¼ cup Dijon mustard
6 sprigs fresh dill, chopped
2 (14.75-ounce) cans salmon packed in water (look for a sustainable brand)

4 large eggs, beaten
½ tablespoon salt
1 tablespoon pepper

1/2 pound crushed saltine crackers
1/2 pound all purpose flour
1 1/2 cups buttermilk
3 eggs
1 1/8 pounds crushed saltine crackers
Vegetable oil, for deep frying

Steps:

  • Place salmon and juice in large mixing bowl. Discard any bones and skin. Press salmon flat against pan and check for remaining bones. Flake haddock or cod and add to salmon. 1 cup panko breadcrumbs
1 small onion, diced
1 tablespoon olive oil
4 ounces smoked salmon
2 ounces light cream cheese
1 1/2 ounces capers
2 teaspoons kosher salt

1 large egg

Steps:

  • Preheat oven to 375 degrees F.
  • Peel potatoes, then cut the larger ones in half and boil for 20 minutes.
  • Combine breadcrumbs with salt and pepper and place on a baking sheet. Cook for no more than 2 minutes, or long enough to brown them.
  • While the potatoes are cooking, sautee the onion until it turns a golden brown.
  • Mash potatoes by hand or run through a ricer.

1/4 cup flour

Steps:

  • In a large frypan, heat butter over medium high heat, and sauté onion and garlic powder.

1 can(s) salmon (with the juice)
1 medium yellow onion (diced)
2 large eggs (slightly beaten)
1/4 to 1/2 c of self rising flour

Steps:

  • 1. In a medium size bowl put Salmon, with the juice, (be sure to crack open the salmon and remove the 2 strips of bones), Diced onion, eggs. Breaking the chunks of salmon with your fork, mix together adding the Flour a little at a time until it is thick and there are no more juices. (you will see the consistency is like a dry tuna salad) Make sure everything is mixed well...
  • 2. Frying In a pan heat some oil ...enough to cover the bottom and about ¼ inch deep ... not a lot cause you can always add more if you need it. Cook in batches. Spoon mixture into heated pan (I use a regular table spoon and put a heaping spoonful into the pan). Don't make them too big! I space them far apart about 3 or 4 per pan. Don't mash it, Let it rise and crisp.
  • 3. Pan should be about med high. Let patties brown and then turn (I turn twice on each side till golden brown) Drain on paper towel. (I never mash the patty just lightly pat them with the spatula so they will rise.) IF pan gets too hot take it off the heat to cool.

Salmon patties and southern cornbread (no sugar!!! that belongs in iced tea) are the two foods I associate with her because she made them so often, and always the same way. This is my own version, in tribute to her. Enjoy!

3 5 oz salmon pouches
1/2 c minced red onion
zest of 1 lemon
juice of 1/2 lemon
2 1/4 tsp cajun seasoning
1 1/2 tsp parsley flakes
1 Tbsp mayonnaise
2 eggs
1 1/4 c cracker crumbs
panko bread crumbs for coating

Steps:

  • 1. Mix salmon, lemon zest, juice, and seasonings in a medium sized mixing bowl.
  • 2. Add eggs, mayo, and cracker crumbs. Mix well. Note: I had some leftover assorted crackers from the holidays that I needed to use up.....but you could use crushed saltines or breadcrumbs.
  • 3. Put the bowl in the fridge and let chill for half an hour.
  • 4. Preheat oven to 450. Line a baking sheet with aluminum foil and generously coat with oil (I used peanut oil).
  • 5. Spread panko bread crumbs on a large plate. Using a half cup scoop, form patties and coat both sides well with the panko. This made 7 good sized patties.
  • 6. Place on baking sheet and lightly brush tops with more oil. Bake for 10 minutes, flip and bake an additional 8-10 minutes.
  • 7. I served these with a "Boom" sauce that I found on Pinterest and tweaked slightly : BOOM SAUCE 1 cup mayo, 1/3 cup ketchup, 2 T Dijon mustard, 1 teaspoon Worcestershire sauce, 1 teaspoon smoked paprika, 1/2 teaspoon onion powder, 3/4 teaspoon garlic powder, 2 tablespoons sweet pickle relish, a dab of horseradish, and a pinch of salt. Whisk ingredients and store in fridge.

