ROSEMARY-AND-GARLIC LAMB CHOPS

Braising is typically used for simmering tough meats for hours, but it works beautifully (and much more quickly!) with tender cuts, too. We paired lamb chops with rosemary and garlic for big flavor, fast.

Time 35m

Number Of Ingredients 10

4 lamb-shoulder chops (6 to 8 ounces each), trimmed of excess fat
Coarse salt and freshly ground pepper
2 tablespoons extra-virgin olive oil
10 ounces frozen pearl onions, thawed, drained, and patted dry
2 tablespoons minced garlic (from 4 to 5 cloves)
3 sprigs rosemary
2 tablespoons tomato paste
1/2 cup dry red wine, such as Cabernet Sauvignon
1 1/2 cups low-sodium chicken broth
Mashed potatoes, for serving

Steps:

  • Season lamb with salt and pepper. Heat a large straight-sided skillet over medium-high. Add oil, then lamb in a single layer. Cook, flipping once, until browned on both sides, 5 to 7 minutes. Transfer to a plate.
  • Reduce heat to medium. Add onions; cook, stirring a few times, until golden brown in places, 5 to 7 minutes. Add garlic, rosemary, and tomato paste; cook until fragrant, about 1 minute. Add wine; cook until mostly evaporated, about 1 minute. Stir in broth. Return lamb and any juices to pan; bring to a simmer. Partially cover, reduce heat to low, and cook until a thermometer inserted in thickest part of lamb (without touching bone) registers 130 degrees, 6 to 8 minutes. Serve over potatoes.

MARINATED, BREADED LAMB CHOPS WITH ROSEMARY AND GARLIC

Marinated, Breaded Lamb Chops with Rosemary and Garlic image

I found a lot of great recipes out there for grilled lamb chops but only one for breaded, and it didn't have a lot of flavor. So I came up with this easy recipe myself a few years ago. It's bursting with flavor and has become a comfort food staple in our home. Use plain or Italian bread crumbs. We like it with a Caesar salad and garlic mashed potatoes.

This is a knockout dish, and the best part about it is it only looks complicated! It is very simple to make. Ask the butcher for French Trimmed Lamb, where the meat is trimmed slightly from the bone - it is an extremely classic and elegant presentation.

Tips:

  • Choose high-quality lamb chops: Look for chops that are evenly marbled and a deep red color. Avoid chops that are pale or have a lot of white fat.
  • Trim excess fat: Use a sharp knife to trim away any excess fat from the chops. This will help to prevent them from becoming greasy.
  • Season the chops generously: Use a combination of salt, pepper, garlic powder, and rosemary to season the chops. You can also add other spices or herbs to taste.
  • Cook the chops over high heat: This will help to sear the outside of the chops and keep them juicy on the inside.
  • Let the chops rest before serving: This will allow the juices to redistribute throughout the meat, resulting in more tender and flavorful chops.

Conclusion:

Rosemary and garlic lamb chops are a delicious and easy-to-make dish that is perfect for any occasion. By following these tips, you can create chops that are juicy, flavorful, and sure to impress your guests.
