1 tablespoon good olive oil
3 cups chopped yellow onions (3 onions)
1 teaspoon chopped fresh thyme leaves
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3 tablespoons Worcestershire sauce
1/3 cup canned chicken stock or broth
1 tablespoon tomato paste
2 1/2 pounds ground chuck (81 percent lean)
1/2 cup plain dry bread crumbs (recommended: Progresso)
2 extra-large eggs, beaten
1/2 cup ketchup (recommended: Heinz)

Steps:

  • Preheat the oven to 325 degrees F.
  • Heat the olive oil in a medium saute pan. Add the onions, thyme, salt, and pepper and cook over medium-low heat, stirring occasionally, for 8 to 10 minutes, until the onions are translucent but not brown. Off the heat, add the Worcestershire sauce, chicken stock, and tomato paste. Allow to cool slightly.
  • In a large bowl, combine the ground chuck, onion mixture, bread crumbs, and eggs, and mix lightly with a fork. Don't mash or the meat loaf will be dense. 8 oz ground pork
8 oz ground veal
1 medium yellow onion, chopped
2 c fresh bread crumbs
1/2 c parsley, fresh and chopped
1/4 c ketchup
1 Tbsp dijon mustard
2 eggs, beaten
1 tsp dried thyme
salt and pepper to taste
1/2 c light cream
8 slice white bread, firm, crusts trimmed, diced
8 oz roquefort cheese
1 egg, lighly beaten

Steps:

  • 1. Combine the ground meats, onion, bread crumbs, parsley, ketchup, mustard, 2 eggs, thyme, salt and pepper.
  • 2. Spread the mixture out on a large piece of waxed paper or parchment paper into a rectangle about 15 x 12".
  • 3. Pour scalded cream over the bread in a medium size bowl and mix well. Add crumbled cheese and lightly beaten egg and beat with a fork until smooth.
  • 4. Spread the cheese mixture over the meat mixture, leaving a 1" border on all sides.
  • 5. Using the waxed paper as an aid and starting from one short side, roll up the meat like a jelly roll.
  • 6. Peel back the paper as you roll.
  • 7. Place seam side down on a foil-lined baking sheet.
  • 8. Bake 1 hour at 375.
  • 9. Cut into thick slices and serve immediately.

1 tablespoon butter or neutral oil, like canola
4 tablespoons minced shallots
2 tablespoons white wine or cider vinegar
6 ounces crumbled Roquefort or other blue cheese
Pinch of cayenne
Salt and freshly ground black pepper
1 1/2 to 2 pounds strip or rib-eye steaks, or filet mignon
Minced fresh parsley or chives for garnish, optional

Steps:

  • Start a charcoal or wood fire or preheat a gas grill or broiler; the fire should be quite hot, and grill rack no more than 4 inches from heat source.
  • Place butter in a small saucepan over medium heat; when butter melts and its foam begins to subside, add shallots and cook until soft, stirring occasionally, about 5 minutes. Add vinegar, stir, and cook until it is just about evaporated, 1 or 2 minutes. Turn heat to low and stir in cheese, cayenne and a few grindings of pepper. Stir occasionally until cheese melts, then taste and adjust seasoning. Keep warm while you grill steaks.

2 tablespoons butter
1 tablespoon olive oil
4 (5 ounce) beef sirloin steaks
salt and coarsely ground black pepper to taste
2 tablespoons brandy
1 cup heavy cream

Italian flat leaf parsley, for garnish
