Similar to Colcannon, this is a Scottish dish. It can be made well in advance and refrigerated. Bring to room temperature before baking. It's very easy and inexpensive to make. Even my husband, who hates cabbage, loves it in this dish.

Tips:

  • Potatoes: Use waxy potatoes like Maris Piper, Yukon Gold, or Red Potatoes. They hold their shape better during cooking and maintain a firm texture.
  • Cabbage: Choose fresh, crisp cabbage for the best flavor and texture. Savoy cabbage or green cabbage works well.
  • Onion: Use a yellow or white onion for a milder flavor. Red onion can also be used for a more pungent flavor.
  • Cheese: A strong, mature cheddar cheese is the traditional choice for rumbledethumps. However, you can use any cheese you like. Some popular alternatives include Red Leicester, Gruyère, or Monterey Jack.
  • Seasoning: Season the dish generously with salt and pepper. You can also add other herbs and spices, such as thyme, rosemary, or paprika.
  • Cooking Method: Rumbledethumps can be cooked in a skillet or in the oven. If cooking in a skillet, make sure to use a lid to trap the steam and help the cabbage soften.
