SALISBURY STEAKS WITH FRENCH ONION GRAVY

EVOO for liberal drizzling
2 tablespoons butter
2 large onions, sliced
Salt and coarse black pepper
Ground thyme
1 bay leaf
2 pieces stale white bread, crust trimmed
Milk or half-n-half
About 1 2/3 pounds ground sirloin
1 large egg, beaten
1/4 cup Worcestershire sauce
3 tablespoons grated onion
2 tablespoons flour
1/2 cup dry white wine
1 cup beef stock
Watercress, for garnish, optional

Steps:

  • Place a drizzle of EVOO in a skillet over medium heat and melt the butter into the oil. Add the onions, season with salt and pepper, a little ground thyme and add the bay. Caramelize the onions until very soft and sweet and light golden in color, 20 to 25 minutes.
  • Meanwhile, soak the bread in milk or half-n-half. Place the meat in a bowl and add the egg. Squeeze out the bread and crumble into crumbs as you add to the bowl. Add the Worcestershire and grated onion to the beef. Sprinkle with salt and pepper and combine. Form into 4 (1-inch thick) oval loaves. Heat a drizzle of EVOO in a large skillet over medium-high heat. Add the loaves and cook until cooked through, about 15 minutes, turning occasionally. Transfer the meat to a plate.
  • Sprinkle the flour over the caramelized onions, stir 1 minute. Deglaze the pan you cooked the meat in with the wine and pour into the onions. Add the beef stock and thicken a moment. Serve the gravy over the Salisbury steaks. Garnish with a little watercress, if desired.

1 1/2 lbs ground beef
2 eggs
1/2 cup milk
3/4 cup breadcrumbs
1/2 finely chopped onion
2 teaspoons Worcestershire sauce
1 teaspoon black pepper
1 1/2 teaspoons salt
3 garlic cloves, minced
1 cup water
1 (7/8 ounce) envelope brown gravy mix
1 large onion, thinly sliced seperated into rings
1 1/2 tablespoons brown sugar
2 tablespoons margarine
1 (4 ounce) can sliced mushrooms (drained)

Steps:

  • In large bowl, combine all loaf ingredients, mixing well but lightly as not to dry out meat.
  • Pour into a lightly oiled 9 1/4 x 5 1/4-inch loaf pan.
  • Bake at 350°F for 40 minutes. Drain grease. Top with gravy and bake for 15 more minutes.
  • For gravy: Prepare gravy mix and water according to package directions.
  • In a medium size skillet, melt margarine.
  • Add sliced onions, brown sugar, and mushrooms, stirring until onions are softened and a medium brown, about 15 minutes.
  • Add gravy and stir until thickened and heated through.

1 1/2 pounds Yukon gold or red potatoes, cut into 1-inch chunks
Kosher salt
1 1/4 pounds meatloaf mix
1/2 cup panko breadcrumbs
1 large egg
1/2 onion, grated
1 1/2 teaspoons chopped fresh thyme
2 teaspoons Worcestershire sauce
Freshly ground pepper
4 tablespoons unsalted butter
1 1/2 cups baby carrots, halved lengthwise
3 stalks celery, sliced
1 1/4 cups low-sodium chicken broth
3 tablespoons half-and-half

Steps:

  • Put the potatoes in a medium saucepan and cover with cold water; season with salt. Bring to a boil and cook until tender, 25 minutes.
  • Meanwhile, combine the ground meat, panko, egg, onion, thyme, Worcestershire sauce, 1 teaspoon salt and a few grinds of pepper in a bowl; mix with your hands. Form into four 1/2-inch-thick oval patties.
  • Heat 1 tablespoon butter in a large nonstick skillet over medium-high heat. Add the patties; cook until browned, 3 minutes per side. Scatter the carrots and celery around the patties; cook until they start softening, 3 minutes. Reduce the heat to medium. Add the broth, cover and simmer until the patties are cooked through, 5 minutes. Remove the patties and increase the heat to high. Cook until the broth is slightly reduced, 2 minutes, then add 1 tablespoon butter and swirl until melted.
  • Drain the potatoes; mash with the half-and-half, the remaining 2 tablespoons butter, and salt and pepper to taste. Serve with the patties and vegetables.

