PARMESAN-ROMANO MASHED POTATOES

Parmesan-Romano Mashed Potatoes image

My sister hates mashed potatoes, but for whatever reason likes my potatoes. She one night requested cheesey mashed potatoes, and this recipe was born out of what I had on hand, parmesan and romano! I added a whole lot more than cheese, and now she won't eat plain mashed potatoes!! Boiling the potatoes with the herbs allows the flavors to cook into the potato and blend together into a nice soft herb-y taste without being over powering. You don't have to use the herbs I do, just use what you have in the cupboard that you like! :-)

Categories     Potato

Time 50m

Yield 10 serving(s)

Number Of Ingredients 9

1/2 cup olive oil
15 garlic cloves, peeled
10 medium baking potatoes, peeled
1 gallon cold water
1 cup milk
1/2 cup butter
1/2 cup wisconsin romano cheese, grated, plus additional for garnish
1 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Place olive oil and garlic cloves in a small pan and simmer slowly until garlic is browned. Puree garlic and oil in blender and reserve.
  • Cut potatoes into medium-sized chunks. Place in cold water. Bring to a boil. Cook until potatoes are just tender. Drain potatoes and return to pot. Add all remaining ingredients plus the olive oil/garlic puree, and hand mash until smooth.
  • To serve, place a large spoonful in a bowl. Garnish with grated Romano cheese.

Tips:

  • Choose the Right Potatoes: For best results, use Yukon Gold or red potatoes, as they hold their shape well and have a creamy texture.
  • Cut Potatoes Evenly: Ensure uniform cooking by cutting the potatoes into even-sized wedges or cubes.
  • Soak Potatoes (Optional): Soaking the potatoes in cold water for 30 minutes helps remove excess starch, resulting in crispier potatoes.
  • Dry Potatoes Thoroughly: Before tossing the potatoes with oil and seasonings, pat them dry with a clean kitchen towel. This helps prevent soggy potatoes and promotes even browning.
  • Use a Large Baking Sheet: Avoid overcrowding the potatoes on the baking sheet. Spread them in a single layer for optimal cooking.
  • Don't Flip the Potatoes: Once you place the potatoes on the baking sheet, don't flip them during cooking. This helps achieve a crispy exterior and a tender interior.
  • Use Fresh Herbs: If you have them on hand, use fresh herbs like rosemary, thyme, or parsley for added flavor.
  • Garnish before Serving: For a finishing touch, garnish the cooked potatoes with fresh herbs, grated Parmesan cheese, or a squeeze of lemon juice.

Conclusion:

Romano potatoes are a versatile and flavorful side dish that can complement various main courses. With their crispy exterior, tender interior, and delectable combination of herbs and spices, these potatoes are sure to impress your taste buds. You can easily customize this recipe to suit your preferences by adjusting the seasonings or adding additional ingredients like bacon or cheese.
