10 eggs
3/4 cups cream or milk (, full fat best (Note 1))
1/2 tsp salt and pepper, each
1 1/2 cups shredded cheese ((cheddar, tasty, or other of choice))
100g/3 oz mushroom, sliced ((I used 1 large, optional))
100g / 3oz feta (, crumbled (optional))
2 tbsp olive oil
2 garlic cloves, minced
3/4 tsp salt
1/2 tsp pepper
1.5 tsp mixed dried herbs ((or use any of choice))
350g / 12oz pumpkin (, butternut or sweet potato, 1.7cm / 0.7" cubes)
2 zucchinis (, sliced 1.25 / 0.5" thick rounds)
1 large red capsicum ((bell pepper), sliced)

Steps:

  • Preheat oven to 220°C/430°F (200°C fan).
  • Toss vegetables on tray with oil, garlic, herbs, salt and pepper. Spread out.
  • Roast 25 minutes, undisturbed (no flipping). Remove and cool for at least 5 minutes before using.
  • Lower oven to 180°C/350°F (160°C fan).
  • Grease & line pan: Spray a 19 x 30cm / 8 x 10" rectangle or 22 cm / 9" square pan lightly with oil, then line with parchment paper with overhang. (Note 3)
  • Egg mixture: Whisk eggs, cream, salt and pepper in a bowl.
  • Assemble: Spread 2/3 of the vegetables in the prepared pan. Pour over egg mixture, sprinkle with cheese, then top with remaining vegetables.
  • Topping: Top with crumbled feta, then mushrooms. Drizzle mushrooms with a touch of olive oil (makes it brown).
  • Bake: Bake 40 minutes until centre is just set.
  • Rest & serve: Rest frittata 5 minutes in the pan. Use paper overhang to lift out of pan, then slice into squares and serve.
  • Serving later: Cool on rack and remove paper from underneath (otherwise base gets soggy). Cut then refrigerate up to 5 days, or freeze. Reheat in microwave.

Kosher salt and freshly ground black pepper
2 medium carrots, cut into 1/4-inch rounds (about 1 cup)
1 red bell pepper, cut into 1-inch chunks (about 1 cup)
1/2 red onion, cut into 3/4-inch dice (about 1 cup)
1 dozen large eggs
1/4 cup heavy cream
1 cup shredded Cheddar
Chopped fresh chives, for garnish

Steps:

  • Preheat the oven to 400 degrees F.
  • Toss the broccoli florets with 2 teaspoons oil and some salt and pepper in a small bowl. Divide a nonstick half-sheet pan (13-by-18-inches) into four quadrants and place the broccoli in one quadrant in a single layer. Repeat with the carrots, bell pepper and onion, tossing each with 2 teaspoons oil and some salt and pepper and spreading in a single layer in its own quadrant. Roast until the vegetables are softened slightly and deeply browned, 15 to 18 minutes. Remove the sheet pan and lower the oven to 350 degrees F.
  • Meanwhile, whisk together the eggs and cream in a large bowl and sprinkle with some salt and pepper. Drizzle the remaining tablespoon oil over the top of the vegetables, then pour the egg mixture over the top. Sprinkle the cheese evenly over the eggs. Bake, rotating once halfway through, until the eggs are completely cooked through, puffed and just the slightest bit golden, 12 to 15 minutes.
  • Slice the frittata into portions and use an offset spatula to remove from the pan. Sprinkle with chives and serve.

2 green onions (white and light green parts only, roughly chopped)
4 ounces broccoli (cut into small florets)

7 large eggs
¼ teaspoon baking powder (optional)
¼ cup whole milk
1/3 cup feta cheese (crumbled, more to serve)
1/3 cup finely chopped fresh parsley (more to serve)

Steps:

  • Preheat the oven to 450°F and position a rack in the middle. Put a rimmed sheet in the oven and allow it to heat.
  • In a mixing bowl, toss the bell peppers, zucchini, green onion and broccoli with a good pinch of kosher salt and black pepper. Add a drizzle of extra virgin olive oil (about 2 to 3 tablespoons) and toss to make sure all the veggies are well-coated in the oil.

