4 salmon fillets (6 ounces each)
5 tablespoons reduced-fat sesame ginger salad dressing, divided
RICE:
1/3 cup shredded carrot
4 green onions, chopped, divided
1-1/2 cups instant brown rice
1-1/2 cups water
1/3 cup reduced-fat sesame ginger salad dressing

Steps:

  • Preheat oven to 400°. Place fillets on a foil-lined baking sheet; brush with 3 tablespoons salad dressing. Bake, uncovered, 10-12 minutes or until fish just begins to flake easily with a fork. Brush with remaining salad dressing., Meanwhile, place a large saucepan coated with cooking spray over medium heat. Add carrot and half of the green onion; cook and stir 2-3 minutes or until crisp-tender. Add rice and water; bring to a boil. Reduce heat; simmer, covered, 5 minutes., Remove from heat; stir in salad dressing. Let stand, covered, 5 minutes or until liquid is absorbed and rice is tender. Fluff with a fork; serve with salmon. Sprinkle with remaining green onions.

1 cup brown rice
2 ½ cups water
1 pound salmon fillet
¼ cup orange juice
1 teaspoon dried dill weed
1 teaspoon dried rosemary
1 teaspoon dried basil
1 teaspoon dry mustard
1 teaspoon lemon pepper

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). In a saucepan bring 2 1/2 cups of water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes.
  • In a large pan, add enough water to just cover the bottom of the pan. Lay the salmon fillet in the pan, pink side up. Place cooked rice around the outside of the fish. Sprinkle the orange juice over the fish and rice.
  • In a small bowl, combine the dill weed, rosemary, basil, mustard, lemon pepper and sprinkle over the fish and rice. Cover with aluminum foil.
  • Bake in a preheated oven for 30 to 40 minutes or until the salmon is tender and flaky.

10 ounces frozen corn
3/4 cup quick-cooking brown rice
2/3 cup low-sodium low-fat chicken broth
2 tablespoons green onions, sliced
1/4-1/2 teaspoon dill weed, dried
1/4 cup low-fat cheddar cheese, shredded
3 -5 dashes of your favorite hot sauce (optional)

Steps:

  • Pre-heat oven to 375°F.
  • Combine all but cheese in a 11/2 quart casserole.
  • Cover and bake until done.about 30 minutes.
  • Uncover and sprinkle with cheese.

3/4 c brown rice
2/3 c water
2 Tbsp green onion, sliced
1/2 tsp chicken broth, low salt
1/4 tsp dill, dried
1/4 c cheddar cheese, shredded

Steps:

  • 1. Preheat oven to 375.
  • 2. In a 1 1/2 quart casserole, combine corn, salmon, uncooked rice, water, green onions, bouillon granules and dill weed; cover and bake 30 minutes or until rice is tender.
  • 3. Sprinkle with cheese.
  • 4. Bake uncovered, 5 minutes more or until cheese melts.

3 tablespoons soft margarine (I use Becel)
4 tablespoons flour
1 teaspoon salt
2 cups 1% low-fat milk
1/2 teaspoon curry powder
1/2 teaspoon Worcestershire sauce
2 (7 1/2 ounce) cans salmon (any variety)
1 1/2 cups rice, cooked (left-overs work great!)
1 cup cheddar cheese, grated

Steps:

  • Set oven to 350 degrees F.
  • Grease casserole dish.
  • Melt margarine.
  • Add flour& salt and cook for 1 minute while stirring.
  • Remove from heat.
  • Add milk gradually, return to heat and cook and stir until thickened.
  • Stir curry powder and worcestershire sauce into sauce.
  • Break salmon into chunks and add to sauce.
  • Add cooked rice.
  • Pour into greased casserole.
  • Sprinkle cheese on top.
