The crowning glory is the velvety mayonnaise dressing, which adds a rich and tangy touch to each morsel.

1 tablespoon olive oil
1 large onion, chopped
1 (16 ounce) can salmon, drained
1 cup mayonnaise, or as needed
1 tablespoon chopped fresh parsley, for garnish

Tips:

  • Use high-quality ingredients. Fresh, flavorful salmon and potatoes are essential for a delicious salad. Look for wild-caught salmon and Yukon Gold or red potatoes.
  • Don't overcook the salmon. Salmon is a delicate fish that can easily be overcooked. Cook it just until it is opaque in the center, about 5 minutes per side.
  • Flake the salmon with a fork. This will help to create a light and fluffy texture for the salad.
  • Use a variety of vegetables. This will add color, flavor, and texture to the salad. Some good options include celery, cucumber, red onion, and bell pepper.
  • Make the dressing ahead of time. This will allow the flavors to meld and develop. You can make the dressing up to 3 days in advance.
  • Serve the salad chilled. This will help to keep the salmon and potatoes firm and prevent the dressing from becoming too oily.

Conclusion:

Russian Salmon and Potato Salad is a delicious and easy-to-make salad that is perfect for any occasion. It is a great way to use up leftover salmon, and it is also a healthy and satisfying meal. With its creamy dressing, tender salmon, and hearty potatoes, this salad is sure to be a hit with everyone who tries it.
