2 packages (1/4 ounce each) active dry yeast
1-1/2 cups warm water (110° to 115°), divided
1 teaspoon sugar
3 large eggs, room temperature, beaten
1 cup applesauce
1/2 cup honey
1/2 cup canola oil
2 teaspoons salt
8 to 9 cups all-purpose flour
1-1/2 cups diced peeled apples
1-1/2 cups raisins
2 tablespoons lemon juice
2 tablespoons cornmeal
GLAZE:
1 large egg, beaten

Steps:

  • In a small bowl, combine yeast, 1/2 cup water and sugar; set aside. In a large bowl, combine eggs, applesauce, honey, oil, salt and remaining water; mix well. Stir in yeast mixture. 3 cups chopped unpared apples
3 cups flour
2 1/2 cups sugar
1 1/4 cups vegetable oil
4 eggs, beaten
1 tbsp. plus 1 tsp. vanilla
2 tsp. ground cinnamon
1 1/2 tsp. salt
1 1/2 tp. baking soda
1 tsp. ground cloves
1/2 tsp. baking powder
2/3 cup raisins
1/2 cup chopped nuts

Steps:

  • 1. Heat oven to 325. Generously grease bottoms only of 2 baking pans, 9 x 5 inches. Beat all ingredients on low speed, scraping bowl constantly, 1 minute. Beat on medium speed 1 minutes. Pour into pans.
  • 2. Bake til wooden pick inserted in center comes out clean,a bout 1 hour. Cool 10 minutes. Remove from pans. Cool completely before slicing. Store in refrigerator. Makes 2 loaves. If using self rising flour, omit salt, baking soda, and baking powder

I have added nuts, vanilla, cinnamon/ginger, changed the apples to dried cherries( non sugared). I have used applebutter in place of applesauce and trimmed down the honey. Well, you get the idea. 8" cake pans are the perfect thing for baking this bread. It will make 3 loaves.

1/2 cup rye flour

3-1/2 to 4 cups bread flour
1-1/2 cups unsweetened apple juice
3/4 cup plain yogurt
1/4 cup butter, cubed
1 large egg, room temperature
2 cups dried apples, chopped
1 cup raisins
1 cup chopped walnuts
1 large egg, lightly beaten, optional

  • In a large bowl, mix whole wheat flour, rye flour, yeast, salt and 2 cups bread flour. In a small saucepan, heat apple juice, yogurt and butter to 120°-130°. Edited: I have also tried out the bread by using 1/2 whole wheat pastry flour and 1/2 regular flour, a tbl of wheat germ and less sugar to make it a tiny bit "healthier". 1 package dry yeast
1 tablespoon sugar
1 teaspoon salt
1 tablespoon cinnamon

1/2 cup water
3/4 cup raisins

  • Combine 1 1/2 c.
  • flour, yeast, sugar, salt and cinnamon; mix well.
  • Heat apple juice, oil and water to 120-130 degrees F; add to flour mixture.
  • Blend at low speed until moistened, then beat 3 minutes at medium speed.
  • Gradually stir in remaining flour and raisins to make a firm dough.
  • Knead until smooth and elastic, about 5 minutes.
  • Place in a greased bowl, turning to grease top.
  • Cover and let rise until light and doubled, about 1 hour; punch down dough.
  • On lightly floured surface, roll or pat to a 14x7 inch rectangle.
  • Starting with the shorter side, roll up tightly, pressing dough into roll with each turn.
  • Pinch edges and ends to seal.
