Time 4h20m

Number Of Ingredients 6

2 slabs Baby Back Ribs (silver skin removed)
1 teaspoon Dry Mustard
1 teaspoon Smoked Paprika
1 teaspoon Salt
1 teaspoon freshly cracked Black Pepper
Rudy's Country Store and Bar-B-Q Rudy's Bar-B-Q Sauce, to serve (See Box Below for a Link to our Copycat Recipe)

Steps:

  • Preheat oven to 250°F.
  • In a small bowl, add dry mustard, smoked paprika, salt and pepper. Mix well.
  • Rub mixture onto both sides of ribs.
  • Place ribs in foil and wrap tightly.
  • Place foil-wrapped ribs on a cookie sheet. Place in preheated oven and cook for 3 hours. Remove from oven and unwrap. Check for doneness. The USDA says ribs are safe to eat when they reach an internal temperature of 145°F. But they may still be tough. Check for tenderness. If they are still tough, rewrap the foil and place them back in the oven for more cooking. Check every 30 minutes. You can take the ribs as high as 190 to 200°F internal temperature if you like and the meat should still be juicy and tender.
  • Remove from oven, unwrap and place on a serving plate.
  • Serve hot with Rudy's Country Store and Bar-B-Q Rudy's Bar-B-Q Sauce. (See Box Below for a Link to our Copycat Recipe)

Time 40m

Yield 1 rack ribs, 4 serving(s)

Number Of Ingredients 12

2 tablespoons paprika
1 tablespoon black pepper
1 tablespoon dark brown sugar
1 1/2 teaspoons salt
1 1/2 teaspoons celery salt
1 teaspoon garlic powder
1 teaspoon dry mustard
1 teaspoon cumin
1/4 teaspoon cayenne pepper
1 pinch onion powder
1 rack baby back ribs
barbecue sauce (Stubb's Mopin Sauce BBQ Baste)

Steps:

  • Mix all dry ingredients in a bowl.
  • Rub 2/3 of the mixture onto front and back of ribs.
  • Lightly brush on barbecue sauce.
  • Grill.
  • Sprinkle remaining Rub onto top of ribs after grilling.

Tips:

  • Select the best ribs: Choose high-quality pork ribs with good marbling for a flavorful and tender result.
  • Properly trim the ribs: Remove excess fat and the thin membrane on the back of the ribs to ensure even cooking and better flavor penetration.
  • Season generously: Use a combination of spices and herbs to create a flavorful rub. Rudy's unique rub recipe includes paprika, garlic powder, onion powder, chili powder, cumin, salt, and pepper.
  • Smoke low and slow: Maintain a low temperature around 225°F (107°C) for several hours to allow the ribs to cook thoroughly and develop a smoky flavor.
  • Keep the ribs moist: Spray the ribs periodically with a mixture of apple juice, water, and apple cider vinegar to prevent them from drying out during the long cooking process.
  • Baste the ribs with sauce: Apply a thin layer of Rudy's homemade barbecue sauce towards the end of cooking to add a sweet and tangy glaze.
  • Let the ribs rest: Allow the ribs to rest for a few minutes before serving to redistribute the juices and enhance their flavor.
