8 plum tomatoes, halved and seeds removed
2 tablespoons grapeseed oil, divided
1 quart chicken stock
1/2 pound (16/20-size) shrimp, deveined, divided
2 tablespoons butter
1 white onion, diced
2 cloves garlic, lightly crushed with the side of a knife blade, and quartered
1 cup white mushrooms, cleaned, trimmed and sliced (about 3 ounces)
1 cup white rice
1 tablespoon all-purpose seasoning (recommended: Old Bay)
2 cups heavy cream
Salt and freshly ground black pepper
1 tablespoon minced fresh cilantro leaves
1 tablespoon minced fresh mint leaves
2 or 3 slices French bread or garlic bread, toasted and cut into croutons

Steps:

  • Preheat oven to 400 degrees F.
  • Place tomatoes cut-side down on a baking sheet lined with foil for easy cleanup and brush skin with 1 tablespoon of the grapeseed oil, reserving the rest of the oil. Roast tomatoes until charred, about 15 minutes, remove from oven and place in plastic bags to sweat. This will help make it easier to remove the skin.
  • Heat chicken stock in a medium saucepot over medium heat. Peel shrimp and add shells to the pot, reserving the shrimp. Bring the pot of stock and shells to a boil, skimming any impurities which rise to the surface.
  • In a large stockpot, heat the remaining grapeseed oil over medium heat and melt the butter in it, and saute onions and garlic until onions turn translucent. Add the mushrooms and cook until they begin to soften and give up their juices. Strain the chicken stock into the stockpot with the onions and mushrooms and discard the shrimp shells. Remove skin from the roasted tomatoes and add them to the pot. Add the white rice and all-purpose seasoning, bring to a gentle boil, reduce heat to low, cover and let simmer 20 minutes.
  • Chop most of the shrimp, small dice, reserving about 8 whole shrimp. Stir chopped shrimp into pot and add whole shrimp last, without stirring in the whole shrimp. Cover pot and let cook for 5 more minutes. Remove from heat and scoop out whole shrimp and transfer to a utility plate and cover to keep warm. Stir heavy cream into pot and puree with an immersion blender and season with salt and pepper. Spoon into soup bowls and garnish with whole shrimp topped with cilantro and mint. Serve with croutons.

1/4 cup heavy whipping cream

Steps:

  • In a large stock pot, melt 3 tbsp of butter. Add onion, celery, and garlic. Over medium heat, cook till soft and translucent.
  • Add tomatoes (in juice)and roasted red pepper, bring to boil, reduce heat to low.
  • Simmer for 20-30 minutes, stirring occasionally.(If too much liquid is absorbed, add 1/2 cup of chicken stock.).

6 -7 cups tomatoes (yellow pear or yellow cherry)
1 large yellow pepper, cut in quarters (or 2 small)

2 1/2-3 cups vegetable broth (depends on how thick you like your soup)

Steps:

  • Tomatoes and Peppers -- Add the tomatoes and peppers to a baking sheet lined with parchment paper or just sprayed with non stick spray like Pam. Drizzle with the olive oil, salt, pepper, and oregano and toss lightly. Bake in a 400 degree oven until the peppers soften and to start to brown and the tomatoes just begin to pop. About 15-20 minutes.
  • Broth Base -- As you roast the vegetables, start the base for the soup. In a large pot, add the olive oil, garlic and onion and saute on medium heat.
  • Vegetables -- Add all the tomatoes to the onion mixture and add in 2 cups of the broth, and sherry wine. The peppers, you want to put in a small bowl and cover with plastic wrap. After 10 minutes, the skin should peel right off. Rough chop and add to the rest of the soup.
  • Puree and Finish -- Use your immersion blender, or you can use a regular blender, and puree until smooth. I like to leave a little texture to mine. Return to the pot if using a regular blender. Season with salt and pepper, then add any additional broth if desired, and the cream. Bring to medium heat. Right before serving, check for seasoning one more time, and add in the fresh basil. I like lots of fresh ground pepper in mine.
  • Enjoy this beautiful creamy pale yellow soup. It is sweet and fresh tasting, and it absolutely delish! I garnish mine with a toasted baguette slice with goat cheese.

