This is absolutely divine! Ruth has done it again! Note, the first time I made this I noticed there was a bit of extra liquid left over, next time I will adjust the amount of butter and/or add a bit more potato.

Tips:

  • Use fresh sweet potatoes: Fresh sweet potatoes will give your casserole the best flavor and texture. If you can, buy them organic.
  • Cook the sweet potatoes until they are very tender: You want the sweet potatoes to be so tender that they can be easily mashed. This will help the casserole to have a smooth and creamy texture.
  • Use a good quality butter: The butter is an important ingredient in this casserole. It adds richness and flavor. Use a good quality butter that you would use for baking.
  • Don't overmix the casserole: Once you have added all of the ingredients, stir the casserole just until they are combined. Overmixing will make the casserole tough.
