I finally decided to post this. I have made this recipe for years. Last year, I transformed this recipe and created Recipe#195066! I like to use a store-bought roasted chicken and an assorted bag of pasta that has penne, spirals, bowties and shells!! This recipe also works well with tortellini! I can't remember where this recipe originally came from... Enjoy!

2 cups tri-colored pasta, cooked and drained
2 cups rotisserie-cooked chicken, shredded
1 cup caesar salad dressing, Creamy Style
1/2 cup chicken broth
1/3 cup green onion, finely sliced
1/4 cup red bell pepper, diced
1 1/2 cups Italian cheese blend, shredded
1 cup crouton (I use my Parmesan Garlic Croutons!)
1/4 cup parmesan cheese, shredded

Steps:

  • In a large bowl, combine all ingredients EXCEPT croutons and parmesan cheese.
  • Pour mixture into a greased, 2-quart casserole dish. Top dish with croutons and parmesan cheese.
  • Bake at 350 degrees for 20 minutes or until casserole is heated through and croutons are golden brown.

4 cups any type cooked pasta, drained
1-1.5 cups shredded mozzarella cheese

  • Preheat oven to 350 degrees F. Spray a 9 x 9 baking dish with nonstick spray.
  • Combine pre-cooked pasta, chicken, and marinara sauce; Pour into prepared baking dish.

Rosalie is my mother-in-law. We had this at her house recently and my picky eater step kids loved it! It's simple to make and can be frozen for OAMC.

2 cups cooked chicken, cubed
2 cups pasta, uncooked (elbows, shells, etc)
1 cup celery, chopped
2 cups milk
2 cans cream of mushroom soup
4 ounces cheddar cheese, shredded
1 -2 can mixed vegetables, drained

Steps:

  • Mix chicken, pasta, celery, milk, and mushroom soup together in 13 x 9 pan. Cover and let sit in refrigerator overnight.
  • Before cooking, add mixed vegetables and cheese. Bake @ 350 degrees for one hour.
  • For OAMC: mix ingredients as above. Put in 1 ziplock for 8 servings, 2 ziplocks for 4 servings. Label and freeze.
  • Night before cooking, take out and defrost over night. Place in 13 x 9 pan (8x8 for 4 servings), add drained mixed vegetables and cheese, bake as above.

1 1/2 lbs boneless skinless chicken, cut into 1-inch chunks
1 teaspoon dried basil
1/2 teaspoon pepper
2 cups mozzarella cheese
1 cup prepared stuffing, dry
2 cups diced tomatoes with juice
1/2 cup water
1 teaspoon chicken bouillon concentrate
1 tablespoon italian seasoning
1 tablespoon garlic, minced

Steps:

  • Preheat oven to 400°F.
  • Too cook immediately.
  • Cube chicken and place in the bottom of a casserole dish.
  • Sprinkle the basil, salt, pepper and mozzarella cheese on top of the chicken.
  • In a bowl combine the remaining ingredients.
  • Layer this mixture over the chicken and cheese.
  • Bake uncovered for 30-40 minutes.
  • To freeze.
  • Cube chicken and place in a quart size freezer bag. Seal.
  • Place basil, salt, pepper and cheese in a quart size bag;shake;seal.
  • Place stuffing, pepper and Italian seasoning in a quart size bag. Seal.
  • Place diced tomatoes, garlic, and bouillon in a quart size bag seal.
  • Place all the baggies into a large freezer bag, print the recipe and place inside as well. Squeeze all the air out. Seal; put in your freezer.
  • When you are ready to cook, thaw overnight in fridge then follow the cooking instructions. Layer just like stated, adding the tomato mixture last.
  • Note: The stuffing will not be a crunchy topping, It absorbs the juices of the tomatoes and has more of a cooked stuffing texture.

1 large egg, lightly beaten
1 tablespoon garlic powder
1-1/4 teaspoons pepper, divided
1 pound chicken tenderloins
1 medium onion, sliced
2 celery ribs, chopped
3 tablespoons butter
1-3/4 cups half-and-half cream, divided
2 cups shredded part-skim mozzarella cheese
1 can (10-3/4 ounces) condensed cream of celery soup, undiluted
1/2 cup white wine or chicken broth
1 tablespoon dried parsley flakes

Steps:

  • Cook noodles according to package directions. Meanwhile, in a large bowl, combine the Parmesan cheese, egg, garlic powder and 1 teaspoon pepper; set aside. 8 ounces medium egg noodles
1 cup water
1 1/2 cups chicken broth
16 ounces frozen broccoli cauliflower red sweet pepper mix, thawed
1 onion, chopped
2 cups chopped cooked chicken
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup shredded swiss cheese

Steps:

  • In 3 quart microwave safe casserole dish, mix noodles, water and chicken broth.
  • Cover with lid and microwave on high for 6 minutes, stirring once during cooking.
  • Add vegetables, onion, chicken and seasonings.
  • Cover and microwave on high for 7-9 minutes, stirring once during cooking, until vegetables are hot,crisp and tender and noodles are tender.
