HEARTS OF ROMAINE SALAD WITH APPLES, CHEESE AND HAZELNUTS

Hearts of Romaine Salad With Apples, Cheese and Hazelnuts image

Make and share this Hearts of Romaine Salad With Apples, Cheese and Hazelnuts recipe from Food.com.

Provided by COOKGIRl

Categories     Fruit

Time 15m

Yield 4-6 serving(s)

Number Of Ingredients 11

5 -6 cups of hearts romaine leaves (the light green, crisp inner portion of a head of Romaine lettuce)
2 -3 flavorful apples, peeled and cored, then sliced as described below (such as Braeburn, Fuji, or Honeycrisp)
scant 1 cup of crumbled blue cheese
1 cup coarsely chopped toasted hazelnuts
1/2 cup red wine vinegar or 1/2 cup white wine vinegar
2 teaspoons balsamic vinegar
1 teaspoon sugar
1 teaspoon sweet honey mustard (I use Inglehoffer brand made here in Oregon)
1/4 teaspoon salt (reduced from 1/2 teaspoon)
1/2 teaspoon pure vanilla extract
2/3 cup grapeseed oil (in place of canola)

Steps:

  • Vinaigrette: In a container, whisk together the vinegars, sugar, sweet mustard, salt and vanilla. Whisk in the oil. Makes a generous 1 cup of vinaigrette.
  • Salad: Arrange the romaine on individual salad plates.
  • To prepare the peeled and cored apples, cut each half into 1/4-inch thick slices, then cut each slice into thirds.
  • Place the apples in a small bowl and toss with enough of the vinaigrette to coat the pieces. You can prepare the apple mixture up to an hour ahead. Important: If you coat the apples with the dressing any longer than that, they will absorb too much of the vinaigrette, which overwhelms the apple flavor.
  • Divide the apple mixture among the salads. Top each serving with a portion of the cheese and then a portion of the hazelnuts.
  • Drizzle an extra bit of the vinaigrette over the greens and around the edges of the salad. Serve.
  • Alternatively: Instead of hearts of Romaine lettuce, consider a mixture of baby spinach, hearts of Romaine and/or other mixed young greens. You could also substitute feta or white cheddar, aged gouda, etc. for the blue cheese.
  • Another serving option would be to assemble the entire salad on a large platter instead of individual salad plates.

Apple, Endive, and Stilton Salad image

Categories     Salad     Vegetarian     Quick & Easy     Blue Cheese     Apple     Walnut     Fall     Tarragon     Endive     Gourmet

Yield Serves 4 to 6

Number Of Ingredients 17

For vinaigrette
2 tablespoons white-wine vinegar
1 tablespoon red-wine vinegar
1/2 teaspoon Dijon mustard
1/4 teaspoon sugar
2 tablespoons extra-virgin olive oil
1 small shallot, minced
1/8 teaspoon salt
freshly ground black pepper to taste
2 tablespoons unsalted butter
1 cup walnuts, chopped coarse
1/2 teaspoon sugar
2 large Belgian endives
2 Granny Smith apples
1/2 cup Stilton cheese, crumbled
2 tablespoons chopped fresh tarragon leaves
freshly ground white pepper to taste

Steps:

  • Make vinaigrette:
  • In a small bowl whisk together vinegars, mustard, and sugar. Add oil in a stream, whisking, and whisk vinaigrette until emulsified. Stir in shallot, salt and black pepper.
  • In a small saucepan melt butter over moderate heat and add walnuts and sugar. Cook walnuts, stirring, until golden, about 2 minutes, and transfer to a bowl.
  • Cut endives lengthwise into julienne strips. Halve and core apples and cut into julienne strips.
  • In a large bowl combine endives, apples, walnuts, Stilton, tarragon, and vinaigrette, tossing gently, and season with salt and white pepper.

Tips:

  • To make the perfect vinaigrette, use a ratio of 3 parts oil to 1 part vinegar. For this recipe, a light-tasting oil like grapeseed or canola oil is a good choice. As for the vinegar, you can use apple cider vinegar, white wine vinegar, or champagne vinegar.
  • When choosing apples for this salad, look for firm, crisp varieties like Granny Smith or Honeycrisp. You want apples that will hold their shape when tossed with the other ingredients.
  • To toast the walnuts, spread them out on a baking sheet and bake at 350 degrees Fahrenheit for 5-7 minutes, or until they are fragrant and slightly browned.
  • If you don't have any Stilton cheese on hand, you can substitute another blue cheese, such as Gorgonzola or Roquefort.
  • This salad is best served immediately after it is made. However, you can make the vinaigrette and toast the walnuts ahead of time.

Conclusion:

This salad of romaine, apples, walnuts, and Stilton cheese is a delicious and easy-to-make side dish or light lunch. The combination of sweet apples, crunchy walnuts, and tangy Stilton cheese is sure to please everyone at your table. So next time you're looking for a healthy and flavorful salad, give this recipe a try.
