BAKED BABY BACK RIBS

Baked Baby Back Ribs image

Even a barbeque purist cannot scoff at these foil-wrapped, baked and glazed baby back ribs. They're satisfyingly sweet, savory, smoky and flavorful. The meat falls off the bones! Baking in foil also reduces the amount of clean up. You'll be busy enjoying these ribs -- who has time for dishes?

Categories     main-dish

Time 3h20m

Yield 4 servings

Number Of Ingredients 13

2 slabs baby back ribs, about 1 pound each (see Cook's Note)
1/4 cup light brown sugar
1 tablespoon chipotle chile powder
2 teaspoons kosher salt
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon seafood seasoning, such as Old Bay
1/2 teaspoon freshly ground black pepper
1 cup apple cider
2 tablespoons apple cider vinegar
1 tablespoon pure maple syrup
1 tablespoon Worcestershire sauce
2 cloves garlic, minced

Steps:

  • In a small bowl, combine the brown sugar, chipotle chile powder, salt, onion powder, garlic powder, seafood seasoning and black pepper.
  • Place each slab of ribs on a piece of aluminum foil large enough to fold over and seal, then place on a baking sheet. Do not seal the ribs in the foil yet (see Cook's Note). Generously sprinkle the dry rub on both sides of the ribs. Place in the refrigerator, meat-side down and uncovered, for at least 1 hour. Preheat the oven to 300 degrees F.
  • In a small bowl, combine the apple cider, apple cider vinegar, maple syrup, Worcestershire and minced garlic. Pour half the liquid over each slab and tightly seal each in the aluminum foil, crimping the edges to make a packet.
  • Transfer the foil packets and baking sheet to the oven and bake until the meat is tender and starts to pull away from the bones, about 2 hours.
  • Remove the sheet pan from the oven. Carefully open the aluminum packets and pour the braising liquid into a small saucepan. Bring the liquid to a simmer over medium heat until it becomes a thick and syrupy glaze, about 4 minutes.
  • While the braising liquid reduces, line a baking sheet with foil and gently transfer the ribs to it. Position a rack on the top level of the oven and preheat the broiler.
  • Using a pastry brush, generously brush the ribs with about half the glaze. Place the ribs under the broiler for about 1 minute. Brush with the remaining glaze and return to the broiled until charred in spots, about 1 minute more. Slice each rack between the bones into 2-rib portions and serve.

CHAMORRO ESTUFAO

Chamorro Estufao image

This recipe is similar to the filipino adobo. It's a versatile recipe; you can use beef, pork, chicken, and venison.

Provided by ChamoritaMomma

Categories     Stew

Time 1h15m

Yield 4-6 serving(s)

Number Of Ingredients 9

2 -4 lbs pork, cubed or 1 (3 lb) roasting chickens, cut into serving pieces
1 onion, thinly sliced
6 garlic cloves, minced
1/4 cup soy sauce
1/4 cup vinegar
1 cup water
1 teaspoon black pepper
1/4 teaspoon Accent seasoning
3 tablespoons vegetable oil

Steps:

  • In a large mixing bowl, combine all of the ingredients, except the oil and water. Let marinade for at least a couple of hours. If you don't have time to let it marinade, it'll be alright to cook it right away. But the flavor is more intense when you let it marinade for a few hours.
  • When you're ready to cook, heat the oil in a large pot and remove meat from marinade and add to pot. Cook to brown slightly. Add the water to leftover marinade and pour over the meat. Cover and let cook on medium heat about 45 minutes or until the meat is tender.
  • If you don't want too much sauce left, remove the lid during the last 10 minutes of cooking; otherwise continue cooking with the lid on for more sauce.
  • Variation: Add 2 whole bay leaves.
  • Variation: Add 2" piece crushed fresh ginger.
  • Or, just add them all. Serve this dish with white rice and fina'dene, ENJOY!

PRIZE WINNING BABY BACK RIBS

Prize Winning Baby Back Ribs image

A foolproof, simple recipe for the most tender, delectable ribs you've ever had. Follow the directions exactly, and success is guaranteed!

Provided by BONNIE Q.

Categories     Meat and Poultry Recipes     Pork     Pork Rib Recipes     Baby Back Ribs

Time 1h35m

Yield 6

Number Of Ingredients 6

1 tablespoon ground cumin
1 tablespoon chili powder
1 tablespoon paprika
salt and pepper to taste
3 pounds baby back pork ribs
1 cup barbeque sauce

Steps:

  • Preheat a gas grill for high heat, or arrange charcoal briquettes on one side of the barbeque. Lightly oil the grate.
  • In a small jar, combine cumin, chili powder, paprika, salt, and pepper. Close the lid, and shake to mix.
  • Trim the membrane sheath from the back of each rack. Run a small, sharp knife between the membrane and each rib, and snip off the membrane as much as possible. Sprinkle as much of the rub onto both sides of the ribs as desired. To prevent the ribs from becoming too dark and spicy, do not thoroughly rub the spices into the ribs. Store the unused portion of the spice mix for future use.
  • Place aluminum foil on lower rack to capture drippings and prevent flare-ups. Lay the ribs on the top rack of the grill (away from the coals, if you're using briquettes). Reduce gas heat to low, close lid, and leave undisturbed for 1 hour. Do not lift the lid at all.
  • Brush ribs with barbecue sauce, and grill an additional 5 minutes. Serve ribs as whole rack, or cut between each rib bone and pile individually on a platter.

Tips:

  • Choosing Ribs: Select high-quality baby back ribs that are meaty and well-marbled for the best flavor and tenderness.
  • Preparing Ribs: Remove the thin membrane on the back of the ribs for a cleaner bite. Season the ribs generously with a flavorful rub to enhance their taste.
  • Slow-Cooking Method: Utilize the slow-cooking method, either in a Dutch oven or a slow cooker, to achieve fall-off-the-bone tenderness. Low and slow cooking allows the flavors to penetrate deeply into the ribs.
  • Braising Liquid: Create a flavorful braising liquid using a combination of liquids such as chicken broth, red wine, or apple juice. Add aromatic vegetables, herbs, and spices to infuse the ribs with delicious aromas.
  • Cooking Time: Depending on the method used, adjust the cooking time accordingly. In a Dutch oven on the stovetop, simmer the ribs for about 2-3 hours, while in a slow cooker, cook them on low for 6-8 hours or on high for 3-4 hours.
  • Tenderness Test: To check the tenderness of the ribs, gently insert a fork or toothpick into the meat. If it slides in and out effortlessly, the ribs are ready to be enjoyed.
  • Serving Suggestions: Serve the ribs with a tangy barbecue sauce or your favorite dipping sauce. Accompany them with classic sides like mashed potatoes, coleslaw, or a crisp salad for a complete meal.

Conclusion:

With careful preparation and the right cooking techniques, you can create mouthwatering baby back ribs that are fall-off-the-bone tender and bursting with flavor. Whether you prefer the traditional braising method in a Dutch oven or the convenience of a slow cooker, these recipes offer a variety of options to suit your preferences. Experiment with different rubs, braising liquids, and sides to discover your perfect combination. Impress your family and friends with this classic dish that is sure to become a favorite at your gatherings.
