Steps:

  • Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain, and let cool. Once cool, peel and grate potatoes.
  • Melt 3 tablespoons of butter in large nonstick skillet, add a layer of potatoes and a layer of cheese, sprinkle with salt and pepper. Repeat layers. Dot each layer with remaining butter. Sprinkle 2 tablespoons hot water over the top layer, cover and saute at low to medium heat until bottom layer browns. Turn with spatula and brown again.

3 1/2 pounds (about 10) Yukon gold potatoes, peeled and placed in cold water
Coarse salt and freshly ground pepper
1/4 cup Clarified Butter for Potatoes

Steps:

  • Preheat oven to 400 degrees. Shred potatoes on the large holes of a box grater. Wrap potatoes in a clean kitchen towel; squeeze out liquid. Place in a medium bowl; toss with salt and pepper.
  • Heat half the butter in a 9- or 10-inch ovenproof nonstick saute pan over medium-low heat. Spread potatoes in pan evenly; press down with a spatula to flatten cake. Cook until bottom is golden and turning crisp, about 18 minutes.
  • Remove pan from heat. Invert cake onto a plate; slide back into pan. Return to heat, and spoon remaining butter around edges of pan. Cook until other side begins to get crisp, about 10 minutes, shaking pan several times to loosen.
  • Transfer to oven until cooked through and tender in the center, about 12 minutes. Cut into wedges, and serve.

  • Preheat the oven to 400°F/200°C/gas 6.
  • Cut the potatoes into thin matchsticks using a julienne attachment on a mandoline or food processor. Or, cut into thin rounds and use a sharp knife to cut the rounds into strips {more time consuming, but it works!}
  • Heat the butter and olive oil in an 8-in/20-cm ovenproof cast-iron or non-stick frying pan, over medium heat. Add the rosemary to the potatoes, and season with salt and pepper. Increase the heat to medium-high and cook, stirring occasionally, until the potatoes are soft and a few pieces are brown. At this point, the potatoes should have settled into a round flat pancake.
  • Transfer the potatoes in the skillet to the hot oven to bake until the top and bottom are golden and crispy and the center is soft but cooked through, about 30 minutes. Remove from the oven and slide out of the pan onto paper towels/absorbent papers. Slide onto a baking sheet/tray and continue until the top and bottom are cooked to a deep golden brown, about 10 minutes more. Serve in wedges or whole on a plate in the middle of the table for breaking and nibbling.

3 pounds large Yukon gold potatoes (about 7)
1 tablespoon fresh thyme, chopped

Steps:

  • Cover potatoes generously with well-salted cold water in a large pot and bring to a boil. Reduce heat and simmer potatoes, partially covered, until they are just barely tender, 20 to 25 minutes.
  • Transfer potatoes to a colander using a slotted spoon, rinse under cold water to stop the cooking, and dry.
  • Chill potatoes on a plate, uncovered, at least 8 hours.
  • Peel potatoes and coarsely grate into a large bowl. Add thyme, 1 1/2 teaspoons salt, and 3/4 teaspoon pepper, then drizzle with 2 tablespoons butter and toss mixture well.
  • Heat oven to 375°F with rack in middle.
  • Heat oil and 1 tablespoon butter in skillet over medium-high heat until foam subsides, then add potato mixture and tamp it down firmly in skillet with a rubber spatula, smoothing the top.
  • Reduce heat to medium and cook potato cake, covered with a lid, until edges begin to turn golden, about 5 minutes.
  • Remove lid, then bake potato cake, uncovered, 10 minutes.
  • Brush top of potato cake with remaining 2 tablespoons butter.
  • Turn on broiler and broil potato cake, 4 to 5 inches from heat, until golden brown, 3 to 7 minutes.
  • Remove skillet from oven carefully (wear oven mitts!). Run the rubber spatula around the edge of the cake to loosen it from the skillet.

1 teaspoon fresh thyme leaves, chopped
1/2 chives, sliced (small bunch)
2 tablespoons fresh parsley leaves, chopped
1/2 teaspoon tarragon leaves, chopped
2 tablespoons unsalted butter
2 leek whites, cleaned and thinly sliced
Salt
Freshly ground black pepper
4 Idaho potatoes, peeled
1/4 cup vegetable oil
4 ounces raclette, thinly sliced (substitute with Gruyere or Fontina)

Steps:

