Provided by Erin Clarke / Well Plated

Time 45m

Number Of Ingredients 8

4 (6-ounce) salmon fillets (skin on)
3/4 teaspoon kosher salt (divided, plus additional for serving)
1/2 teaspoon ground black pepper (divided)
6 tablespoons DeLallo Simply Pesto Traditional Basil (divided)
2 pints cherry or grape tomatoes (left whole)
1 small red onion (thinly sliced)
Squeeze of fresh lemon juice (for serving)
Chopped fresh basil (optional for serving)

Steps:

  • Place a rack in the center of your oven and preheat the oven to 400 degrees F. Generously coat a large rimmed baking sheet with nonstick spray.
  • Place the cherry tomatoes and red onion in a large bowl. Add 2 tablespoons pesto, 1/4 teaspoon kosher salt, and ¼ teaspoon black pepper. Toss to coat, then spread into a single layer on the prepared baking sheet.
  • Bake the tomatoes and onion for 10 minutes, then remove from the oven and with a spatula, stir them around a little to promote even cooking, then return to the oven for 10 additional minutes.
  • Meanwhile, pat the salmon fillets dry. Sprinkle with ½ teaspoon salt and 1/4 teaspoon black pepper. Spread 1 tablespoon of the remaining pesto over each fillet.
  • Rub the pesto on with your fingers or the back of a small spoon as needed. Make sure each fillet is completely covered in pesto.
  • Remove the sheet pan from the oven and move the tomatoes and onions to the outsides to make space for the salmon in the center. Arrange the salmon fillets down the center of the baking sheet, skin-side down.
  • Return the pan to the oven and bake the pesto salmon until the fish flakes easily with a fork and reaches an internal temperature of 145 degrees F, about 16 to 20 minutes.*
  • Sprinkle the salmon with a pinch of additional kosher salt and squeeze lemon over the top. Top with fresh basil as desired. Enjoy!

Salmon Fillets With Pesto and Pistachios image

Make and share this Salmon Fillets With Pesto and Pistachios recipe from Food.com.

Provided by SharleneW

Categories     Savory

Time 32m

Yield 4 serving(s)

Number Of Ingredients 3

1 1/2-2 lbs salmon fillets
1/4 cup buitoni refrigerated pesto sauce
1/2 cup chopped pistachios

Steps:

  • Preheat the oven to 350°F
  • Take four salmon fillets (do NOT use salmon steaks!) of about 6-7 oz. each and put them on a cookie sheet that has been sprayed with Pam or brushed with olive oil to prevent sticking.
  • Spoon about 1 tablespoon of Butoni pesto (in the grocery store refrigerated section) onto the top of each filet and spread evenly.
  • Take the pistachios (shell the nuts, put in a baggie and whack with the side of a meat tenderizer/pounder) and cover the pesto with them. The amounts of pesto and pistachios depend on the size of the fillets, so use your judgment here.
  • Bake for about 20-22 minutes until done.
  • Serve immediately. (I serve it with roasted baby red potatoes and asparagus.).

Time 1h20m

Number Of Ingredients 14

1 small clove garlic
1/2 cup shelled pistachios
4 heads fennel, 2 cups fronds separated, bulbs cut into 1-inch wedges
2 teaspoons grated lemon zest
Kosher salt
1/4 cup extra-virgin olive oil
1/4 cup vegetable oil
1/2 teaspoon ground fennel seed
2 lemons
3/4 cup panko breadcrumbs
5 tablespoons extra-virgin olive oil, plus more for drizzling
Kosher salt and freshly ground pepper
8 skinless 1-inch-thick wild-salmon fillets (about 6 ounces each)
3 tablespoons Greek yogurt

Steps:

  • Pesto: Turn on a food processor and drop garlic through tube; process until finely chopped. Add pistachios and pulse until coarsely ground. Add fennel fronds, lemon zest, fennel seed, and 1/4 teaspoon salt; pulse to combine. With machine running, gradually add both oils until combined. (Pesto can be refrigerated in an airtight container up to 1 week.)
  • Salmon: Preheat oven to 425°F with racks in upper and lower thirds. Using a rasp, zest 1 lemon (you should have 2 teaspoons), then cut into 1/8-inch-thick wheels. Cut second lemon into wedges. Toss panko with 2 tablespoons oil, season with salt and pepper, and spread on a baking sheet. Bake until golden brown, 4 to 5 minutes. Transfer to a bowl; stir in lemon zest.
  • Toss fennel wedges with remaining 3 tablespoons oil; season with salt and pepper. Spread evenly onto two rimmed baking sheets and roast, rotating sheets once, until golden brown in spots, 30 to 35 minutes. Flip fennel, add lemon wheels, drizzle with oil, and roast 5 minutes more.
  • Meanwhile, season fish with salt and pepper. Mix together yogurt and 3 tablespoons pesto; spread a thin layer of mixture over fish. Sprinkle panko mixture over top, patting gently to adhere.
  • Remove fennel from oven; push fennel and lemons aside to create room, then add fish. Roast until fish is almost completely opaque in center, about 8 minutes. Serve fish with fennel and roasted lemon wheels, more pesto, and lemon wedges.

SALMON CRUSTED PISTACHIO PESTO

Salmon Crusted Pistachio Pesto image

You can make this with your favorite fish. Serve with pasta, potatoes or rice. I enjoy my sushi grade fish still cool inside. But by all means cook yours the full 10-15 minutes.

Time 15m

Yield 4-6 serving(s)

Number Of Ingredients 3

1 lb boneless salmon fillet, seasoned with
salt and pepper
3/4-1 cup store bought pistachio pesto sauce (or Pistachio Pesto Pistachio Pesto)

Steps:

  • Spread pesto on top of salmon fillet skin side down.
  • roast at 450 degrees on parchment paper for about 10-15 minutes begins to flake when pressed with a fork.

Tips:

  • Choose the freshest salmon fillets you can find. Look for fillets that are firm and have a bright pink or orange color. Avoid fillets that are slimy or have a dull color.
  • Use a good quality pesto. A homemade pesto is always best, but you can also use a store-bought pesto if you're short on time. Just make sure to choose a pesto that is made with fresh basil and olive oil.
  • Don't overcook the salmon. Salmon is a delicate fish, so it's important not to overcook it. Cook the salmon until it is just opaque in the center, about 5-7 minutes per side.
  • Serve the salmon immediately. Salmon is best served immediately after it is cooked. You can garnish the salmon with additional pesto, pistachios, or lemon wedges.

Conclusion:

Salmon fillets with pesto and pistachios is a delicious and easy-to-make dish that is perfect for a weeknight meal. The combination of the rich pesto and the crunchy pistachios is sure to please everyone at the table. This dish is also a great way to get your daily dose of omega-3 fatty acids, which are essential for heart health.