1 egg
¼ cup finely chopped celery
¼ cup sliced green onion
1 tablespoon chopped fresh dill weed
½ teaspoon garlic powder
⅓ cup wheat germ
3 tablespoons olive oil

Steps:

  • In a medium bowl, mix together the salmon, egg, celery, green onion, dill, and garlic powder. Form the mixture into golf ball sized balls, and roll in wheat germ to coat.

2 pounds of salmon fillets, poached in court bouillon (see recipe), or 2 15 1/2-ounce cans of salmon
1 large onion, finely chopped
3 eggs
1 cup cooked rice
Salt and black pepper to taste
Flour for coating
2 cups vegetable oil for pan frying

Steps:

  • Drain the salmon and reserve court bouillon (or juice from cans). Place salmon in a bowl and add onion, eggs, rice, salt and black pepper to taste. Stir well and mash salmon with a hand masher. Add a little court bouillon (or juice) so that the mixture is moist but not soupy.
  • Make oblong patties with an ice- cream scoop. Roll patties in flour and pan-fry in 350-degree oil. Brown on both sides. Drain on paper towels.

I've always loved a good salmon croquette or salmon patty for lunch or a light supper. Convincing my husband was another story. With the addition of rice to the patty ingredients, bumping up the spices and using a peppery country-fried chicken breading mix, he was sold. Give it a try! Definitely not your granny's mushy salmon...

CROQUETTES-
1- 14.75 oz. can pink salmon (i use chicken of the sea)
2 eggs, beaten
1/4 cup mayo
1/3 cup onion, very finely chopped
2 tb fresh chives, chopped
1 tsp. dried parsley
1/2 tsp. old bay seasoning
1/2 tsp. worcestershire sauce
1 tb. creamy horseradish (optional)
1/8 tsp. black pepper
1 tsp. dill weed
1/2 cup cooked rice (leftover or minute rice, cooled is fine)
1/2 cup seasoned breadcrumbs
BREADING-
1 envelope of your favorite country fried chicken breading, such as shake & bake (i add a little freshly cracked black pepper)
breading station- first flour, then beaten egg, then country style shake and bake

Steps:

  • 1. Prepare canned salmon by removing bones, skin and cartilage. Place in large bowl. Add rest of croquette ingredients. Mix with fork until just incorporated.
  • 2. Using a 1/3 cup measuring cup, form 6 patties to desired thickness. I like mine about 1/2-3/4" thick. Place on large platter.
  • 3. Set up a breading station: 1. flour 2. beaten egg 3. Shake & Bake Country Fried Seasoning or similar Dip each patty in that order. Place on platter until ready to fry.
  • 4. Add 1-2 TB. of butter to large frying pan. Add enough cooking oil to generously coat the bottom. (I like to fry with grape seed oil.) Fry patties until crisp and golden. Drain briefly on paper towels. Serve on top of a mixed green salad, or any of the variations below.
  • 5. Additional serving suggestions/variations: *Knorr Hollandaise Sauce Mix prepared as directed with the addition of 1 tsp. dried dill *Place salmon croquettes atop big, fluffy, country-style biscuits, top with Black Pepper Saw Mill Gravy and serve with coleslaw. *Tartar Sauce *Cocktail Sauce Can also be made into sandwiches. Divide into 4 portions instead of six and add your favorite cabbage slaw or lettuce and tartar sauce, etc. on crusty Kaiser rolls.

Tips:

  • Choose high-quality salmon. Fresh, wild-caught salmon is best, but frozen salmon can also be used. If using frozen salmon, thaw it completely before cooking.
  • Don't overcook the salmon. Salmon is a delicate fish and cooks quickly. Overcooked salmon will be dry and tough.
  • Use a food processor to finely chop the salmon. This will help the croquettes to hold together better.
  • Add some moisture to the croquette mixture. This can be done with mayonnaise, sour cream, or milk. If the mixture is too dry, the croquettes will be crumbly.
  • Season the croquette mixture well. Use a variety of herbs and spices to taste.
  • Chill the croquette mixture before frying. This will help the croquettes to hold their shape better.
  • Fry the croquettes in hot oil. This will help them to brown evenly.