  • Chop the herbs on a dry, clean cutting board, mix together in a small bowl and set aside. Heat a large, straight-sided skillet on high. Add the butter and swirl. Turn heat to medium and add the leeks, season with salt and pepper, and cook the leeks are until very soft but not browned, about 10 minutes. Add the herbs and season with salt and pepper. Set aside.
  • Grate 2 of the potatoes and season with salt and pepper. Immediately place the potatoes in a clean towel and squeeze, twisting to extract as much liquid as possible. Repeat this step after the first layer has added to the pan.
  • Heat a medium, nonstick skillet on high. Add the oil and when hot, add the potatoes. Press with a spatula to form a cake covering the bottom of the pan. Add the Raclette in one layer, allow it to melt, then add the leek mixture. Cover with the remaining grated potatoes and press with a spatula to form an enclosed potato cake stuffed with the leeks and cheese. When the bottom is browned and crispy, about 12 minutes. Flip, add more oil as necessary, and cook other side until golden and crisp, 10 minutes.
  • Remove to a cutting board and cut into wedges to serve.

  • Grate potatoes; toss with onion, parsley and garlic.

In Switzerland, rosti (pronounced roosh-ti) is considered a national dish, though it is most popular in the German-speaking regions of the country. Made from grated potatoes, it resembles American hash browns, fried in a skillet like a thick potato pancake and cut into wedges. Rosti is often enhanced with ham, bacon or cheese or served with sausages. This posh version is garnished with smoked salmon, sour cream and a poached egg, perfect for a weekend breakfast. For best results, boil the potatoes one day (or at least several hours) in advance and chill. Cook them until just done and still firm - check with a skewer or paring knife - or they will be impossible to grate.

2 pounds yellow-fleshed potatoes, parboiled, peeled and chilled
Salt and pepper
2 tablespoons clarified butter, duck fat or vegetable oil, plus more as needed

6 slices smoked salmon (about 8 ounces)
1 cup crème fraîche or sour cream
Snipped chives, for garnish

Steps:

  • Using the large holes of a box grater, shred the parboiled potatoes onto a baking sheet. (Try not to mash them.) Season with salt and pepper.
  • Place a 9-inch cast-iron or nonstick skillet over medium-high heat and add 2 tablespoons butter. When butter is hot, use a spatula to transfer all the grated potatoes to the skillet. Let the potatoes begin to brown, then turn heat to medium. Press down lightly with spatula to form a thick cake. Let cake fry gently until bottom is golden brown and crisp, about 10 to 15 minutes.   • Fry gently for another 10 to 15 minutes, until crisp on the second side. Remove from heat and slide the cake (or invert) onto a plate or cutting board. Sprinkle lightly with salt and pepper. Keep warm.
  • Poach the eggs: Fill a wide skillet halfway with water. Add a good pinch of salt and bring to a gentle simmer. Break each egg into a teacup, then carefully slip it beneath the water's surface. Cook for 2 minutes, until eggs are barely set, then turn off heat. (Leave eggs in hot water to finish cooking as you prepare the plates.)
  • Cut the rösti into wedges and divide among plates. Drape a slice of smoked salmon next to each wedge. Remove eggs one by one with a slotted spoon (holding a towel beneath spoon to catch excess water), and place on the other side of each wedge.
  • Top each wedge with a dollop of crème fraîche. Garnish with a sprinkle of chives and a sprig of watercress.

1-2 Tbsp olive oil
1 pat unsalted butter
salt & pepper, to taste

Steps:

  • Helpful equipment: Potato ricer (easy way to remove excess moisture) or cheesecloth or tea towel Box grater or food processor with a shredding blade Wash potaotes (I don't peel them, unless you are using Russets) and grate Squeeze out as much moisture as you can (to avoid gummy potatoes). Add grated onion (if using) Add olive oil, pepper and go easy on adding salt (you can always add more). Toss to combine. Heat a skillet, with about 2-3 tsp olive oil on medium heat until it is rippling and just starting to smoke. Add the pat of unsalted butter (for flavor). Evenly distribute the potatoes and allow to cook until golden brown. Press down with a large spatula (I use a bacon press to weight it down). Flip over and continue to cook until golden brown. Total cooking time is approximately 20 minutes. If desired, crack 4 eggs on top and cover. Allow to cook for 3-4 minutes longer and serve. Otherwise, you can cook eggs separately and serve.

1 large egg
1 cup ham, diced (about 5 ounces)
1 cup low-fat cheese, shredded
1 shallot, minced
1/4 teaspoon dried rosemary
1/2 teaspoon ground pepper
1/4 teaspoon salt
4 cups frozen hash brown potatoes
2 teaspoons extra virgin olive oil, divided

Steps:

  • Beat egg in a large bowl. Stir in ham, 1/2 cup cheese, shallot, rosemary, pepper, and salt. Add frozen potatoes and stir to combine.
  • Heat 1 teaspoon oil in a large non-stick skillet over medium heat.
  • When oil is hot (test with a drop of water; oil should sputter, but should not be smoking), pat potato mixture into an even round in the pan. Cover and cook until browned and crispy on the bottom, 5 to 7 minutes.
  • Remove pan from heat.

