CHEF JOHN'S BUTTERMILK BISCUITS

Chef John's Buttermilk Biscuits image

This deceptively simple recipe can come out a million different ways with some very minor variations on the ingredients and amounts. This one's my favorite - flaky, but not dry; chewy, but not tough; crisp in just the right spots.

Tips:

  • For the best buttermilk biscuits, use high-quality ingredients. Look for buttermilk with a tangy flavor and fresh, all-purpose flour.
  • Make sure your butter is very cold before you start the recipe. This will help create flaky layers in the biscuits.
  • Don't overwork the dough. Overworking the dough will make the biscuits tough. Mix just until the ingredients are combined.
  • Roll out the dough to a thickness of about 1/2 inch. This will ensure that the biscuits are cooked evenly.
  • Bake the biscuits in a hot oven. This will help them rise quickly and create a golden brown crust.
  • Serve the biscuits warm with your favorite toppings, such as butter, honey, or jam.

Conclusion:

Buttermilk biscuits are a delicious and versatile Southern staple. They can be served for breakfast, lunch, or dinner, and they can be dressed up or down to suit any occasion. With a little practice, you can easily make buttermilk biscuits at home that are just as good as the ones from your favorite restaurant.
