1 tablespoon honey

½ teaspoon coarsely cracked black pepper (or ¼ teaspoon ground pepper)
½ teaspoon smoked paprika
juice of half a lemon (about 2 tablespoons)

  • Combine all of the marinade ingredients and whisk vigorously.
  • Place tuna steaks in a gallon ziploc bag. Add the marinade, toss to coat the tuna steaks, press out excess air and seal (if using ziploc bag).
  • Transfer to the fridge and chill for 30 minutes.

2 salmon steaks or 2 tuna steaks
salt (optional)
1/2 teaspoon black pepper
4 tablespoons olive oil
2 tablespoons white wine or 2 tablespoons white grape juice
3 garlic cloves, peeled and finely chopped
3 tablespoons fresh parsley sprigs, finely chopped
1 lime, cut in wedges

Steps:

  • Preheat oven to 375°; rinse the tuna or salmon and pat dry with a paper towel.
  • Place in a small shallow oven-proof dish, then season with salt and pepper; drizzle with half of the olive oil and all of the wine or grape juice.
  • Bake 20 minutes, basting every 5 minutes; when the fish is ready, place each fish steak on a plate and keep warm.