2 tablespoons lard (or use butter or oil)
50 g bacon, diced

  • Peel potatoes, grate or cut into thin strips and mix with the salt.
  • Heat the butter and lard (or oil) in a frying pan. Add the diced bacon and potato and fry gently, stirring gently and frequently. If you want a slimmer version, you can pre-cook the bacon and this way omit the bacon fat.

The object is to make a large potato cake that is light brown and crisp on the outside with soft distinct potato strips on the inside (think big hash brown).

2 (14.5 ounce) cans chicken broth
3 tablespoons olive oil
3 tablespoons butter

  • Place potatoes in large pot with chicken broth and add enough water to cover potatoes completely; bring to a boil and cook until potatoes are tender but still firm, about 15 minutes. Drain potatoes, transfer to a bowl and refrigerate until chilled, 8 hours to overnight.
  • Preheat oven to 400 degrees F (200 degrees C).

1 pound yellow-fleshed potatoes such as Yukon Gold
2 tablespoons unsalted butter
1 tablespoon vegetable oil

Steps:

  • In a large saucepan cover potatoes with salted water by 2 inches and simmer until tender, about 25 to 30 minutes. Drain potatoes in a colander and cool. Chill potatoes, covered, at least 4 hours and up to 2 days.
  • Peel potatoes. Set a four-sided grater in a large bowl and coarsely shred potatoes into bowl. Season potatoes with salt and pepper, tossing mixture with a fork.
  • In a 9- to 9 1/2-inch nonstick skillet heat 1 tablespoon butter and 1/2 tablespoon oil over moderate heat until foam subsides. Add potatoes, spreading them evenly and tamping them down with a rubber spatula to form an even cake. Reduce heat to moderately low and cook rösti until underside is golden brown, 10 to 12 minutes.
  • Slide rösti onto a large plate. Invert another large plate over rösti and invert rösti onto it. (Browned side of rösti should be on top.) In skillet heat remaining tablespoon butter and 1/2 tablespoon oil over moderately low heat until foam subsides. Slide rösti back into skillet, browned side up, and cook until underside is golden brown, 10 to 12 minutes.
  • Slide rösti onto a serving plate and cut into wedges.

Steps:

  • Peel and coarsely grate the potatoes. Combine the potatoes with the melted butter, salt and pepper and mix well. Heat a 10-inch saute pan on medium high heat, lightly grease, and add the potato mixture, form into a cake shape. Cook the potatoes until they are golden brown. Flip the "cake" and cook the other side until it is golden brown. Remove from the pan and garnish with chopped parsley.

1 teaspoon finely chopped fresh rosemary or dill

Steps:

  • Shred the unpeeled potatoes using a food processor or box grater. Squeeze all the water out of the potatoes. Toss the potatoes with half of each the parsley and green onion, the rosemary, pepper and salt until well combined. Divide the mixture into four equal portions.
  • Heat half the butter in a large, nonstick skillet set over high heat. When the butter foams, add the potato mixture and, using a silicone spatula, form into 4 individual disks of equal thickness. Reduce the heat to medium-high and cook for 4 to 5 minutes or until underside is set and a golden crust forms.
  • Add the remaining butter and gently turn rosti; cook for an additional 5 minutes or until the rosti are golden brown and bubbles are actively forming in the centre of each disk. Drain on paper towel.
  • Meanwhile combine sour cream with remaining parsley, green onion and mustard. Serve with warm rosti.

I think this was in an old issue of SFI - Super Food Ideas, I thought it sounded a bit different from your everyday rosti as it uses sweet potato, salad cream & mustard, a great side dish to serve with steak or fish.

3 cups potatoes, peeled & finely grated
2 1/2 cups sweet potatoes, peeled & finely grated
2 tablespoons plain flour
1 tablespoon coarse grain mustard

1/2 cup salad cream

Steps:

  • Squeeze as much moisture as you can from grated potatoes. Place both into a large bowl.

Stuffed Veal Scallops With a Mushroom Sauce and Carrot Rosti image

My veal scallops were huge, in fact I have never bought scallops of veal this big before, I made one per person. I have made this before with small veal scallops and I made three per person, I used about 1-2 teaspoons of stuffing for each slice and made them as little bundles, so either way will work fine. You will see from the photograph just how large it was I was able to cut each veal scallop into four pieces. Maybe where you are in the world this will not seem strange to you, this may be standard size, but where I am I usually get small scallops of veal, not that I am complaining it was delicious and took me half the time because I wasn't rolling up 12 little rolls, just 4 huge ones.

