EASY ITALIAN SALAMI PASTA SALAD

Easy Italian Salami Pasta Salad image

This is a recipe that is easy to make from ingredients that are often in the fridge/ storecupboard. If it is served straight after the minimum 30 minute chill time, you may find that there is a lot of dressing in the salad- this is so that it doesn't dry out if it is stored in the fridge for a few days. Serves 4 as a side dish but this would also make a good take-to work lunch or potluck dish.

Categories     One Dish Meal

Time 30m

Yield 1 serving(s)

Number Of Ingredients 11

1 lb whole wheat spiral pasta
1 pint cherry tomatoes, halved
1 cup bite-size fresh mozzarella cheese balls, drained
1/4 lb salami, sliced about as wide as the pasta you are using
1/2 red onion, thinly sliced
1/2 cup fresh basil leaf, julienned
1/4 cup balsamic vinegar
2 tablespoons extra virgin olive oil
2 teaspoons Dijon mustard
1/2 teaspoon salt
1/2 teaspoon crushed red pepper flakes

Steps:

  • Boil the pasta in salted water for 8 to 10 minutes, or until al dente. Meanwhile, whisk together the balsamic vinegar, oil, mustard, salt and pepper flakes in the bottom of a large bowl. Add the tomatoes, mozzarella, salami, onion and basil on top of the dressing.
  • When the pasta is cooked, drain it and add it to the large bowl. Toss to combine. Serve warm, at room temperature or cool.

Tips:

  • Choose the right pasta. Short, sturdy pastas like penne, rotini, or fusilli are ideal for pasta salad because they can hold up well to the dressing and other ingredients.
  • Cook the pasta al dente. This means cooking it until it is just tender but still has a slight bite to it. Overcooked pasta will become mushy in the salad.
  • Use a flavorful dressing. A good dressing will help to bring all of the flavors of the salad together. Some popular choices for pasta salad dressing include vinaigrette, pesto, or creamy Italian dressing.
  • Add a variety of toppings. Salami, cheese, vegetables, and nuts are all popular toppings for pasta salad. Feel free to get creative and use whatever ingredients you like.
  • Chill the salad before serving. This will help to allow the flavors to meld and will make the salad more refreshing.

Conclusion:

Pasta salad is a delicious and versatile dish that can be enjoyed for lunch, dinner, or as a side dish. It is easy to make and can be tailored to your own personal preferences. With so many different variations to choose from, there is sure to be a pasta salad recipe that everyone will enjoy.
