1 1/2 pounds Yukon gold or red potatoes, cut into 1-inch chunks
Kosher salt
1 1/4 pounds meatloaf mix
1/2 cup panko breadcrumbs
1 large egg
1/2 onion, grated
1 1/2 teaspoons chopped fresh thyme
2 teaspoons Worcestershire sauce
Freshly ground pepper
4 tablespoons unsalted butter
1 1/2 cups baby carrots, halved lengthwise
3 stalks celery, sliced
1 1/4 cups low-sodium chicken broth
3 tablespoons half-and-half

Steps:

  • Put the potatoes in a medium saucepan and cover with cold water; season with salt. Bring to a boil and cook until tender, 25 minutes.
  • Meanwhile, combine the ground meat, panko, egg, onion, thyme, Worcestershire sauce, 1 teaspoon salt and a few grinds of pepper in a bowl; mix with your hands. Form into four 1/2-inch-thick oval patties.
  • Heat 1 tablespoon butter in a large nonstick skillet over medium-high heat. Add the patties; cook until browned, 3 minutes per side. Scatter the carrots and celery around the patties; cook until they start softening, 3 minutes. Reduce the heat to medium. Add the broth, cover and simmer until the patties are cooked through, 5 minutes. Remove the patties and increase the heat to high. Cook until the broth is slightly reduced, 2 minutes, then add 1 tablespoon butter and swirl until melted.
  • Drain the potatoes; mash with the half-and-half, the remaining 2 tablespoons butter, and salt and pepper to taste. Serve with the patties and vegetables.

1/2 onion (finely diced)
2 garlic cloves (minced)
1/3 cup panko bread crumbs
1 large egg
1 ½ tsp Worcestershire sauce
2 tsp mayonnaise
1 tsp sea salt
½ tsp black pepper
1 ½ tsp Italian seasoning
1 Tbsp ketchup
1 ½ tsp milk ((whole milk or any kind))
2 tsp Dijon mustard
1 Tbsp olive oil (to sautee)
1/2 yellow onion (finely diced)
1 Tbsp unsalted butter
8 oz brown mushrooms (sliced)
2 garlic cloves (minced)
2 Tbsp all-purpose flour
1 1/2 cup beef broth (+ 1/2 cup water)
½ tsp Worcestershire sauce
½ tsp Dijon mustard
2 tsp ketchup
¼ tsp sea salt
⅛ tsp ground black pepper

Steps:

  • In a bowl combine all of the ingredients for the beef patties (except the oil). Mix until well incorporated and shape into 4 oval or round patties flattening the center for even thickness throughout.
  • Heat 1 Tbsp oil in a non-stick pan, once hot, add patties to the skillet and cook until patties are golden brown on both sides and fully cooked. Remove the patties from the skillet and cover to keep warm.
  • Sauté ½ onion (you can also slice onion into thin slices, whatever your personal preference is) in the same skillet. Once the onion starts to become tender, add the garlic and butter and mix.
  • Add the mushrooms and sauté until browned, mixing frequently. Lightly season with salt and pepper.
  • In a bowl, whisk together all of the remaining gravy ingredients: 2 Tbsp flour, 1 1/2 cups broth, 1/2 cup water, 1/2 tsp Worcestershire, 1/2 tsp dijon, 2 tsp ketchup, 1/4 tsp salt, and 1/8 tsp pepper. Pour into the mushrooms and cook until the gravy thickens.
  • Add the patties back to the pan and completely cover with the gravy and mushrooms and cook just until patties are heated through.

1 tablespoon ketchup
2 teaspoons dry mustard
4 dashes Worcestershire sauce
1 cube beef bouillon, crumbled (or powdered beef base)
Salt and pepper
1 tablespoon butter
1 tablespoon olive oil
1 whole onion, halved and thinly sliced (or diced if you prefer)
2 cups beef broth, more if needed for thinning
1 tablespoon ketchup
1 teaspoon seasoning sauce, such as Kitchen Bouquet, optional
4 dashes Worcestershire
1 teaspoon cornstarch, optional

Steps:

  • For the meat mixture: Combine the ground beef, breadcrumbs, ketchup, dry mustard, Worcestershire sauce, bouillon and some salt and pepper. Knead until all combined. Form into 4 to 6 oval patties, and then make lines across the patties to give them a "steak" appearance.

Add the beef stock, ketchup, seasoning sauce, if using, and the Worcestershire. Then combine the cornstarch with a little beef broth and add to the sauce if using. Stir and cook to reduce.
  • Add a sprinkle of salt and pepper and more broth if needed for thinning. Then return the patties to the gravy. Spoon the gravy over the top and let them simmer and heat back up for a couple of minutes.

1 1/2-2 lbs ground beef
1 (10 1/2 ounce) can cream of mushroom soup (use 2 cans if you are using 2 lbs beef)
1 (1 1/4 ounce) envelope onion soup mix
1 1/2 cups bread, crumbs
1/4 teaspoon minced garlic
pepper
1/3 cup water

Steps:

  • In a medium bowel combine mushroom soup,onion soup,garlic and pepper set aside.
  • In a large bowel mix together ground beef and 1/2 of your bread crumbs add 1/3 of soup mixture if it is to soft add the rest of your bread crumbs.

The king of those dinners, in my opinion, was the Salisbury steak, which is what I'll show you how to make here, along with one of the greatest gravies ever invented. Serve with buttered mashed potatoes and a vegetable side of your choice.

1 pound 85% lean ground beef
½ teaspoon freshly ground black pepper
1 teaspoon dry mustard
2 tablespoons ketchup
1 tablespoon Worcestershire sauce
1 teaspoon soy sauce
1 large egg, beaten
1 pinch cayenne pepper, or to taste
½ cup plain bread crumbs
2 tablespoons salted butter
12 large white button mushrooms, sliced
1 cup diced onion
1 pinch salt
2 tablespoons all-purpose flour
2 tablespoons ketchup
1 tablespoon Worcestershire sauce
3 cups high-quality, low-sodium beef broth
salt to taste
2 tablespoons salted butter

Steps:

  • Combine beef, black pepper, dry mustard, ketchup, Worcestershire, soy sauce, egg, cayenne, and bread crumbs in a mixing bowl. Use a fork or your hands to stir the ingredients until very evenly distributed.

  • Melt 2 tablespoons butter in the previously used nonstick pan over medium-high heat. Add the patties and cook until browned, 2 to 3 minutes per side. Pour in gravy and bring to a simmer; reduce heat to medium and continue to cook until gravy is piping hot, and the meat is just cooked through and springs back lightly when touched, about 5 minutes.
