Time 30m

Yield 20-25 Mititei

Number Of Ingredients 12

1 lb ground beef
1 lb ground pork
1/2 lb ground lamb
2 -4 minced garlic cloves
1 tablespoon salt
2 tablespoons minced onions
1 pinch savory
1 pinch coriander
1 teaspoon chili powder
1 pinch cumin
1/2 cup sparking water
1 teaspoon baking soda

Steps:

  • Place all the ground meat into a large bowl.
  • Add garlic, onions, and all spices (dry ingredients).
  • Using hands or spoon, thoroughly mix and combine the contents in the bowl.
  • After everything is mixed, slowly add water to the bowl. Only add a small amount of water at a time, watching the consistency of the meat.
  • Mix in water until the meat has taken on almost a puree consistency.
  • Form meat into oval or stick shapes, making sure all sticks are the same thickness.
  • Pre-heat grill to 350 degrees
  • For best results, place Mititei on top rack of grill.
  • Grill Mititei for 10 minutes, then turn, and cook an additional 10 minutes.
  • Serve right off the grill with mustard.

Tips:

  • For an authentic Romanian mititei mici experience, it's important to use a combination of beef and pork. The beef provides a lean and flavorful base, while the pork adds richness and moisture.
  • Make sure to grind the meat yourself, or ask your butcher to do it for you. Pre-ground meat often contains fillers and preservatives that can compromise the flavor and texture of the mititei.
  • Don't overmix the meat mixture. Overmixing can make the mititei tough and dense. Mix just until the ingredients are combined.
  • Season the meat mixture generously with salt, pepper, and garlic. You can also add other spices, such as paprika, cumin, or coriander, to taste.
  • Form the mititei into long, thin sausages. The traditional shape is about 4 inches long and 1 inch thick.
  • Grill the mititei over hot coals until they are cooked through. This will take about 10-12 minutes, turning occasionally.
  • Serve the mititei hot off the grill, with mustard, ketchup, and a side of pickled vegetables.

Conclusion:

Romanian mititei mici are a delicious and versatile dish that can be enjoyed as an appetizer, main course, or snack. Whether you're grilling them in the backyard or cooking them in a pan, these flavorful sausages are sure to please everyone at the table. So next time you're looking for a new and exciting recipe, give Romanian mititei mici a try!
