36 Rolo candies- unwrapped
1 box of brownie mix & ingredients with mix (egg, oil, water)

Steps:

  • Prepare brownie mix according to the directions on the box. Also, preheat oven to the temperature stated on the box. Using the Pampered Chef small scoop, scoop the brownie mix into the Pampered Chef mini muffin pan (sprayed first). Place an unwrapped Rolo into the center of the brownie mix. Bake for 20 minutes or until a toothpick comes out clean. As soon as they come out of the oven, take a knife and use it to go around the edge of the brownie. This will separate the brownie from the pan and will keep it from sticking or breaking when you take them out. Let them cool for a few more minutes before you put them on a cooling rack to cool completely.

My family and friends loves it and I had halloween candy leftovers and I use the chocolate candies to make brownies. They are so delicious and sweet.

4 large eggs
1 c sugar, sifted
1 c brown sugar, sifted
8 oz butter, melted
1 1/4 c cocoa, sifted
2 tsp vanilla extract
1/2 c flour, sifted
1/2 tsp salt
6 (1.7 oz.) rolo pack of candy
CHOCOLATE COVERING
1/3 c dark chocolate
2 Tbsp butter

Steps:

  • 1. To make the brownies: Place egg in a stand mixer bowl, fitted with a whisk attachment, beat the eggs at medium speed until fluffy and light yellow. Add both sugars mix to combine. Add remaining ingredients, and mix to combine. Pour the batter into brownie bite pan or into mini cupcake pan and place a Rolo in the center and bake for 15 minutes. If you are using an 8-inch square pan place Rolos on top of and press into brownie mixture and bake for 45 minutes. Check for doneness with the toothpick method: a toothpick inserted in the center should come out clean. If using brownie bite pan or mini cupcake pan, cool for 5 minutes then remove brownies. If using an 8-inch pan, let cool before slicing. To make chocolate covering: Place chocolate and butter in a heat proof bowl over (not on) simmering water. Gently stir until melted. To assemble: Pour 1 tablespoon over tops of brownie bites or alternately dip tops of brownie in chocolate. Drizzle caramel sauce on top.