1/3 cup good olive oil

2 teaspoons minced garlic (2 cloves)
12 extra-large eggs
1 cup half-and-half
1/4 cup freshly grated parmesan cheese
1 tablespoon unsalted butter
1/3 cup chopped scallions, white and green parts (3 scallions)
1/2 cup grated gruyere cheese

Steps:

  • Preheat the oven to 425 degrees F.
  • Place the zucchini, peppers and onion on a sheet pan. Drizzle with the olive oil, sprinkle with 1 1/2 teaspoons salt and 1/2 teaspoon pepper and toss well. Bake for 15 minutes. Add the garlic, toss again and bake for another 15 minutes. Remove from the oven and turn the oven to 350 degrees F.

15 ounces ricotta cheese
3/4 pound Gruyere cheese, grated
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
3/4 cup chopped fresh basil leaves
1/3 cup flour
3/4 teaspoon baking powder

Steps:

  • Heat the oven to 350 degrees F.
  • Melt 3 tablespoons of butter in a 10-inch ovenproof omelet pan over medium-low heat. Add the potatoes and fry them until cooked through, turning often, about 10 to 15 minutes. Melt the remaining 5 tablespoons of butter in a small dish in the microwave.
  • Meanwhile, whisk the eggs, then stir in the ricotta, Gruyere, melted butter, salt, pepper, and basil. Sprinkle on the flour and baking powder and stir into the egg mixture.

6 ounces pancetta, 1/2-inch-diced
4 cups medium-diced leeks, white and light green parts (4 leeks), washed and spun dry
8 to 10 ounces small zucchini, thinly sliced in rounds
2 teaspoons fresh thyme leaves, minced
12 extra-large eggs
3/4 cup half-and-half
Kosher salt and freshly ground black pepper
10 ounces grated Gruyere cheese, divided
1/2 cup chopped fresh basil leaves
Julienned fresh basil, for garnish

Steps:

  • Preheat the oven to 350 degrees F. Grease a 12-by-18-by-1-inch sheet pan with olive oil.
  • Heat 2 tablespoons of olive oil in a large (12-inch) saute pan over medium heat. Add the pancetta and saute for 5 minutes, until it begins to brown. Add the leeks and saute for 5 minutes, until tender. Add the zucchini and thyme and saute for 5 to 6 minutes, stirring occasionally, until the zucchini is tender.
  • Meanwhile, in a large bowl, whisk together the eggs, half-and-half, 1 1/2 teaspoons salt and 1 teaspoon pepper. Stir in two-thirds of the Gruyere and the basil.
  • Pour the zucchini mixture in an even, well distributed layer into the prepared sheet pan. Pour the egg mixture over the top and sprinkle with the remaining Gruyere. 1 - red bell pepper, cut in 1" or so chunks
1 - yellow bell pepper, cut in 1" or so chunks
1 - small red onion, cut in 1" chunks
2 - small zucchini, cut in 1" chunks
1/4 cup(s) olive oil
1 - 1-1/2 teaspoon(s) salt (divided)
1 teaspoon(s) pepper (divided)
2 clove(s) garlic, minced
12 - large eggs
1 cup(s) half and half
1/4 cup(s) grated parmesan
1 tablespoon(s) unsalted butter
1/3 cup(s) green onions, sliced
1/2 - 3/4 cup(s) grated/shredded gruyere cheese

Steps:

  • Toss peppers, zucchini, and onion with olive oil, 1/2 - 3/4 tsp salt, and 1/2 tsp pepper. Spread on baking sheet, and bake at 425 degrees for 15 minutes. Add the garlic, toss, and bake an additional 15 minutes. When you pull the veggies out, turn the oven down to 350 degrees to bake the assembled frittata.
  • While the veggies are roasting, mix the eggs, half and half, Parmesan, 1/2 - 3/4 tsp salt, and 1/2 tsp pepper in a bowl. Set aside.
  • In a 10" oven proof skillet, saute scallions in butter over med-low for about a minutes. Add veggies to the pan and toss. Pour egg mixture on top, and cook over med-low for 2-3 minutes without stirring. Transfer the skillet into the heated oven (be sure you turned it down to 350 degrees), and bake 20-30 minutes until puffed up and set in the center.
  • Sprinkle the cheese over the puffed frittata and return the pan to the oven for a few minutes just to melt the cheese. Slice and serve hot. As a note, this reheats great, and is even good cold!
