THE IRISH POTATOES
My sister gave me this recipe years ago and it has become a staple of our holiday or 'company is coming' type of dinner. It's easy to assemble and can be prepared ahead of time. It pairs well with beef, ham, or chicken. Leftovers, if there are any, reheat well. Everyone always loves 'The Irish Potatoes.' Yes, I know 'The Irish Potatoes' are fattening, but without the butter, whipping cream, and half and half it is just not as good. Substituting margarine or frozen hash browns would be a travesty.

IRISH POTATO AND CHIVE CASSEROLE
A new twist for mashed potatoes. I usually add a dash of onion and garlic powder. I also do a taste test prior to baking to see if they need more salt. Potatoes are combined with cream cheese, sour cream, chives, butter, and paprika...Delicious!!

Tips for Making Ryan's Irish Potato Casserole:
- Use good quality potatoes. Yukon Gold or Russet potatoes are good choices as they hold their shape well and have a creamy texture.
- Slice the potatoes thinly. This will help them cook evenly.
- Don't overcrowd the pan. Make sure there is enough space between the potatoes so they can cook properly.
- Use a heavy-bottomed pan. This will help to prevent the potatoes from sticking.
- Cook the potatoes over medium heat. This will help them to cook evenly and prevent them from burning.
- Stir the potatoes occasionally. This will help to prevent them from sticking and ensure that they cook evenly.
- Add the cheese and milk mixture when the potatoes are almost done cooking. This will help to melt the cheese and create a creamy sauce.
- Top with green onions or parsley before serving. This will add a pop of color and flavor.
Conclusion:
Ryan's Irish Potato Casserole is a hearty, comforting dish that is perfect for a cold winter day. It is easy to make and can be tailored to your own taste preferences.
