut side) and cover with the rest of the salmon.
  • Cover the pan tightly with foil and place in a larger pan of hot water (bain-marie). Bring to a boil on top of the stove, then lower the heat to medium low and continue cooking for one-and-a-half hours. Remove the mold from the water, loosen the foil and cool. Refrigerate until cold. Unmold and serve chilled and sliced.

Tips:

  • Choose fresh, high-quality salmon: The quality of the salmon will greatly impact the flavor of the pâté. Look for salmon that is firm to the touch and has a vibrant color.
  • Use a food processor or blender to make the pâté: This will help to create a smooth and creamy texture.
  • Chill the pâté before serving: This will help to firm it up and make it easier to spread.
  • Serve the pâté with crackers, bread, or vegetables: The pâté can be enjoyed as an appetizer or snack.

Conclusion:

Salmon pâté is a delicious and versatile dish that can be enjoyed as an appetizer, snack, or even a main course. It is a great way to use up leftover salmon and is also a healthy and nutritious option. With its rich flavor and creamy texture, salmon pâté is sure to be a hit with your family and friends.
