Time 30m

Number Of Ingredients 25

1 lb ground beef (90% lean)
1/2 onion (finely diced)
2 garlic cloves (minced)
1/3 cup panko bread crumbs
1 large egg
1 ½ tsp Worcestershire sauce
2 tsp mayonnaise
1 tsp sea salt
½ tsp black pepper
1 ½ tsp Italian seasoning
1 Tbsp ketchup
1 ½ tsp milk ((whole milk or any kind))
2 tsp Dijon mustard
1 Tbsp olive oil (to sautee)
1/2 yellow onion (finely diced)
1 Tbsp unsalted butter
8 oz brown mushrooms (sliced)
2 garlic cloves (minced)
2 Tbsp all-purpose flour
1 1/2 cup beef broth (+ 1/2 cup water)
½ tsp Worcestershire sauce
½ tsp Dijon mustard
2 tsp ketchup
¼ tsp sea salt
⅛ tsp ground black pepper

Steps:

  • In a bowl combine all of the ingredients for the beef patties (except the oil). Mix until well incorporated and shape into 4 oval or round patties flattening the center for even thickness throughout.
  • Heat 1 Tbsp oil in a non-stick pan, once hot, add patties to the skillet and cook until patties are golden brown on both sides and fully cooked. Remove the patties from the skillet and cover to keep warm.
  • Sauté ½ onion (you can also slice onion into thin slices, whatever your personal preference is) in the same skillet. Once the onion starts to become tender, add the garlic and butter and mix.
  • Add the mushrooms and sauté until browned, mixing frequently. Lightly season with salt and pepper.
  • In a bowl, whisk together all of the remaining gravy ingredients: 2 Tbsp flour, 1 1/2 cups broth, 1/2 cup water, 1/2 tsp Worcestershire, 1/2 tsp dijon, 2 tsp ketchup, 1/4 tsp salt, and 1/8 tsp pepper. Pour into the mushrooms and cook until the gravy thickens.
  • Add the patties back to the pan and completely cover with the gravy and mushrooms and cook just until patties are heated through.

SALISBURY STEAK WITH MUSHROOMS

Salisbury Steak with Mushrooms image

A great from-scratch salisbury steak and gravy recipe I found a long time ago. The mushroom and onion gravy is wonderful over mashed potatoes or rice. The gravy is still good without mushrooms. I've made it for my husband that way.

Time 1h30m

Yield 4 servings

Number Of Ingredients 21

4 boneless steaks (about 4 ounces each)
Salt and freshly ground black pepper
Flour, for dredging
1/4 cup extra-virgin olive oil
4 cups beef stock
8 ounces white button mushrooms, quartered
8 ounces shiitake mushrooms, stemmed, caps quartered
1 tablespoon unsalted butter
1 onion, minced
1 carrot, diced
4 sprigs fresh thyme
3 cloves garlic, minced
1 cup balsamic vinegar
Pea whipped potatoes, recipe follows
2 pounds russet potatoes, peeled and cut into large chunks
1 1/2 pounds English peas, or 2 pounds frozen peas
2 cups heavy cream
1/2 cup (2 sticks) unsalted butter, at room temperature
1 tablespoon minced garlic (about 3 to 4 cloves)
Salt and freshly ground black pepper
Grated Parmesan, optional

Steps:

  • Preheat oven to 300 degrees F.
  • Use a jaccard steak tenderizing tool, or tenderize the steak yourself with a fork. Lay the meat out in front of you, pushing it flat with your hands or a meat mallet, and pull it gently apart with tines of the fork until the meat is slightly pulled apart and tender. Season with salt and pepper and dredge in flour. In a large oven-safe skillet over medium-high heat, add olive oil and brown steaks, in batches if necessary, on both sides, about 2 minutes per side. Set aside, keep warm.
  • Meanwhile, in a saucepan, reduce stock by half.
  • Season mushrooms with salt and pepper, to taste. Saute quartered mushrooms in the same pan as the meat, in the leftover olive oil, until very brown, about 5 minutes. Add butter, minced onion, carrot, thyme, and garlic. Cook until vegetables are caramelized, about 5 minutes, add balsamic vinegar and reduce for 1 to 2 minutes. Add broth, slide meat back into sauce, cover and bake until tender, about 1 hour.
  • Stack steaks with pea whipped potatoes and drizzle with balsamic/mushroom sauce.
  • Put the potatoes in a large saucepan with cold water to cover by 3 inches. Salt the water, cover and bring to a boil over high heat. Reduce heat and simmer until tender, about 10 minutes. While the potatoes are cooking, cook the peas in a separate saucepan of salted water. Simmer until just tender, about 3 to 5 minutes. Remove with a sieve and cool on a baking sheet. When the potatoes are done, drain well, scatter on a baking sheet, and let cool for several minutes. In a small saucepan, heat 1/2 cup of the cream until it reaches a boil then simmer for a few minutes. Add the cream to a blender with the cooked peas and puree until smooth. Season with salt and pepper.
  • Heat 1 tablespoon of the butter in a large saucepan over medium heat until the butter stops foaming and turns a light brown. Add the garlic and cook quickly until pale gold. Add remaining cream, season, to taste, with salt and pepper and bring to a boil.
  • Press the cooled potatoes through a ricer or food mill into the butter and garlic mixture, tossing to coat.
  • Reduce the heat to low. Add the remaining butter by tablespoonfuls, stirring vigorously after each addition. In this way, the butter does not melt into a golden puddle. Instead, it forms an emulsion with the potatoes, creating a very smooth puree.
  • Fold the pea puree into the mashed potatoes and adjust seasoning, as necessary. Instead of salt, the puree can be seasoned with a little grated Parmesan, if desired.
  • Serve hot.

Tips:

  • Use high-quality ground beef for the Salisbury steak. Look for ground chuck or sirloin, which have a good ratio of fat to meat, resulting in a juicy and flavorful steak.
  • Don't overmix the ground beef mixture. Overmixing can make the steaks tough. Mix just until the ingredients are combined.
  • Shape the ground beef mixture into oval patties, about 1/2-inch thick. Make sure the patties are uniform in size and thickness so that they cook evenly.
  • Brown the Salisbury steaks in a large skillet over medium heat. Don't overcrowd the skillet, or the steaks will steam instead of brown. Cook the steaks for 3-4 minutes per side, or until they are browned on both sides.
  • Make the mushroom sauce while the steaks are cooking. Sauté mushrooms, onions, and garlic in butter until softened. Stir in flour and cook for 1 minute. Slowly whisk in beef broth and milk. Bring to a simmer and cook for 5 minutes, or until the sauce has thickened.
  • Pour the mushroom sauce over the Salisbury steaks and serve immediately. Garnish with fresh parsley or chives.

Conclusion:

Salisbury steak with mushroom sauce is a classic comfort food dish that is easy to make and always a crowd-pleaser. With a few simple ingredients and a little bit of time, you can create a delicious and hearty meal that your family and friends will love. Serve Salisbury steak with mashed potatoes, green beans, or your favorite sides.