2 28-ounce cans whole peeled tomatoes, drained
1 tablespoon extra-virgin olive oil
1 tablespoon packed light brown sugar
4 carrots, chopped
2 shallots, quartered
Kosher salt and freshly ground pepper
3 tablespoons unsalted butter
Pinch of red pepper flakes
2 cloves garlic, minced
1 tablespoon tomato paste
2 tablespoons dry sherry
1 28-ounce can crushed tomatoes
1 to 2 cups chicken stock
Garlic croutons, for topping

Steps:

  • Preheat the oven to 400˚. Line a baking sheet with parchment paper or a silicone mat.
  • Combine the drained whole tomatoes, olive oil, brown sugar, carrots and shallots in a large bowl and toss to coat. Season with salt and pepper. Spread the vegetables on the baking sheet and roast until caramelized, about 30 minutes.

4 carrots, peeled and chopped

  • Preheat the oven to 400 degrees F. Line a baking sheet with a silicone baking mat or parchment paper.

Two 14 1/2-ounce cans diced fire-roasted tomatoes, drained
3 tablespoons tomato paste
2 teaspoons sugar
1/4 cup heavy cream
Salt and freshly ground white pepper
1/2 cup garlic or cheese croutons, for garnish (optional)

Steps:

  • In a medium saucepan, melt 2 tablespoons of the butter. Add the chopped onion, carrot, celery and garlic, cover and cook over moderately high heat, stirring occasionally, until the vegetables are just beginning to brown, about 5 minutes. Sprinkle the flour over the vegetables and stir over low heat for 1 minute, or until the flour is fully incorporated. Add the chicken stock, tomatoes, tomato paste and sugar and bring to a boil. 1 cup chopped onion
1 teaspoon chopped garlic
1/4 cup chopped green bell pepper
1 1/2 cups fresh corn kernels (about 3 ears, roasted Note: To roast oven to 450, shuck corn, place in baking pan and cook in hot ov)
4 large tomatoes, quartered (Use Romas for thicker soup)
4 cups chicken stock
1 tablespoon tomato paste
1 teaspoon chili powder
3/4 teaspoon salt, more to taste
1/2 cup grated monterey jack cheese (about 1/3 lb.)
1 cup sour cream
12 slices bacon, fried crisp and crumbled

Steps:

  • Roast corn (or if you are lazy, use frozen and add a little liquid smoke).
  • In a large, heavy pot, melt the butter.
  • Add onions, garlic and green pepper and cook until just softened (3-4 minutes) Add the corn and tomatoes and cook stirring, 3 minutes more.
  • Add the chicken stock and stir in the tomato paste.
  • Add corn cobs to stock.
  • Add the chili powder and salt; stir to incorporate these ingredients into the soup.
  • Bring the soup to a boil and cook at a simmer until all the vegetables are completely tender (1 hour).
  • Remove corn cobs and discard.
  • Puree the soup in a food processor, blender, food mill or Vita-Mix if you are lucky enough to have one.

  • Check seasonings and add more salt, if necessary.

I love tomato soup and I've experimented with many recipes, but this one simply takes the cake. Simple ingredients make a great, complex tasting, yet still 100% comforting soup. It is wonderful!! I must say to serve it with the French Onion Grilled Cheese sandwich. Two doses of comfort food that are a perfect pair! I also want to say that I normally shy away from cooking sherry- it really makes this dish so go ahead and use it!