¾ cup water

2 c fresh white bread crumbs (cut in to small cubes) (no crust)
1 can(s) French onion soup (I use Campbell's), 10.5 oz
4 Tbsp tomato sauce (divided)
2 Tbsp milk
2 Tbsp Worchestershire sauce
2 large eggs (beaten)
1 tsp salt
1/2 tsp black pepper
1 tsp dry whole leaf thyme (crushed)
4 tsp dehydrated onion flakes
1 tsp garlic powder
2 lb ground beef chuck 80/20
5 slice thin cut bacon
1/2 c water
1 Tbsp corn starch

Steps:

  • 1. Measure 4 Tbsp of the onion soup and 2 Tbsp of the tomato sauce in a large bowl. Add the bread crumbs, eggs, milk, Worcestershire, onion flakes, and the remaining seasonings. Stir to mix well. Let sit 10 minutes to allow the bread crumbs to soak up the liquids.
  • 2. Gently mix in the 2 pounds ground beef chuck. Do this by working with your hands. Do not over mix or the meatloaf will be tough.
  • 3. On a baking sheet (jelly roll pan), that is lined with non-stick foil, form the meat mix in to a loaf about 3x3x10. Wrap the loaf, lengthwise with the bacon slices.
  • 4. Bake the meatloaf in a 350 degree oven for 1 hour and 10 minutes. The last 10 minutes turn the oven up to 425 degrees to get the bacon a little crispier.
  • 5. Let the meatloaf rest, uncovered on the counter for 30 minutes before slicing. While it is resting, make the gravy.
  • 6. To make the gravy, place the remaining can of French Onion Soup, the other 2 Tbsp of tomato sauce, the water, and the corn starch in a small saucepan. Heat until it comes to a boil, stirring constantly.
  • 7. Serve the meatloaf with a little of the sauce on top.

The king of those dinners, in my opinion, was the Salisbury steak, which is what I'll show you how to make here, along with one of the greatest gravies ever invented. Serve with buttered mashed potatoes and a vegetable side of your choice.

1 pound 85% lean ground beef
½ teaspoon freshly ground black pepper
1 teaspoon dry mustard
2 tablespoons ketchup
1 tablespoon Worcestershire sauce
1 teaspoon soy sauce
1 large egg, beaten
1 pinch cayenne pepper, or to taste
½ cup plain bread crumbs
2 tablespoons salted butter
12 large white button mushrooms, sliced
1 cup diced onion
1 pinch salt
2 tablespoons all-purpose flour
2 tablespoons ketchup
1 tablespoon Worcestershire sauce
3 cups high-quality, low-sodium beef broth
salt to taste
2 tablespoons salted butter

Steps:

  • Combine beef, black pepper, dry mustard, ketchup, Worcestershire, soy sauce, egg, cayenne, and bread crumbs in a mixing bowl. Use a fork or your hands to stir the ingredients until very evenly distributed.

Bring to a simmer; reduce heat to medium and cook, stirring occasionally, until the gravy thickens slightly and reduces, about 10 minutes. Taste and adjust salt as needed. Transfer to a glass measuring cup, scraping the pan clean with a spatula, and reserve.
  • Remove meat from the refrigerator and divide into 4 equal portions. Moisten hands and form into oval patties, about 1/2 inch thick. Season both sides of the patties lightly with salt.
  • Melt 2 tablespoons butter in the previously used nonstick pan over medium-high heat. Add the patties and cook until browned, 2 to 3 minutes per side. Pour in gravy and bring to a simmer; reduce heat to medium and continue to cook until gravy is piping hot, and the meat is just cooked through and springs back lightly when touched, about 5 minutes.

⅓ cup dry bread crumbs
1 egg
1 (1 ounce) package dry onion soup mix
1 tablespoon vegetable oil
1 (10.75 ounce) can condensed golden mushroom soup
1 (10.75 ounce) can water

Steps:

  • Mix ground beef, bread crumbs, egg, and onion soup mix together in a bowl; shape into 6 oblong patties.
  • Heat oil in a large skillet over medium-high heat. Cook patties until browned, about 5 minutes per side.

1 1/2-2 lbs ground beef
1 (10 1/2 ounce) can cream of mushroom soup (use 2 cans if you are using 2 lbs beef)
1 (1 1/4 ounce) envelope onion soup mix
1 1/2 cups bread, crumbs
1/4 teaspoon minced garlic
pepper
1/3 cup water

Steps:

  • In a medium bowel combine mushroom soup,onion soup,garlic and pepper set aside.
  • In a large bowel mix together ground beef and 1/2 of your bread crumbs add 1/3 of soup mixture if it is to soft add the rest of your bread crumbs.
  • Place in a baking dish and shape in to a loaf size.Place in a 350 degree oven and cook of 30mins. After 30mins remove fat from pan and top with the reaming soup mixture cook for 10 more minutes.
