ORIENTAL CHICKEN SALAD WITH CRUNCHY RAMEN NOODLES

Oriental Chicken Salad with Crunchy Ramen Noodles image

This is a salad that even non-cabbage eaters love. It is nice and crunchy with great flavor. I once took it to a potluck in my apartment complex and then had to put the recipe up on the bulletin board because everyone wanted the recipe!

Provided by -Tulip-

Categories     Chicken

Time 25m

Yield 6 serving(s)

Number Of Ingredients 12

2 -3 cups chopped cooked chicken breasts (depending on the amount of chicken you like)
1 head cabbage, shredded or chopped
1 bunch green onion, finely chopped (or to taste)
2 (2 1/2 ounce) packages slivered almonds
3 tablespoons sunflower seeds
2 packages Top Ramen noodles or 2 packages other ramen-type soup
3 tablespoons oil
3/4 cup vegetable oil or 3/4 cup canola oil
4 1/2 tablespoons seasoned rice vinegar
4 1/2 tablespoons sugar
2 teaspoons salt
1 teaspoon pepper

Steps:

  • Prepare dressing and set aside.
  • Smash noodles of Top Ramen (discard seasoning packets) and brown over medium heat in 3 tbs oil.
  • Once noodles have begun to slightly brown, add slivered almonds.
  • If you start to brown the Ramen and almonds at the same time, the almonds will burn before the Ramen browns.
  • Once the ramen noodles have turned a dark golden brown, remove from heat and set aside.
  • Combine cabbage, green onions, chicken and sunflower seeds in a large bowl.
  • Add the ramen/almond mixture and stir well.
  • Add dressing and stir to coat.
  • I generally prepare the dressing right before serving.
  • If it sits in the refrigerator too long, it gets very thick and won't remix well.
  • Also, this amount of dressing is just the right amount to give the salad a good coating.
  • If you are one of those who likes more dressing, I would recommend making 1/2 batch of extra dressing.
  • If you plan on eating this left over, keep in mind that the noodles will not stay crunchy.

CABBAGE RAMEN SALAD

Cabbage Ramen Salad image

So refreshing and colorful! Great as a side dish or a salad on its own. A 'slap-chop' works great if you have one. When I bring this to a party, I keep the oils, veggies, seeds, ramen, and sugar in separate bags until it's time to mix and serve. It tastes better to me when I don't mix the sugar with the oil right away.

NAPA SALAD (CHINESE CABBAGE) -- NO RAMEN NOODLES

Napa Salad (Chinese Cabbage) -- No Ramen Noodles image

Napa was on sale this week so I ended up with more than I could readily include in a stir-fry. I decided to search here to see if it could be used in a cole-slaw or salad but all I came with was a dozen variations of the same recipe that called for ramen noodle. I've had that at pot luck dinners and can't stand it. So here is what I came up with. DS#1 added the pecans -- he's got good taste for a 15yo, hasn't he?

Provided by 3KillerBs

Categories     Apple

Time 15m

Yield 10-12 serving(s)

Number Of Ingredients 12

1/2 head napa cabbage
2 stalks bok choy
1 stalk celery, thinly sliced
2 apples, diced (I recommend a crisp, sweet-tart variety such as Fuji or Gala)
1/2 cup pecans, coarsely broken
1/2 cup canola oil or 1/2 cup other light-flavored oil
1/4 cup balsamic vinegar
1 pinch celery seed
1/4 teaspoon fresh ginger, very finely minced
1/2 teaspoon prepared brown mustard
1/2 teaspoon salt (to taste)
2 (1 g) packets Splenda sugar substitute

Steps:

  • Wash all produce as necessary.
  • Divide your half-head of napa lengthwise into 3 or 4 sections and knife-shred crosswise to yield strips about 1.5 inches long by 1/4 inch wide.
  • Divide your bok choy stalks lengthwise into 1in sections if necessary and slice thinly. Knife shred the green leaves to match the napa.
  • Mix dressing ingredients and let rest for 5 minutes to blend the flavors.
  • Toss together all salad ingredients with the dressing.
  • Garnish with pecan halves and thin rings of apple if desired.
  • Note -- Other artificial sweeteners, honey, sugar, etc. may be substituted for the Splenda if you prefer.
  • Note -- Can add chunks of cooked ham or other cooked meat to make into a main-dish salad.

BOK CHOY RAMEN NOODLE SALAD

Bok Choy Ramen Noodle Salad image

Great side dish for a BBQ or lunch buffet. This was my Mom's neighbor's recipe and I got the same recipe from my friend and neighbor (small world). The ramen noodles add and nice crunch and this is very simple to prepare. You can half the ingredients for a smaller salad and you can also use romaine lettuce instead of bok choy if you like. My friend, Alisa, adds kidney beans to the salad.

Tips:

  • Choose the right noodles: Ramen noodles are typically made from wheat flour, but you can also find them made from other grains like buckwheat or rice. For this recipe, we recommend using a medium-thick noodle, such as udon or soba noodles.
  • Make your own dressing: The dressing for this salad is made with a simple combination of rice vinegar, soy sauce, sesame oil, and honey. You can adjust the proportions of each ingredient to taste. If you don't have any rice vinegar on hand, you can substitute white vinegar or apple cider vinegar.
  • Use fresh vegetables: The vegetables in this salad should be fresh and crisp. If you can, use organic vegetables to avoid pesticides and herbicides.
  • Don't overcook the noodles: Ramen noodles are best when they are cooked al dente, so be careful not to overcook them. Cook the noodles according to the package directions, but keep an eye on them so that they don't get too soft.
  • Serve the salad immediately: This salad is best served immediately after it is made. The noodles will start to soften and the vegetables will lose their crunch if you let it sit for too long.

Conclusion:

This salad ramen is a delicious and refreshing meal that is perfect for a hot summer day. It is also a great way to use up leftover ramen noodles. With a few simple ingredients and a little bit of effort, you can make a delicious and healthy meal that the whole family will enjoy.