4 large veal scallops or 12 small veal scallops
olive oil
2 shallots, finely chopped
3 garlic cloves, crushed
30 -40 g butter
250 g mushrooms, 1 cup finely chopped mushrooms for the stuffing (save the remaining mushrooms for the sauce.)
2 teaspoons fresh rosemary, finely chopped
1 tablespoon thyme leaves
4 fresh sage leaves, finely chopped
3 slices bacon, rashers chopped
1/2 cup herb stuffing mix (I use paxo sage and onion.)
100 ml hot water
butter (extra)
1/2 teaspoon vegetable stock
130 g veal mince
1 large egg, lightly beaten
2 -3 tablespoons parmesan cheese
8 -16 slices prosciutto (8 if slices are thick, 2 per scallop, 16 if thin, 4 per scallop. If using small veal scallops I do 3)
10 -12 mushrooms, sliced thinly (the remainder of mushrooms from the 250g.)
1 -2 tablespoon olive oil
1/2 cup dry white wine
1/2 cup water
1 teaspoon instant chicken bouillon granules
50 ml thick double cream
50 ml light cream
pepper
3 tablespoons bisto, chicken instant gravy granules (I use bisto brand.)
1/2 cup sour cream (light is fine)
1 1/2 teaspoons cumin
1 tablespoon dill, finely chopped
5 medium carrots, coarsely grated (about 600g in weight)
2 eggs, lightly beaten (you may only need 1, mine were of a small weight.)
1 egg white, lightly beaten
1/3 cup plain flour, 50g

Steps:

  • Add a little olive oil to a pan, add shallots and garlic, cook until onion softens. Add butter and melt, add mushrooms, cook and stir until liquid has evaporated.
  • Meanwhile in a small pan cook chopped bacon, until browned.
  • Add herbs and bacon to mushroom mix and stir to combine, remove from heat.
  • Boil some water, add a knob of butter and veg stock to a measuring jug, pour 100ml of hot water into jug, stir until butter has melted and stock has dissolved. Add this liquid to the stuffing, mix to combine, finally add this to the mushroom mix.
  • Add the veal mince to the pan and stir to combine, add the egg and Parmesan cheese, again stir to combine.
  • Season veal scallops with salt and pepper, spread stuffing over veal, leaving just a small border around the edge. Roll scallop up and wrap prosciutto slices around the veal to secure. If you have any stuffing left over I just cook that separate.
  • Heat a small amount of oil in a pan add rolls to brown both sides. Transfer to a lightly oiled ovenproof dish, drizzle a little oil over veal rolls and bake at 180ºC for 30-40min's or until done. Check regularly towards the end of cooking as you do not want to over cook and toughen it up.
  • Sauce.
  • While pork is cooking make the sauce, add the oil to a pan along with the sliced mushrooms. Cook until mushrooms are browned and soft, add wine and water, simmer a few minutes to reduce slightly.
  • Add chicken stock and stir to dissolve, add thick double cream first and stir until it well combined, add light cream, season with pepper, finally add gravy granules and stir to thicken, serve over veal.
  • Carrot Rosti.
  • Combine sour cream, cumin and dill in a small bowl, refrigerate until needed.
  • Combine carrot, egg, egg white and flour in a large bowl, Cook serving spoon size rosties in an oiled pan until browned on both sides and cooked through. Drain on absorbent paper.
  • Note:I say serving spoon size as you want it bigger than a tablespoon, they should be large in diameter but quite flat, you will get the idea from the picture.
  • Serve with sour cream mixture.
  • To Serve: Either arrange little rolls on a plate and pour sauce over or slice into thin slices if you have used larger scallops like me and again pour sauce over. Place some salad greens on plate top with carrot rosties and dollop with sour cream mix.

6 large potatoes
6 tablespoons butter
8 ounces swiss cheese, grated

2 tablespoons hot water

Steps:

  • Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain, and let cool.
  • Once cool, peel and grate potatoes.
  • Melt 3 tablespoons of butter in large nonstick skillet, add a layer of potatoes and a layer of cheese, sprinkle with salt and pepper.
  • Repeat layers.
  • Dot each layer with remaining butter.
  • Sprinkle 2 tablespoons hot water over the top layer, cover and saute at low to medium heat until bottom layer browns.

2 1/4 lbs potatoes, boiled in their jackets the day before (1kg)
2 -3 tablespoons butter (a must)
1 -2 medium onion

Steps:

  • Peel the cooked potatoes and grate them through a coarse grater.
  • Slice the onions into thin wedges.
  • Melt the butter in a non-stick frying pan and add the onions and sweat them until they look glassy and transparent.
