SWISS CHEESE QUICHE (JULIA CHILD)
Posted here for safekeeping. You can also use all milk instead of cream and omit the butter pieces on top. NOTE: As suggested by one reviewer (Dec. 13, 2010), I am revising the recipe to correct a typo. (Sorry for the inconvenience!)

- Bake in middle of oven at 400 degrees F. for 8-9 minutes.
- For filling:.
- Preheat oven to 375 degrees F. Place oven rack in upper third of oven.
- Beat eggs.
- Add enough cream (or milk or cream-milk combination) so that eggs and cream measure 1 1/2 cups total.
- Add salt, nutmeg and pepper; mix through.
- Stir in cheese. Check seasoning.
- Pour into pastry shell and distribute butter pieces on top. Place on baking sheet.
- Bake 25-30 minutes or til puffed and browned.
- Slide quiche onto a hot platter and serve.
Tips:
- For the perfect quiche crust, use a combination of butter and shortening. This will create a flaky, tender crust that will hold up well to the filling.
- When blind-baking the quiche crust, use pie weights or dried beans to prevent the crust from bubbling up. Remove the weights or beans after 15 minutes of baking.
- To prevent the quiche from curdling, temper the eggs by slowly whisking them into the hot milk mixture. Do not pour the eggs directly into the hot milk, or they will scramble.
- For a creamy, rich quiche, use heavy cream or half-and-half instead of milk. You can also add a tablespoon of cornstarch to the filling to thicken it.
- To prevent the quiche from becoming too brown, cover it with aluminum foil during the last 15 minutes of baking.
- Let the quiche cool for at least 15 minutes before slicing and serving. This will allow the filling to set and the flavors to develop.
Conclusion:
Whether you're a seasoned quiche-maker or a novice, these tips will help you create a delicious, crowd-pleasing quiche. With its creamy filling, flaky crust, and endless variations, quiche is a versatile dish that can be enjoyed for breakfast, lunch, or dinner. So next time you're looking for a quick and easy meal, give quiche a try. You won't be disappointed!
