Number Of Ingredients 3

1 bottle (12 ounces) root beer
1 quart vanilla ice cream
2 cups bottled sour cherries with their juices, cherries drained and juices reserved

Steps:

  • Pour root beer into a baking pan and freeze, uncovered, until firm, about 2 1/2 hours. Using a fork, scrape into small shards. Cover, and freeze until ready to use.
  • Puree ice cream and reserved cherry juice in a blender until smooth. Add cherries, and pulse until combined but still chunky. Divide among 6 to 8 glasses, and top each with 2 tablespoons root beer granita.

Tips:

  • Use a good quality root beer. The flavor of the root beer will shine through in the granita, so it's important to use a brand that you enjoy drinking.
  • Make the granita ahead of time. Granita is best when it has had time to freeze and develop its flavor. You can make it up to 3 days in advance.
  • Serve the granita with a scoop of vanilla ice cream or parfait. This will help to balance out the sweetness of the granita and make it a more refreshing treat.
  • Garnish the granita with a sprig of mint or a cherry. This will add a touch of color and flavor to the dish.

Conclusion:

Root beer granita with vanilla parfait is a delicious and refreshing treat that is perfect for any occasion. It is easy to make and can be tailored to your own taste preferences. So next time you are looking for a sweet and icy treat, give this recipe a try!
