1 pound lean ground beef
1 (10-ounce) can condensed cream of mushroom soup, divided
1/2 cup Italian bread crumbs
1 egg, lightly beaten
1/2 cup frozen chopped onions
1 teaspoon steak seasoning (recommended: Montreal)
1 tablespoon canola oil
2 tablespoons butter, divided
1/4 cup cognac
1 (8-ounce) package sliced fresh mushrooms
2 cups low-sodium beef broth
1 (1.2-ounce) packet brown gravy mix
Cooked rice, for serving

Steps:

  • In a large bowl, combine beef, 1/4 can mushroom soup, bread crumbs, egg, onions, and steak seasoning. Mix thoroughly and shape into 4 oval patties.
  • Heat oil and 1 tablespoon butter in large skillet over medium-high heat. Brown patties on both sides and transfer to a plate.
  • Add remaining butter and cognac (remove pan from heat when adding cognac.) Saute mushrooms for 7 to 8 minutes. Add beef stock and whisk in gravy mix until smooth. Stir in remaining mushroom soup.

1/2 onion ((white, brown or yellow))
1/2 cup panko breadcrumbs ((or 1/3 cup ordinary breadcrumbs))
1 lb/500g ground beef (mince)
1 garlic clove (, minced)
1 egg
2 tbsp ketchup
1 beef bouillon cube (, crumbled)
1/2 tsp Worcestershire sauce
3 tsp dijon mustard (OR 2 tsp dry mustard powder)
1 tbsp olive oil
2 garlic cloves (, minced)
1/2 onion (, finely chopped)
5 oz/150g mushrooms (, sliced)
2 tbsp unsalted butter
3 tbsp (35g) flour ((all purpose / plain))
2 cups (500 ml) beef broth / stock
1 cup (250 ml) water
2 tsp dijon mustard
2 tsp Worcestershire sauce
Salt and pepper

Steps:

  • Place breadcrumbs in a bowl. Use a box grater and grate the onion over the breadcrumbs. Mix with fingers, leave to soak for a few minutes.
  • Add remaining Salisbury Steak ingredients into the large bowl. Use your hands to mix until just combined. Mix well for a couple of minutes until the mixture becomes a bit "pasty" which will ensure your patties hold together well.
  • Divide into 5 and pat firmly into oval patties around 3/4" / 1 2/3 cm thick.
  • Heat oil in a skillet over high heat. Add the steaks and cook the first side for 1 minute or until browned, then flip and brown the other side (they will still be raw inside). Remove onto plate.
  • If skillet is looking dry, add a touch more oil. Add chopped onion and garlic and cook for 2 minute until onions are a bit translucent.
  • Add the mushrooms into the skillet and cook for 2 - 3 minutes until golden.
  • Turn heat down to medium. Add butter. Once melted, add flour and cook for 30 seconds, stirring constantly.
  • Gradually add in beef broth, stirring as you go. Once mostly lump free, whisk in remaining Gravy ingredients.
  • Add steaks along with the juices on the plate. Cook for 5 - 7 minutes, or until gravy is thickened, stirring occasionally around the steaks. If the gravy thickens too quickly, add more water.
  • Remove steaks onto a plate. Taste gravy and adjust salt and pepper to taste.
  • Serve salisbury steaks topped with the mushroom gravy - over mashed potato is ideal! Sprinkle with a bit of parsley if desired.

2 cups onions, chopped and divided
3 tablespoons vegetable oil, divided
1 garlic clove, minced
2 lbs ground beef
2 large eggs, lightly beaten
1/4 cup fine dry breadcrumb
2 teaspoons prepared mustard
2 teaspoons Worcestershire sauce
1 teaspoon salt, divided
1 teaspoon pepper, divided
1 (8 ounce) package sliced fresh mushrooms
3 tablespoons all-purpose flour
1/2 cup dry red wine
1 1/2 cups low sodium beef broth

Steps:

  • Saute half of chopped onion in 1 Tabsp hot oil in medium skillet over medium heat until tender. Add garlic, and saute 30 seconds. Remove from heat and let cool.
  • Combine cooked onion mixture, beef, and next 4 ingredients, 1/4 teasp salt, and 1/2 teasp pepper. Shape into 6 patties.
  • Cook patties in remaining 2 Tabsp. hot oil over medium-high heat 3 minutes on each side or until browned. (Do not cook until done). Remove patties and set aside.
  • Add remaining onion to drippings in skillet, and saute over medium-high heat until tender; add mushrooms and saute 3 minutes. Whisk in flour, and cook, stirring constantly, 1 minute, whisk in wine, broth, and remaining 3/4 teasp salt and 1/2 teasp of pepper. Bring to a boil, reduce heat to low and simmer stirring occasionally, 5 minutes.
  • Place patties in lightly greased baking dish, top evenly with gravy.
  • Bake, covered, at 350 for 25 minutes or until done.
  • In the summer I make this recipe in my electric fry pan.

3 tablespoons water

Steps:

1 egg
3 tablespoons crushed buttery round cracker crumbs
2 tablespoons finely chopped onion
½ teaspoon salt

3 tablespoons butter
3 tablespoons all-purpose flour
3 cups milk

1 1/4 lbs ground beef
1 tablespoon Worcestershire sauce
1 small onion, diced
1 tablespoon steak seasoning (I use Montreal Steak spice)
1 cup sliced mushrooms
2 tablespoons butter
2 tablespoons flour
2 cups beef stock
salt and pepper

Steps:

  • Gently combine ground beef, worchestershire sauce, steak spice and onion - be careful not to overwork the meat mixture.
  • Shape the meat into oval patties, not too thin.
  • At medium to high heat, fry the meat patties approximately 6 mins on each side - turn only once.
  • Remove the cooked patties to a platter and cover with tin foil to keep them warm.
  • Add butter to the same pan and melt.
  • Add the mushrooms, salt and pepper to the pan, saute until nice a golden brown (approx. 3-5 mins).
  • Sprinkly the flour over the mushrooms and cook for 1-2 mins until flour has absorbed the butter (sometimes I added a little bit more butter at this stage).
  • Whisk in the beef stock and cook until thickened. Check for seasoning.
  • Serve gravy over the meat patties.

1 egg
1/2 cup Original Bisquick™ mix
1/8 teaspoon pepper
1 tablespoon vegetable oil
1 medium onion, cut in half, then sliced
1 jar (4.5 oz) sliced mushrooms, drained
1 jar (12 oz) beef gravy

Steps:

  • In large bowl, mix beef, egg, 1/4 cup of the Bisquick mix and the pepper. With wet hands, shape beef mixture into 6 oval patties, about 1/2 inch thick. Lightly coat patties with remaining 1/4 cup Bisquick mix.
  • In 12-inch nonstick skillet, heat oil over medium heat. Arrange patties in single layer in skillet. Add onion slices around and on top of patties. Cook 12 to 16 minutes, turning patties once and stirring onions occasionally, until meat thermometer inserted in center of patties reads 160°F.
  • If necessary, spoon fat from skillet and discard. Add mushrooms and gravy to skillet. Turn patties to coat with gravy. Heat to boiling.
