RESTAURANT-STYLE SALSA

Food Network's Ree Drummond shares her recipe for homemade restaurant-style salsa that the whole family will love!

Provided by Ree Drummond : Food Network

Categories     condiment

Time 1h15m

Yield 12 servings

Number Of Ingredients 10

Two 10-ounce cans diced tomatoes and green chiles, such as Rotel
One 28-ounce can whole tomatoes with juice
1/2 cup fresh cilantro leaves (or more to taste!)
1/4 cup chopped onion
1 clove garlic, minced
1 whole jalapeno, quartered and sliced thin, with seeds and membrane
1/4 teaspoon ground cumin
1/4 teaspoon salt
1/4 teaspoon sugar
1/2 whole lime, juiced

Steps:

  • Combine the diced tomatoes, whole tomatoes, cilantro, onions, garlic, jalapeno, cumin, salt, sugar and lime juice in a blender or food processor. (This is a very large batch. I recommend using a 12-cup food processor, or you can process the ingredients in batches and then mix everything together in a large mixing bowl.)
  • Pulse until you get the salsa to the consistency you'd like. I do about 10 to 15 pulses. Test seasonings with a tortilla chip and adjust as needed.
  • Refrigerate the salsa for at least an hour before serving.

Tips:

  • When selecting red onions, choose firm and unblemished ones. Look for onions with a deep reddish-purple color, as these will have the best flavor.
  • To remove the strong pungent smell from the onions, soak them in cold water for 10-15 minutes before chopping.
  • Use a sharp knife to finely dice the onions. This will help to release their natural sweetness and prevent them from overpowering the other ingredients in the salsa.
  • If you like spicy salsa, add a finely chopped jalapeño pepper or serrano pepper to the mix. You can also add a pinch of cayenne pepper for a milder heat.
  • For a fresher salsa, use freshly squeezed lime juice instead of bottled lime juice. The lime juice will help to brighten the flavors of the salsa and add a bit of acidity.
  • Taste the salsa and adjust the seasonings as needed. Add more salt, lime juice, or cilantro to taste.
  • Serve the salsa immediately or store it in the refrigerator for up to 3 days.

Conclusion:

Rosie's Red Onion Salsa is a delicious and versatile condiment that can be used to add flavor to a variety of dishes. It is perfect for serving with tacos, burritos, nachos, and quesadillas. It can also be used as a dip for tortilla chips, vegetables, or crackers. With its sweet and tangy flavor, Rosie's Red Onion Salsa is sure to be a hit at your next party or gathering.
