1 tablespoon olive oil
2 garlic cloves, minced
2 cans (14-1/2 ounces) no-salt-added petite diced tomatoes, undrained
1 can (16 ounces) butter beans, rinsed and drained
6 cups fresh baby spinach (about 6 ounces)
1/2 teaspoon Italian seasoning
1/4 teaspoon pepper
Optional: Hot cooked pasta and grated Parmesan cheese

Steps:

  • In a large skillet, heat oil over medium-high heat. Add garlic; cook and stir until tender, 30-45 seconds. 1 medium yellow onion, thinly sliced
3 large garlic cloves, thinly sliced

1 1/2 cups vegetable or chicken broth, or water

Steps:

  • Heat the oven to 425 degrees. In a small bowl, gently toss together the parsley and lemon zest with your hands until well combined; set aside.
