Steps:
- Mix corn meal, flour and baking powder. Beat eggs separately and add milk to it. Combine milk, eggs and quahogs to dry ingredients and stir, adding enough quahog juice to make a smooth, thick batter. Fry the batter by a gravy-sized spoonful in deep fat at 360 degrees until well browned. Drain on a brown paper bag or paper towel. Serve hot with the hot Rocky Point Clam Chowder (see recipe). This recipe yields 10 to 12 servings.
Tips:
- Use fresh clams. Fresh clams will give your chowder the best flavor. If you can't find fresh clams, you can use frozen clams, but be sure to thaw them completely before using.
- Use a good quality clam juice. The clam juice is the base of your chowder, so it's important to use a good quality clam juice. Look for a clam juice that is made with fresh clams and that has a clear, light color.
- Don't overcook the clams. Clams are delicate and can easily be overcooked. Be sure to cook them just until they are opaque and tender.
- Add vegetables to your chowder. Vegetables such as potatoes, carrots, and celery add flavor and texture to your chowder. You can also add other vegetables, such as corn, peas, or mushrooms.
- Use a thickener to thicken your chowder. A thickener such as flour, cornstarch, or arrowroot powder can be used to thicken your chowder. Be sure to whisk the thickener into the chowder until it is completely dissolved.
- Season your chowder to taste. Season your chowder with salt, pepper, and other spices to taste. You can also add a splash of lemon juice or vinegar to brighten the flavor.
Conclusion:
Clam chowder is a delicious and hearty soup that is perfect for a cold winter day. It is also a relatively easy soup to make, and it can be made with a variety of ingredients. By following the tips above, you can make a delicious and satisfying clam chowder that your family and friends will love.
