1/2 loaf baguette
Olive oil, for brushing
Kosher salt and freshly ground black pepper
1 cup grape or cherry tomatoes, cut in half
1 tablespoon honey
1 tablespoon olive oil
1 tablespoon red wine vinegar
Kosher salt and freshly ground black pepper
1 cup ricotta cheese
1 tablespoon extra-virgin olive oil
1/2 teaspoon garlic powder
Kosher salt and freshly ground black pepper
8 leaves fresh basil, cut into chiffonade

Steps:

  • For the crostini: Preheat the oven to 375 degrees F. Line 2 baking sheets with parchment paper.
  • Cut the baguette into thin slices and put them on one of the prepared baking sheets. Brush the bread with olive oil, then sprinkle with salt and pepper to taste. Bake until they are golden brown and crunchy, about 15 minutes.

Tips:

  • Select ripe and flavorful tomatoes: Choose plum or Roma tomatoes, which have a lower water content and a more concentrated flavor. Look for tomatoes that are firm, brightly colored, and free of blemishes.
  • Roast the tomatoes at a high temperature: This will help to caramelize the sugars in the tomatoes and bring out their natural sweetness. Roast the tomatoes at 400°F (200°C) for 20-25 minutes, or until they are slightly wrinkled and starting to brown.
  • Use a good quality ricotta cheese: Look for ricotta cheese that is smooth and creamy, with a slightly tangy flavor. Avoid ricotta cheese that is watery or grainy.
  • Season the ricotta cheese to taste: Add a pinch of salt, pepper, and a drizzle of olive oil to the ricotta cheese. You can also add other herbs or spices, such as basil, oregano, or thyme.
  • Assemble the crostini just before serving: This will help to prevent the crostini from becoming soggy. Spread the ricotta cheese on the crostini, top with the roasted tomatoes, and drizzle with a little more olive oil.

Conclusion:

Roasted tomato and ricotta crostini are a delicious and easy appetizer that can be enjoyed by people of all ages. They are perfect for parties, potlucks, or a simple snack. With their vibrant colors and fresh flavors, these crostini are sure to be a hit.
