CRISPIEST EVER POTATOES

Crispiest Ever Potatoes image

Somewhere between oven-roasted potatoes and crispy hash, these little creamer potatoes are boiled in water with baking soda before being smashed. The alkaline in the baking soda helps the skins crisp up quickly. Smashing increases their surface area and contact with the pan. The result is the crunchiest-ever crust.

Time 1h45m

Yield 4 to 6 servings

Number Of Ingredients 7

1 1/2 pounds small creamer potatoes
1 tablespoon baking soda
Kosher salt and freshly ground black pepper
1/3 cup extra-virgin olive oil
5 cloves garlic, skins on, smashed
Leaves from 5 sprigs fresh thyme
Leaves from 1 sprig fresh rosemary

Steps:

  • Preheat the oven to 450 degrees F.
  • Add the potatoes to a large saucepan and cover with cold water by 1 inch. Add the baking soda and 1 tablespoon salt to the water. Cover, place over medium-high heat and bring to a boil. Uncover and continue to boil until the potatoes give easily when pierced with the tip of a knife, 15 to 20 minutes. Drain the potatoes and set the strainer over the top of the pan for a few minutes so the outsides of the potatoes can dry.
  • Dump the potatoes onto a baking sheet. Drizzle with the oil and toss with the garlic, thyme and rosemary until the potatoes are completely coated in the oil. Sprinkle generously with salt and pepper. Using a small juice glass or glass bowl, smash each potato firmly but gently. (You want to just crack the skins and flatten slightly while keeping the potatoes mostly intact.)
  • Roast until the bottoms of the potatoes are deep golden brown, 20 to 25 minutes. Remove the baking sheet from the oven and flip the potatoes using a spatula. Roast until the potatoes are golden brown and crispy on both sides, an additional 20 to 25 minutes. Transfer to a platter with a metal spatula. Serve while hot.

ROASTED TOURNEED POTATOES RECIPE

Roasted Tourneed Potatoes Recipe image

Provided by vogeljl

Number Of Ingredients 5

2 1/4 lb potatoes
2 oz butter
1 tsp salt
1/4 tsp pepper
1 tbs parsley, minced

Steps:

  • Tournee the potatoes (peel them from top to bottom carving them into a football shape with eight sides) and place in cold water. In a skillet, add the butter and heat. Drain the potatoes and pat dry. Add the potatoes to the skillet of hot butter and season with salt and pepper and saute until golden brown. This could take as long as 25 minutes. Check the seasonings and top with parsley just before serving.

Tips:

  • Choose the right potatoes: Select small, round potatoes of uniform size for even cooking. Varieties like baby potatoes, Yukon Gold, and red potatoes work well.
  • Parboil the potatoes: Parboiling helps to partially cook the potatoes and reduce the overall roasting time. This results in a tender interior and crispy exterior.
  • Use a sharp knife: When peeling the potatoes, use a sharp knife to ensure clean and even cuts. This will help the potatoes cook evenly.
  • Season generously: Don't be shy with the seasonings. Use a combination of salt, pepper, herbs, and spices to create a flavorful dish. Try experimenting with different herb combinations like rosemary and thyme, or paprika and cumin.
  • Roast at a high temperature: Roasting at a high temperature (425°F or higher) helps to create a crispy exterior while keeping the inside tender. This also helps to caramelize the natural sugars in the potatoes, resulting in a delicious golden-brown color.
  • Don't overcrowd the pan: To ensure even cooking, avoid overcrowding the pan with potatoes. Roast them in a single layer so that they have enough space to crisp up.
  • Toss the potatoes: During roasting, toss the potatoes occasionally to ensure even cooking and browning.
  • Check for doneness: Check the potatoes for doneness by piercing them with a fork. They should be tender when pierced through the center.

Conclusion:

Roasted tourneed potatoes are an elegant and delicious side dish that is perfect for any occasion. With a crispy exterior and tender interior, these potatoes are sure to impress your guests. Follow these tips and you'll be able to create perfect roasted tourneed potatoes every time. Get creative with your seasonings and experiment with different herb and spice combinations to find your favorite variation. Happy roasting!
