A Russian salad...not from Russia. This is a potato salad that is served at every Uruguayan and Argentinian gathering I've been to.

Time 30m

Yield 6 serving(s)

Number Of Ingredients 5

4 large potatoes
14 ounces peas and carrots
1/2 cup mayonnaise
1 tablespoon mustard
salt and pepper

Steps:

  • Peel potatoes and dice into 1/2 inch cubes. Boil until fork tender.
  • Drain potatoes and run over cold water. Return to pot and place in freezer for 5 minutes or until potatoes are cool. This is to ensure that potatoes are stiff and will not mush up.

  • Add potatoes, peas, and carrots to serving bowl. Stir everything together and serve.

ENSALADA RUSSA - RUSSIAN SALAD

Categories     Egg     Potato     Side     Vegetarian

Yield 6

Number Of Ingredients 7

6 White Potatoes
6 Eggs
3 Beets
1/2 - 1 c (to taste) Mayonaise (not the salad dressing type).
1/4 c Finely chopped yellow onions
Finely chopped cilantro
Kolsher salt to taste

Steps:

  • Boil the potatoes, eggs and beets. Make sure the beets are boiled in a separate pot. Cut in cubes as you would for a potato salad and mix. Add the mayonaise, salt and onions. The amount of mayonaise can vary according to personal preference. Mix well. Garnish with the chopped cilantro.

Tips:

  • Choose the right potatoes: Waxy potatoes, such as Yukon Gold or Red Bliss, hold their shape better than starchy potatoes, such as Russet, and are less likely to fall apart when cooked.
  • Cook the potatoes until they are tender but still firm: Overcooked potatoes will become mushy and fall apart when mixed with the other ingredients.
  • Allow the potatoes to cool completely before assembling the salad: This will help prevent the salad from becoming watery.
  • Dice the vegetables into small, even pieces: This will ensure that they cook evenly and that the salad has a uniform texture.
  • Use a light hand when dressing the salad: Too much mayonnaise or sour cream will make the salad heavy and greasy.
  • Season the salad to taste: Add salt, pepper, and other seasonings to taste before serving.
  • Chill the salad for at least 30 minutes before serving: This will allow the flavors to meld and the salad to become more refreshing.

Conclusion:

Russian salad, also known as Ensalada Russa, is a delicious and versatile dish that can be served as an appetizer, side dish, or main course. It is easy to make and can be adapted to suit your own taste preferences. Follow these tips and enjoy this classic salad in no time!
