½ cup crushed saltine crackers
½ cup milk

1 can (14-3/4 ounces) salmon, drained, bones and skin removed
1 small onion, finely chopped
1/2 cup soft bread crumbs
1/4 cup butter, melted
3 large eggs, separated
2 teaspoons lemon juice
1 teaspoon minced fresh parsley
1/2 teaspoon salt
1/8 teaspoon pepper
OLIVE CREAM SAUCE:
2 tablespoons butter
2 tablespoons all-purpose flour
1-1/2 cups whole milk
1/4 cup chopped pimiento-stuffed olives

Steps:

  • In a large bowl, combine the salmon, onion, bread crumbs and butter. Stir in the egg yolks, lemon juice, parsley, salt and pepper. , In a small bowl, beat the egg whites on high speed until stiff peaks form. Fold into salmon mixture. , Transfer to a greased 8x4-in. loaf pan. Place in a larger baking pan. Add 1 in. of hot water to larger pan. Bake at 350° until a knife inserted in the center comes out clean, 40-45 minutes. Let stand for 10 minutes before slicing., Meanwhile, in a small saucepan, melt the butter. Stir in flour until smooth; gradually add milk. Bring to a boil; cook and stir until thickened, 1-2 minutes. Stir in olives. Serve with salmon loaf.

¼ cup salted butter
⅓ cup diced onion
2 (7 ounce) cans red salmon, drained
½ cup finely crushed saltine cracker crumbs
½ teaspoon kosher salt, or to taste
⅛ teaspoon cayenne pepper
¼ teaspoon Worcestershire sauce
2 teaspoons rice vinegar
3 large eggs

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Generously butter a loaf pan.
  • Melt butter over medium heat in a saute pan until bubbling. Toss in onion, give the pan a quick shake, and stir with a wooden spoon; cook for 1 minute. Turn off the heat and allow to cool.
  • Place salmon in a large mixing bowl and mash with a fork. Add cracker crumbs, salt, cayenne pepper, Worcestershire sauce, rice vinegar, butter, and onions; mix and mash with a spatula or spoon until smooth.
  • Separate eggs, adding whites to a clean glass, metal, or ceramic bowl and adding yolks to salmon mixture. Mix egg yolks and salmon until well combined.
  • Whisk whites to medium stiff peaks. Gently fold into salmon mixture in 2 additions.
  • Transfer salmon mixture into the prepared loaf pan. Smooth the top with a spatula to even it out and shake and tap the pan to remove any air bubbles.
  • Bake in the center of the preheated oven until a toothpick comes out clean, about 45 minutes. Let rest for 5 minutes, then carefully turn loaf out onto a cutting board. Slice and serve.

1 (15 1/2 ounce) can red salmon or 1 (15 1/2 ounce) can pink salmon, drained, flake, and picked over

Steps:

  • To make Salmon Loaf: Add milk and breadcrumbs to a bowl; stir to combine; set aside.
  • In another bowl beat the egg yolks until thick and the color of lemons.
  • Add in the breadcrumb mixture, lemon juice, salts, and pepper; stir to combine.
  • Add in salmon; stir to combine; set aside.
  • In yet, another bowl, beat the egg whites until stiff but not dry; add to the salmon mixture; fold in gently.
  • Spoon mixture into a greased 7 1/2 x 3 x 2 inch loaf pan.
  • Bake at 400°F for 35 minutes.
  • In the meantime, make white sauce: let the butter melt in a saucepan over low heat.
  • Add in the flour and stir until smooth.
  • Cook for 1 minute while stirring constantly.
  • Gradually pour in the milk; cook over medium heat and stir constantly until mixture is thickened and bubbly.
  • Add in salt and pepper to taste.

Steps:

  • Rinse and drain salmon, picking out any bones or skin you find. Let sit to drain well.
  • Prepare White Sauce: In saucepan on stove, heat margarine, flour, salt, pepper, and milk. Stir over low heat until slightly thickening. This should be the consistency of a coffee cream.

  • Beat eggs until light fluffy. Add lemon juice.

  • Before serving, combine soup and water to make a sauce to top loaf.

It works great with reduced fat Ritz crackers (I have tried it out), skim milk, egg substitute and olive oil instead of butter, which brings the saturated fat content WAY down while keeping the flavor and texture.

  • 2. Stir in cracker crumbs, lemon juice, onion, pepper, salt, pepper, dill and parsley. Mix well.
  • 3. Beat eggs, whipping them well with the milk mixture. Blend into salmon mixture.
  • 4. Grease a loaf pan and lightly spoon the salmon mixture into the pan. Bake in oven for 45 minutes
  • 5. CUCUMBER SAUCE: While salmon loaf is baking, Melt butter over low heat in a heavy saucepan. Using a wooden spoon, blend in flour and seasonings. Cook over low heat stirring until mixture is smooth and starting to bubbly.
  • 6. Remove from heat. Stir in milk, stirring constantly until mixture is smooth. Add grated cucumber Bring to a boil stirring constantly. Turn heat to low and simmer for 10 minutes. Serve on top of Salmon Loaf when ready to serve. YUM!!

