Bake 8 to 10 minutes or until golden brown. Cool completely before storing. Can be frozen also.
  • I stress Sun Maid Baking Raisins because they are especially moist if you can't find them then I soak golden raisins in warm water. The baking raisins make a difference in the moisture.

HERMITS

Hermits image

Dress up a cookie plate with these old-fashioned spice bars full of raisins, molasses, cinnamon, ginger and nuts. Then dip the chewy treats in coffee or hot cocoa on frosty days. It's said the cookies are called "hermits" because you can hide them out of sight, just like hermits, for days. They'll be just as good-maybe even better as the flavors blend and develop! -Jeri Tirmenstein, Apache Junction, Arizona

HARICOTS VERTS WITH ROSEMARY

Haricots Verts with Rosemary image

Rosemary is huge in Spanish cooking and sometimes it turns up in unexpected places, like this side dish of string beans tossed with oil that's been perfumed with rosemary, garlic and lemon. Lemon-scented olive oil is available in many grocery stores now, but it can be pricey. If you're up for it, try my homemade version that follows this recipe. These are delicious at room temperature so they can be made a little ahead. That and the fact that there is no mayonnaise, makes them a lovely dish for a picnic or barbecue on a hot day.

Categories     side-dish

Time 30m

Yield 6 servings

Number Of Ingredients 6

1/2 pound haricots verts, ends trimmed
1 tablespoon lemon-olive oil, homemade, recipe follows or store-bought, or plain extra-virgin olive oil
1 sprig rosemary
Kosher or fine sea salt and freshly ground black pepper
1 lemon, zested
2 cups extra-virgin olive oil

Steps:

  • Bring a large pot of salted water to a boil over high heat. Slip in the beans and cook until bright green and crisp-tender. Remove the beans to an ice bath to shock, then drain and pat dry with paper towels.
  • Gently heat the olive oil and rosemary in a large, deep skillet over low heat until the rosemary is softened and very fragrant, 4 to 5 minutes. Remove the rosemary sprig, raise the heat to medium-high, and add the string beans. Toss to coat with the rosemary-lemon scented oil until the beans are heated through. Season with salt and pepper, to taste. Serve warm or at room temperature.
  • Lemon-Infused Olive Oil:
  • Put the lemon zest in a small pot and pour in 2 cups extra-virgin olive oil. Place over low heat and simmer for 15 minutes. Cool completely and transfer to a jar with a tight-fitting lid. Keep tightly sealed at room temperature for up to 2 weeks. Dress grilled chicken or any simply vegetable with the oil. When tomatoes are in season, a simple dish of sliced tomato dressed with this oil and a sprinkling of oregano is a meal unto itself.

Time 50m

Yield about 5 dozen cookies

Number Of Ingredients 16

4 cups all-purpose flour
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 1/2 teaspoons ground cinnamon
1 teaspoon ground ginger
1 teaspoon freshly grated nutmeg
1/4 teaspoon ground cloves
1/2 teaspoon fine salt
1 cup (2 sticks) unsalted butter, at room temperature
2 1/2 cups packed dark brown sugar
3 large eggs, plus 1 large egg, beaten, for brushing
2/3 cup molasses
3/4 cup golden raisins
3/4 cup dried cranberries
1 cup roughly chopped toasted walnuts
2 1/2 tablespoons finely chopped crystallized ginger

Steps:

  • Preheat oven to 375 degrees F. Lightly butter and flour 3 baking sheets.
  • Whisk the flour, baking powder, baking soda, cinnamon, ginger, nutmeg, cloves and salt together in a large bowl.
  • Beat the butter and brown sugar together in another bowl with an electric mixer until light and fluffy, 3 minutes. Add the eggs, 1 at a time, beating after each addition. DOWN EAST HERMITS

Down East Hermits image

A delicious Maine Hermit recipe that I have been making for years. Moist and just the right mixture of spices and raisins. Great with coffee and for dunking! You might be thinking--Where is down east? To Mainers, down east is down in the most eastern part of Maine. To others in the country, down east IS Maine.

Time 1h45m

Yield 6 dozen

Number Of Ingredients 11

1 cup soft shortening
2 cups brown sugar
2 eggs
1/2 cup cold brewed coffee
3 1/2 cups flour
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon nutmeg
1 teaspoon cinnamon
2 1/2 cups raisins
1 1/4 cups chopped walnuts

Steps:

  • Mix together thoroughly--shortening, brown sugar, and eggs.
  • Blend in the cold coffee.
  • Mix in the flour, baking soda, salt, nutmeg, and cinnamon.
  • Add in the raisins and walnuts--mix well.
  • Chill 1 hour.
  • Drop by rounded teaspoonfuls onto a lightly greased baking sheet.
  • Bake at 400 degrees for about 8-10 minutes or until set--just until when touched lightly with fingertip, almost no print remains.
  • Do not overbake.

Tips:

  • Mise en place: Before you start baking, measure and prepare all of your ingredients. This will help you stay organized and avoid scrambling.
  • Use fresh ingredients: The fresher your ingredients, the better your cookies will taste. If possible, use organic ingredients.
  • Cream the butter and sugar together until light and fluffy: This will help to incorporate air into the cookies, making them light and airy.
  • Don't overmix the dough: Overmixing the dough will make the cookies tough. Mix just until the ingredients are combined.
  • Chill the dough before baking: Chilling the dough will help to prevent the cookies from spreading too much in the oven.
  • Bake the cookies at the right temperature: The oven temperature will vary depending on the recipe. Be sure to follow the recipe's instructions carefully.
  • Let the cookies cool completely before storing them: This will help to prevent them from becoming too soft.

Conclusion:

Roses' hermits are a classic cookie that is perfect for any occasion. They are easy to make and can be customized to your liking. With a few simple tips, you can make delicious roses' hermits that will be enjoyed by everyone.
