MARGIE'S SALMON MACARONI SALAD
I have no clue who Margie is, but I have been making this delicious pasta salad for years. I usually double the recipe and always remove the skin and the bones. I usually substitute dehydrated minced onions for the green onion.

High school recipe for Foods III, senior class. When Salmon was about the same price as Tuna. I love to play with this salad, adding other things and trying new herbs. But this is the "Original" version.

SALMON MACARONI SALAD
Steps:
- Cook macaroni Drain and rinse with cold water Combine macaroni with remaining ingredients Line large salad bowl with crisp salad leaves and place salad in center
Tips:
- To save time, use pre-cooked salmon. Flake it into bite-sized pieces before adding it to the salad.
- For a healthier version of the salad, use whole wheat or quinoa pasta.
- Add some chopped fresh herbs, such as dill, parsley, or chives, to the salad for extra flavor.
- If you don't have any celery on hand, you can substitute chopped cucumber or bell pepper.
- Feel free to experiment with different types of cheese in the salad. Cheddar, mozzarella, and Parmesan are all good options.
- For a creamy dressing, use mayonnaise or Greek yogurt. If you prefer a lighter dressing, use a vinaigrette made with olive oil, vinegar, and Dijon mustard.

Salmon macaroni salad is a delicious and versatile dish that can be served as a main course or a side dish. It's perfect for potlucks, picnics, and barbecues. With its combination of protein, carbohydrates, and vegetables, salmon macaroni salad is a well-balanced meal that will satisfy everyone at the table.