A fairly cheap and very easy main dish, which I made this way because I get so tired of the same old methods and ingredients. Instead of breadcrumbs I used butternut, which goes well with all fish. The butternut can be substituted with the same amount of sweet potato. Remember you don't have to peel butternut -- what a job that is! Slice in two and bake in the oven, the peel becomes soft, and the flesh can be scooped out. I used pre-prepared butternut chunks. Do adjust seasonings to taste, but it really does need a tangy mayonnaise. The ingredients are in almost all pantry cupboards! Cooking time includes roasting the butternut.

  • Grease a bread tin of about 8 x 4 inches and about 3 inches deep with butter.
  • Drain the salmon and put in a large bowl. Remove crabsticks from coverings, and cut into the salmon, in thin rounds. Add the roasted butternut.
  • Add all the seasonings, from the ginger down to the sesame oil, and mix it all well with a fork, breaking up the butternut pieces.
  • Put the 3 tablespoons mayonnaise and 2 eggs in a bowl and whisk well. Add to the fish mixture.
  • Mix the whole caboodle well, until you have a slightly coarse mixture and all the ingredients have been well combined.
  • Scrape into the greased bread tin and smooth the top. If you like, sprinkle over breadcrumbs so the top doesn't dry out too much.
  • Bake about 1 - 1 1/4 hour, until firm.
  • Turn out carefully on a platter. Serve garnished with pickled cucumber or gherkins, extra mayonnaise, fried tomatoes, mashed potatoes, a green vegetable, and a salad. Use a serrated knife for slicing, or the slices might crumble.

When I got my first apartment, my mom gave me her 1954 Settlement Cook Book. The book is well worn, with tape holding it together. This is one of my favorite recipes from the book. We would have it hot for dinner with a white sauce over the top or some Durkee's Sauce on the side. It is also wonderful leftover served cold. This recipe is very mild, so some people may find it bland, but I love it. Already a great source of calcium, I add a little extra powdered milk to make it even more healthy.

6 ounces canned salmon, skin and bones removed (approx size, use a small can)
1 onion, chopped
1 cup skim milk
1 tablespoon butter
1 cup breadcrumbs
1 tablespoon dried parsley
1 tablespoon Italian spices (or your favorite herbs)
salt
pepper
2 eggs, lightly beaten
1/4 cup powdered milk (optional)

Steps:

  • Preheat oven to 350 degrees.
  • Heat milk in the microwave or on the stove until hot but not boiling.
  • While milk is heating, place salmon in a large mixing bowl, flaking it with a fork. Add bread crumbs, onions, seasonings, eggs and powdered milk. Stir well.
  • Add butter to hot milk and stir to melt. Add milk to salmon mixture and stir.
  • Spray 1 quart casserole dish with cooking spray, then pour salmon into dish. Place casserole dish in a larger baking dish filled with 1 inch of water.
  • Bake for 1 hour.
  • Serve topped with white sauce.
  • NOTE: This recipe can easily be doubled.

SALMON LOAF
1 (14.75oz can(s) pink salmon, drained but reserve 2 tablespoons broth from the can)
2 cups plain breadcrumbs
1/4 cup finely chopped onion
2 Tbsp finely chopped celery
1/4 cup finely chopped red bell pepper (or sweet red pepper)
1/4 cup half & half or milk
2 large eggs
1 Tbsp fresh parsley, chopped
1 Tbsp lemon juice
2 Tbsp broth from canned salmon (*see above ingredient, pink salmon)
1/2 tsp black pepper
CREAMY CUCUMBER SAUCE
1cup fat-free plain yogurt
1/2 medium cucumber, peeled and finely chopped
2 Tbsp chopped dillweed, chopped (or 1 1/2 teaspoons dried dillweed)
2 tsp minded onion

Steps:

  • 1. Preheat oven 350°F. Lightly coat a standard 5x8-inch loaf pan with cooking spray; set aside.
  • 2. In a small bowl combine yogurt, cucumber, dill, and minced onion. Stir well. Cover bowl and refrigerate until ready to serve with baked salmon loaf.
  • 3. Drain salmon and save 2 tablespoons of the liquid.
  • 4. Mix all Salmon Loaf ingredients by hand in a medium bowl until blended and slightly moist. Pat the mixture into the prepared loaf pan. Cover with foil to retain moisture while baking.
  • 5. Bake, covered, for 45 minutes. Serve immediately while still hot, topped with the chilled Creamy Cucumber Sauce.
