ROTEL CUPS

Make sure you use the CUPS, not the dough. It makes all the difference. Also, don't worry about the mayo if you don't like it. You cannot taste it. I made two huge trays of these and they were scarfed down pretty fast.

Number Of Ingredients 5

3 pkg mini fillo (phyllo) shells (frozen)
1 can(s) rotel, mostly drained (we use mild)
1 pkg real bacon bits
1 1/2 c colby jack cheese (shredded)
1 c mayonnaise

Steps:

  • 1. In a large bowl, mix together almost fully drained Rotel, bacon bits, and mayo until blended.
  • 2. Add in the cheese and stir until mixed. Fill the shells, making sure not to put too much into each one or there won't be enough.
  • 3. Place on cookie sheet and bake in oven for 15-20 minutes at 350 until bubbly and golden. Remove to rack or plate. Serve warm.

Tips:

  • Use fresh, ripe Roma tomatoes for the best flavor.
  • If you don't have Rotel, you can use a can of diced tomatoes and a can of green chilies.
  • Add a little bit of taco seasoning or chili powder to the Rotel mixture for a more flavorful dip.
  • If you like a spicy dip, add a few drops of hot sauce or a diced jalapeño pepper.
  • For a creamier dip, add a dollop of sour cream or Greek yogurt.
  • Top the dip with shredded cheese, chopped cilantro, or diced avocado before serving.
  • Serve the dip with tortilla chips, crackers, or vegetables.

Conclusion:

Rotel cups are a quick and easy appetizer or snack that can be made with just a few simple ingredients. They are perfect for parties, potlucks, or game day gatherings. With their creamy, cheesy, and spicy flavor, Rotel cups are sure to be a hit with everyone.