8 Roma tomatoes - cut in half lengthwise
Extra Virgin Olive Oil
1/2 cup of fresh basil
5 strips of thick-cut bacon (I prefer the Hempler's natural bacon)
3/4 cup of heavy cream or half-n-half (if you prefer less fat)
32 oz of Organic chicken stock
3-4 cloves of fresh garlic
1-teaspoon of red pepper flake
1 medium white or yellow onion
A few sprigs of fresh thyme
1 bay leaf
Kosher Salt
Fresh cracked pepper
Optional: 1/8 teaspoon of baking soda to help cut down on the acidity

Steps:

  • After you get the tomatoes cut into halves, lay them out on a sheet pan, season with the kosher salt and pepper - then drizzle each with some of the olive oil. Roast in the oven at 400-degrees for 45-minutes or 20-minutes if you have a "convection oven". I use kitchen shears to cut the strips of bacon into small pieces and render those down on medium heat until cooked. After you get the desired doneness, pull bacon and set aside, leaving the drippings. Put in the onion, thyme, garlic and red pepper flake - season with salt/pepper. Allow to sauté until nice and caramelized. Pull the tomatoes from the oven and place into the stock pot along with the bay leaf and chicken stock. Bring to a boil and then reduce to a slow simmer and cook that way for 30-minutes. This is also the time to add the baking soda if you so choose. After the 30-minutes, add the cream and basil, then use an immersion blender and blend until smooth. You can use a standard blender if you in small batches (*warning, blending larger batches of hot liquids can have undesirable, scalding results) - to a blender and blend on high until smooth. Garnish with a sprig of fresh basil and the bacon. I served mine with a toasted-cheese sandwich that I made using American Cheddar and a nice pugliese bread. Paired really nice with a 2010 Hartford Court "Four Hearts Vineyards" Chardonnay.

2 tsp (10 mL) butter

8 sun-dried tomatoes
4 cups (1 L) turkey or chicken stock or broth
2 lb (1 kg) very ripe plum tomatoes, about 12 medium
2 large sweet red peppers
2 shallots or 1 small onion
1 large garlic clove, unpeeled
1 tbsp (15 mL) olive oil
½ tsp (2 mL) salt
¼ tsp (1 mL) cayenne
2 tbsp (25 mL) dry sherry
1 cup (250 mL) whipping cream
2 tbsp (25 mL) finely chopped fresh parsley

  • 1. Preheat oven to 350ºF (180ºC). 2. Using scissors, cut lobster tails along the back almost to the tail; turn over and cut along each side to prevent tail from curling. Place back-side up (the side with the single cut) on a small ungreased baking sheet or shallow pan. Force sides together so lobster meat protrudes from shells. Dot with butter; roast 15 to 20 minutes or until shell is red and centre of lobster is hot and no longer grayish. Cool; then remove and discard shells. Coarsely chop lobster. (If serving later, cover and refrigerate for up to a day.) 3. To make soup, increase oven to 400ºF (200ºC). 4. Coat a large baking sheet with nonstick spray. Cut sun-dried tomatoes into strips and soak in stock while vegetables roast. Core unpeeled tomatoes; seed and cut in half. Cut peppers in half; core and seed. Peel and cut shallots in half or onion into quarters. Place vegetables cut-side down on a large baking sheet with sides; place unpeeled garlic clove in centre area of pan. Drizzle with olive oil. Roast, uncovered, for 30 to 35 minutes or until tomatoes are lightly browned and very soft. Remove peels from roasted tomatoes, garlic and peppers; discard. 5. Purée roasted vegetables and sun-dried tomatoes with stock in a food processor or blender. Whirl in salt, cayenne and sherry; add additional stock if needed for correct texture. Taste and adjust seasonings as needed. (Soup can be covered and refrigerated up to 3 days.) 6. Pour soup into a large saucepan; stir in cream. Heat over medium-low heat until very hot, but not boiling. Meanwhile divide lobster among warmed soup bowls; ladle in hot soup and garnish with a sprinkling of chopped parsley. Serve right away with baguette slices.
