Provided by Inspired Taste

Categories     Entree

Time 25m

Yield 4

Number Of Ingredients 6

1 box (16 oz) cavatappi pasta
3 tablespoons olive oil
4 sprigs fresh rosemary
2 to 3 cups chopped cooked chicken
3 cups fresh baby spinach leaves
Salt and freshly ground pepper to taste

Steps:

  • Cook and drain pasta as directed on package.
  • Meanwhile, in large skillet or Dutch oven, heat oil and rosemary over low heat at least 15 minutes. Remove and discard rosemary. Add chicken to skillet; cook over medium heat 2 to 3 minutes until warm.
  • Add cooked pasta and spinach; toss. Cook 2 to 3 minutes or until spinach begins to wilt. Season with salt and pepper.

Nutrition Facts : ServingSize 1 Serving

Tips:

  • Choosing the Right Rosemary: Opt for fresh rosemary sprigs with vibrant green leaves and a strong, aromatic fragrance. Avoid dried rosemary, as it may not impart the same depth of flavor.
  • Preparing the Spinach and Beans: If using fresh spinach, wash and thoroughly dry the leaves before adding them to the skillet. For canned beans, rinse and drain them well to remove excess liquid.
  • Searing the Chicken: To achieve a golden-brown crust and lock in the juices, sear the chicken pieces over medium-high heat until they are nicely browned on all sides.
  • Deglazing the Pan: After removing the chicken from the skillet, deglaze the pan with white wine or chicken broth, scraping up any browned bits from the bottom. This adds a rich flavor to the sauce.
  • Simmering the Sauce: Bring the deglazed liquid to a simmer and let it reduce for a few minutes to concentrate the flavors. This creates a flavorful base for the rosemary sauce.
  • Adding Rosemary: Once the sauce has simmered, add the fresh rosemary sprigs. The heat will release the aromatic oils from the rosemary, infusing the sauce with its distinctive flavor.
  • Returning the Chicken: Nestle the browned chicken pieces back into the skillet with the rosemary sauce and let them simmer gently until cooked through. This allows the chicken to absorb the delicious flavors of the sauce.
  • Serving Suggestions: Serve the rosemary chicken with spinach and beans over a bed of mashed potatoes, roasted vegetables, or a simple green salad. You can also garnish the dish with additional fresh rosemary sprigs for an extra burst of flavor.

Conclusion:

This flavorful and satisfying rosemary chicken with spinach and beans is a culinary delight that showcases the wonderful flavors of fresh rosemary. The combination of tender chicken, vibrant spinach, and hearty beans, all enveloped in a rich rosemary sauce, creates a dish that is both comforting and elegant. Whether you are looking for a weeknight dinner or a special occasion meal, this recipe is sure to impress your taste buds and leave you craving more. So gather your ingredients, preheat your skillet, and embark on a culinary journey that will transport you to the fragrant fields of rosemary. Bon appétit!
