Serve hot.
ROQUEFORT MEAT LOAF
Steps:
- 1. Combine the ground meats, onion, bread crumbs, parsley, ketchup, mustard, 2 eggs, thyme, salt and pepper.
- 2. Spread the mixture out on a large piece of waxed paper or parchment paper into a rectangle about 15 x 12".
- 3. Pour scalded cream over the bread in a medium size bowl and mix well. Add crumbled cheese and lightly beaten egg and beat with a fork until smooth.
- 4. Spread the cheese mixture over the meat mixture, leaving a 1" border on all sides.
- 5. Using the waxed paper as an aid and starting from one short side, roll up the meat like a jelly roll.
- 6. Peel back the paper as you roll.
- 7. Place seam side down on a foil-lined baking sheet.
- 8. Bake 1 hour at 375.
- 9. Cut into thick slices and serve immediately.

- Start a charcoal or wood fire or preheat a gas grill or broiler; the fire should be quite hot, and grill rack no more than 4 inches from heat source.
- Place butter in a small saucepan over medium heat; when butter melts and its foam begins to subside, add shallots and cook until soft, stirring occasionally, about 5 minutes. Add vinegar, stir, and cook until it is just about evaporated, 1 or 2 minutes. Turn heat to low and stir in cheese, cayenne and a few grindings of pepper. - Melt the butter and heat the oil in a skillet over high heat. Season steaks with salt and pepper, and quickly sear on both sides. Reduce heat to medium, and continue cooking steaks 5 minutes on each side, or to desired doneness. Remove from skillet and keep warm.
