- Combine cornstarch and water in a small cup and stir to blend thoroughly. Put milk in a heavy soup pan or Dutch oven over medium heat.

SACHLAB
This is a Middle Eastern drink that I discovered on my trip to Israel. After a quick search on the internet, I discovered that everyone said that Sachlab could only be made with a store-bought mix. I refused to believe that....so I made my own recipe. And y'know what?? It's GREAT! I'd say it's about 93% authentic...I'll have to keep tweaking it to get it 100% right. DO NOT omit the orange flower water...this is really an essential flavor. You can purchase orange flower water (Mazaar) from any middle eastern grocery store. Enjoy!

Steps:
- Heat the milk and vanilla extract in a pot on the stove. As milk heats, whisk in the corn starch and make sure there are no clumps.
- Add in sugar and orange flower water (mazaar).
- As the mixture gets hot, it will thicken immensely. This drink is meant to be very thick. Use the water to thin it out a bit, if necessary, but it should really have the consistency of light yoghurt.
- Once the misture is thick and hot, add the package of splenda or sweetner if necessary, stir and then pour it into one large or two small mugs.
- Divide the almonds, pishtachios, coconut, raisins and cinammon between the two mugs. Do not stir.
- You are supposed to stir the drink yourself once it is served.
- Enjoy!
EGYPTIAN SAHLAB OR SAHLEP
The website which I got this from says this is a popular winter beverage in Egypt. Usually it's made from the starchy bulbs of a plant called orchis mascula. For those who don't get original sahlep powder, this is a recipe with cornstarch as a substitute. Feel free to use the original thing, though :)

- Bring remaining milk to a boil, stir in the dissolved starch, whisking with a whisk so that the liquid gets smooth.

- Add rose water or orange blossom water.

This is a quick and easy to prepare dessert. I usually always have the ingredients on hand. There are boxed versions of this pudding, but it is traditionally prepared at home. You can add more or less cornstarch if preferred. This dessert is so versatile that it can be served warm or chilled. I love to eat it both ways, when it chills it firms up.

Sahlep is a delicious creamy Turkish drink. I found sahlep powder in a Turkish shop, that I bough without knowing what it was. In the internet (http://morselsandmusings.blogspot.com/2006/08/sahlep-salep-sahlab.html) I found the explanations and this delicious ancient recipe. Sahlep, a Turkish winter drink, is made from the dried powdered roots of a mountain orchid. The powder is then heated with milk, sugar and cinnamon to make a thick dairy beverage. In modern day Turkey, sahlep is used to cure sore throats and coughs and is only served during the cold months.
