OVEN-POACHED SALMON STEAKS WITH MUSTARD DILL SAUCE
Steps:
- In a saucepan combine the wine, 1 1/2 cups water, the sugar, the peppercorns, the coriander seeds, the mustard seeds, the salt, and the onion, simmer the mixture for 15 minutes, and let cool to room temperature. Halve the salmon steaks with sharp knife, discarding as many bones as possible, and re-form the steaks. Arrange the steaks in 2 buttered shallow baking pans, ladle the wine mixture around them, and poach the steaks, covered with a buttered piece of foil, on the upper and lower racks of a preheated 375°F. oven, switching the positions of the pans after 15 minutes, for 30 minutes. Let the steaks cool, venting the foil, and chill them in the poaching liquid, covered, for at least 6 hours or overnight.
- Separate the salmon steaks into halves, brush them with some of the poaching liquid, and arrange them on a platter. Garnish the salmon with dill sprigs and the lemon slice and serve it with the sauce.

SALMON WITH MUSTARD-DILL SAUCE
Rich salmon stands up to an assertive mustard sauce. The combination of grainy and Dijon mustards gives both body and toothsomeness to the sauce.

POACHED SALMON WITH A MUSTARD-DILL SAUCE
Here is a light delicious salmon recipe, I made this dish last night as hot salmon and sauce. But it is a very versatile dish and in summer can be served chilled, both the salmon and the sauce. If chilling the salmon, I recommend leaving the fish in the poaching liquid, in the fridge for a few hours, to really allow the flavours to infuse the salmon. I served mine with wild rice and minted vegetables, but it goes well over linguine with a green salad on the side.

SALMON WITH MUSTARD-DILL SAUCE
Steps:
- preheat oven to 400 degrees. Place salmon in a baking dish just large enough to hold them without crowding; pour wine over salmon, and sprinkle with shallots. Bake 12-15 minutes, basting frequently with the wine. While salmon is baking, in a small bowl blend dill, yogurt, mustard, honey, and lemon juice until smooth. Add any pan juices from the salmon, and stir again. Drizzle over salmon before serving.
Tips:
- Choose the Right Salmon: Opt for wild-caught salmon for its superior flavor and nutritional value. Look for fillets that are firm and have a vibrant color.
- Proper Thawing: If using frozen salmon, thaw it in the refrigerator overnight or under cold running water for about 30 minutes. Avoid thawing at room temperature, as this can promote bacterial growth.
- Seasoning: Enhance the flavor of your salmon by seasoning it with a combination of salt and pepper. You can also add other spices and herbs like paprika, garlic powder, or dried dill.
- Cooking Temperature: Cook the salmon to an internal temperature of 145°F (63°C) to ensure it is cooked through while maintaining its tenderness and moisture.
- Sauce Versatility: The mustard-dill sauce is not only delicious with salmon but can also be used as a marinade for chicken, pork, or vegetables.
